    5 tbsp Paste of chilli and white mustard

    10-12 Pieces green chilli, chopped

    2 tsp Turmeric powder

    Sugar and salt to taste 100 gm Mustard oil

    How to make Bhapa Chingri:

    Wash prawns pieces properly and then immerse it in salt water for about 5 minutes.

    Combine oil, coconut paste, mustard paste, salt, turmeric and sugar, mix well.

    Take out the prawns from the water and dry them properly.

    Marinate them in the coconut mixture.

    Place the prawns, individually, on a banana leaf

    Spread the chopped chilli on the prawns and cover it with another leaf.

    Now place the entire package in a pressure cooker and cook for about ten minutes.

    Steamed prawns are ready to serve.

    Cut brinjal into slices.

    Grind mustard seeds, green chillies, coriander leaves and garlic flakes to make a paste by

    adding water.

    Heat the oil.

    Fry brinjal slices till crisp. Keep it aside.

    Now fry prawns till golden brown and keep them aside.

    Add cumin and mustard seeds heated oil.

    Now add chopped tomatoes.

    Cook them for 2 minutes.

    Mix fried prawns and brinjals.

    Stir them well.

    Add prepared paste, turmeric powder and salt.

    Cook the mixture for 5 minutes.

    Add 1/2 cup water. Cook for 5 minutes.

    How to make Chemmeen Mango Curry:

    Clean and wash the prawns.

    Pat the prawns dry and marinate in turmeric powder and little salt.

    Peel the mangoes and cut into wedges.

    Lightly pound the fenugreek seeds and keep aside.

    Soak and grind coconuts with 1/2 cup warm water.

    Now heat 4 tbsp of oil in a pan and fry the onion till it turns brown.

    Put the masala powders and mix well.

    Put the green and curd chilies, curry leaves and the kodumpuli along with coconut residue

    and 4 cups of water.

    Let it boil till it reduces by half and thickens.

    Strain the curry through a mesh pressing well to extract all the flavors.

    Heat up the remaining oil and coconut oil and put fenugreek seeds, the whole red chilies andstir well.

    2 1/2 tbsp Cooking Oil 19 Shallots (chopped into fine pieces) 1 Onion (medium, chopped into fine pieces)

    1 Tomato (medium, sliced into 4 parts)

    3 Green Chilies (split in half) Salt (to taste)

    How to make Chemmeen Varutharacha Curry:

    Take a pan and heat 2 tsp oil in it.

    Put the grated coconut and roast it for around 6-7 minutes.

    Add 1/2 tsp coriander powder, 1/2 tsp chili powder and stir till coconut is completely

    roasted. Grind roasted coconut into a paste.

    Take another pan and heat 1 1/2 tbsp cooking oil.

    Add shallots, onion, green chilies and cook till onions and shallots are tender.

    Put turmeric powder, remaining coriander powder & red chili powder, ginger, garlic, and

    salt. Saut well.

    Add prawns and sliced tomatoes. Mix well.

    Pour 1 cup of water and let it cook over medium flame for 15 minutes.

    When prawns are cooked completely, add the coconut paste and cook for another 5 minutes.

    Heat 1 tbsp of oil in a pan and splutter mustard seeds and add curry leaves to it.

    Mix the contents into the chemmeen curry.Suggestions:

    Serve with steamed rice or puttu.

    Toss them well.

    Heat the oil. Fry the mushrooms till the color is changed. Add fish sauce and cook till tender. Keep it aside.

    Heat the pan. Put 1 cup of coconut cream and heat till cream is thickened.

    Stir the prepared paste till it turns aromatic.

    As oil is separated from cream, season it with fish sauce and palm sugar.

    Add prawns and lime leaves once the mixture turns thick.

    Let the prawns cook. Mix the friend mushrooms with prawns.

    How to make Creamy Prawn Curry:

    Smear the prawns with salt and wash well. Then apply some turmeric powder and keep aside

    for 5 minutes.

