Park Avenue Club
JUNE 2016
Keeping Members Engaged and Informed
An excerpt from an early Park Avenue Club and Foundation concept brochure:
“The Barn- A Symbol of Shelter & Harvest...What is it about a barn that immediately commands
the attention and respect of all who gaze upon it? Why does its mere silhouette warm the heart
and evoke a feeling of a universal connection to humanity, to the earth, to the past, present, and
the future, and to truth? Perhaps it is because of its most enduring quality- integrity. Built from
indigenous materials by the selfless hands of the community for the purpose of shelter, the barn is
a timeless symbol...” - author unknown
Although I cannot locate a proper byline, I feel a strong need to share these words, as they steadily
reflect the spirit in which the Club stands for. It is quite obvious that our founders’ concept stood
for something greater than a restaurant. I would even call them romantics.
Many of our current members also see the Club as something greater. We stand for something
important. Something with substance. A philanthropic concept that is impactful. A symbol of
community presence.
An excerpt from another page of that same brochure: “In the spirit of community…the Park
Avenue Foundation and Club concept evolved, and an unprecedented partnership was formed
between the nonprofit world and the private sector.”
For a 22+ yr. old club to stand for something so powerful, we shatter the model of tenured history.
Although youthful amongst our peers of 100+ year old clubs, our story is worthy of a little modest
pride.
As always, we thank you for your membership and for being a part of our heritage.
Kindest regards,

A NOTE FROM THE PAC ART COMMITTEE ...
As you enjoy your dining experience at the Park Avenue Club, be sure to take a closer look at the artwork that hangs on our historic walls.
The Park Avenue Club has an active Art Committee, comprised of members, artists and museum professionals. All the artwork on display has been carefully curated by this group and is here for your enjoyment.
In addition, we change out the artwork in Hedley and the Main Silo every few months. The artwork currently installed in the Main Silo and in the Hedley Room are solo shows by two very talented artists and all the artwork in these two rooms is for sale.
If you are interested in purchasing any of these pieces, 20% of the sales price comes back to the Park Avenue Foundation, which in turn is donated to our named charities.
In the Hedley Gallery are 19 original paintings by New Jersey native Chris Kappmeier, a Fine Art graduate of The Newark School of Fine and Industrial Art. His passion for open-air painting is evident in his bold and colorful works. He has had numerous solo shows around the country and his work has been included in several museums.
The Main Silo show is devoted to works by artist Laurie Harden. Laurie is a fine artist and illustrator whose work has been juried into the American Artist's Professional League Annual International Show, the Catherine Lorillard Wolfe Art Club Shows, the Allied Artist Show and displayed at the Sal Magundi Club and National Arts Club in New York City. Her work is collected internationally.
For more information about purchasing any of this artwork, please contact Maureen McGuire at Reception.

MONTHLY RECIPES
Cocktail Of the month
INGREDIENTS: 1 pound boneless, skinless chicken tenders/tenderloins (try to get the larger chicken tenders) 2 cups buttermilk, separated 4 dashes of Tabasco 2 dashes of Worcestershire sauce 3 cups Rice Krispies plain 1 teaspoon kosher salt 1 tablespoon cracked black pepper 1 tablespoon onion powder 1 tablespoon garlic powder 2 teaspoons cayenne Cooking spray DIRECTIONS 1) Place the chicken tenders in a shallow baking dish. 2) In a medium mixing bowl, combine 1 cup buttermilk, tabasco and Worcestershire sauce. 3) Pour the buttermilk over the chicken tenders and make sure that they are well coated in the liquid. 4) Cover the dish tightly with plastic wrap, refrigerate and marinate overnight. 5) Once your tenders have marinated, remove them from the fridge and pre-heat the oven to 375 degrees. Spray a wire rack with cooking spray, place it on top of a baking sheet and set aside. (You can also fry the chicken tenders. Set fryer at 325 degrees. They get crispy very quickly.) 6) Take half of Rice Krispies and put them in a food processor. Chop until fine but not powder. In a shallow pan, combine all rice together with rest of dry spices. Separate in 2 pans. 7) Remove the tenderloins from the buttermilk one at a time, shaking lightly to remove any excess liquid. Place each tender in one of the crispy rice mixture and use your hands to press the cereal onto the chicken. 8) Double bread tenders again using extra cup buttermilk and extra Rice Krispies. 9) Place the coated tenders on a wire rack and mist with cooking spray. 10) Transfer the chicken tenders to the oven and bake for 11 minutes. Carefully remove the tray from the oven, flip the chicken fingers over and mist again with cooking spray. Return them to the oven and bake for another 11 minutes until the chicken is cooked through and the tenders are golden brown.
INGREDIENTS
1/4 cup water
1/4 cup granulated sugar
8 cups diced seedless watermelon (1 pound)
1/4 cup fresh lime juice
1 3/4 cups blueberries
3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
1 1/4 cups silver tequila
Ice DIRECTIONS In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool.
In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves.
Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.
Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.
