    Selected low-yielding vineyards on the higher altitude slopes of Nemea (600m)in the Peloponnese region of Greece.

    Sloping clay.

    Grapes are chilled at 7-8C andcold-macerated for 24 hours, followed by the Saignée method (Bleeding) withoutpressing and fermentation in stainless steel tanks at a temperature of 15-16C.

    Serve with starters, pasta, grilled lambchops and Greek vegetable dishes cookedwith olive oil.

    Third week of September. Hand harvested.

    Harsh winters and cool summer nights dueto the high altitude, allowing the grapes to ripen slowly and perfect maturation to bereached, as well as aromatic complexity todevelop. This also results in a nervy, freshcharacter and positive acidity.