    Heat half the ghee (clarified butter) in a pan and heat the prawns for a moment.

    Take out the prawns from the pan and keep aside. Now, add the cloves, cinnamon, bay leaves, and green cardamoms. Heat briefly.

    Mix the onion paste and stir

    Fry on low heat for about a minutes or till the paste is browned.

    Add the red chilli paste / powder and ginger paste. Fry briefly on medium heat till the oil

    evaporates.

    Add the prawns and coconut milk. And then add salt as required. Apply heat for about 2

    minutes.

    Add the remaining ghee (clarified butter) and cover tight for a little while.

    How to make Creole Gumbo:

    Heat the butter in a saucepan and stir-fry the flour on medium-low heat for 2 minutes, or

    unitl brown.

    Stir in the onion and garlic and fry until just tender.

    Add tomatoes, oregano, green pepper, okra, bay leaves, thyme and tabasco sauce. Fry foranother 4-5 minutes.

    Pour in water and sprinkle with salt. Bring to a boil.

    Reduce the heat and cover. Cook for 20 minutes.

    Discard the bay leaves and toss in shrimp and crab meat. Cover and simmer for 5 minutes on

    low.

    Remove from the heat. Take around 1 small bowl of this preparation and mix with filepowder. Add back to the saucepan. Mix well.

    Serve hot with steamed rice.

    Ingredients:

    8 Tiger Prawns

    3 tbsp Oil

    1 tsp Chili Powder tsp Coriander Powder (Dhania)

    tsp Turmeric Powder tsp Pepper tsp Cumin Powder (Jeera)

    2 tbsp Garlic-Ginger Paste

    Salt (to taste) 1 tbsp Cilantro (chopped)

    How to make Grilled Prawns:

    Combine chili powder, coriander powder, turmeric, pepper, cumin powder, garlic-ginger

    paste, salt, and 1 tbsp oil in a medium bowl. Set aside.

    Clean the prawns and squeeze to drain.

    Add to the bowl and toss well. Marinate for about 15-20 minutes. Heat the remaining oil in a griddle and add the marinated prawns. Gently stir and fry on each

    side for 2 minutes (4-5 minutes as whole).

    Transfer into a serving plate and garnish with chopped cilantro.

    Serve hot.

    1 Cup prawns (cleaned) 6 Garlic flakes

    1 Onion (sliced)

    3 Onions (chopped)

    2 tsp Turmeric powder 1/4 tsp Cumin seeds

    1/2 Cup tamarind juice 5 Red chillies 1 tsp Jaggery (grated)

    Fresh coriander leaves

    4 tsp Oil Salt to taste

    How to make Kolmino Patio:

    Grind garlic, turmeric powder, cumin seeds and red chillies to make a paste.

    Heat the oil and fry sliced onions till golden brown.

    Add prepared paste.

    Cook it for 5 minutes. Add prawns and mix it well.

    Mix chopped onions, coriander leaves and salt.

    Add water and allow prawns to get cooked.

    Mix tamarind juice and jaggery.

    Cook till jaggery is melted.

    Adorn with fresh coriander leaves.

    Ingredients:

    24 large Prawns (shelled and deveined)

    1/4 cup Tequila

    1 tbsp Honey 1 tbsp fresh Parsley (chopped)

    1 tsp Orange Zest 2 tbsp fresh Lime Juice 1/4 tsp Hot Pepper Sauce

    2 tbsp Oil

    2-3 medium Limes

    How to make Margarita Prawns:

    Combine everything, except for the lime, in a large bowl.

    Toss it well, so as to get the prawns well coated in the sauce.

    Refrigerate for 2 hrs.

    Heat the grill. Take the prawns out of the refrigerator and leave it for half an hour.

    Drain the prawns, preserving the marinade. Cut the lime into 18 pieces.

    On each metal skewer, thread 4 prawns and 3 lime pieces, alternately.

    Oil grill rack.

    Cook for 6-10 minutes, until the prawns are pink and baste with marinade.
