Welcome to Get your Cake On!

Thank you so much for choosing to fundraise for Autism Together.

You will be helping us to raise funds for two new bedrooms in our respite unit at The Ferns which will provide short breaks for individuals with Autism and for their families too.

With many respite facilities closing down across the North West, the interest in our respite unit, The Ferns, has increased, and we want to be able to accommodate this so that families and individuals don’t miss out.

Because of the generosity of people like you, we simply couldn’t expand our facilities; facilities that mean so much to our service users and their families.

Your baking will really make a difference, and for World Autism Awareness Day on the 2nd April 2016, we want to raise money and more importantly, raise awareness of Autism across the nation.

Get your Cake On is a simple way to raise funds—whether you’re a baking beginner or the Mary Berry in your family. In this pack you’ll find some recipe ideas and some materials to help you get started. However you get involved (whether it’s just the eating—the best bit!), you will be helping our service users and their families have that much needed time off, a time when they need it most.

So, what is The Ferns?

This unit is truly unique in the North West as there is no other purpose built, autism-specific service of this kind in the North West. It is partly due to the success of this centre that we have launched the Lifetime Appeal, so that we can build a purpose built residential unit in a similar design.

The design features of the respite unit, which were specifically to address the needs of the individual person with autism are as follows:

• En-suite facilities to seven bedrooms (encourages personal skills)

• Shared dining/lounge (encourages social interaction)

• Training kitchen (encourages daily living skills such as cooking and washing up etc.)

• Wide corridors (ensures people don’t become overcrowded)

• Sensory room (to help alleviate stress in the service user)

• Easy access to the external environment (to help alleviate stress in the service user)

At Autism Together we aim to work with the individual person with autism to soften the effects of their autism by providing an individually tailored programme of support which enhances and develops independent daily living skills.

From our own experience and wider research, specialist and structured support can really make a difference to the life of a person with autism.

Due to the building of the Respite centre, partly as a result of your kind donations, we have been able to provide high quality short stay services for people with autism, and more families have been able to access our services and receive support. This has not only assisted individuals in their personal development, but it has also helped families look to the future and assess their family member’s needs.

The Ferns provides a much needed service to people with autism and their families.

Research has shown that access to high quality respite care for families who have a family member with autism helps maintain family

stability and enables those who undertake the caring role 24/7 to have a much needed opportunity to take a well-earned break. Some parents book ahead so they have set cover throughout the year, while others phone up for last minute availability to help them find support for their children during the school holidays for example.

At present, 70+ families use the Respite and Take a Break service.

The different types of support offered at The Ferns are:

• Overnight stays

• Weekend and longer planned breaks

• Emergency and urgent breaks

• Half day/full day packages using the facilities at the Ferns

• Sessional/School holiday support – for those age 16 upwards

How to Get your Cake On!

Taking part in Get Your Cake On couldn’t be easier!!

Just follow these easy steps:

Step 1

Choose your date and location. Fill out the details on the poster and invites provided with the pack and put them up to promote your Cake Sale.

Step 2

Make some yummy baked goodies. You can always ask your guests to make (or buy if you’re not the best baker!) some cakes to bring along with them too.

Step 3

Make your cake sale blue with our bunting, labels, and cake flags to help raise Autism Awareness. Pop in some blue food dye in your cakes if you fancy! This is in aid of Get your Blue On!

Step 4

Sell and self-indulge in your cakes and count up the money you have raised. Send it to us and we’ll do the rest. (Details can be found later on in the pack). Don’t forget to upload photos of your cake sale to twitter and Facebook tagging use @Autism_Together and #GetYourBlueOn.

Step 5

We will use all the money you have raised to help build two extra bedrooms in our lovely respite unit, The Ferns, which will provide more space for our service users to have short breaks. It also has the added benefit for families to have breaks too, as we all need a break at times.

Recipes

Caramel Shortcakes

For the shortbread:

• 170g plain flour

• 60g caster sugar

• 120g butter

• 1 bar of cooking chocolate

• For the caramel:

• 1 tin of condensed milk

• 2 heaped tbsp golden syrup.

• 60g caster sugar

• 120g butter

Method:

1) Preheat your oven to 170°C or gas mark 4. Lightly grease or line a 18cm square cake tin.

2) Sieve the flour and sugar into a large bowl. Rub the butter into the mixture until it comes together in dough.

3) Press it into the bottom of the cake tin, spread evenly and prick with a form all over.

4) Bake for 15-20 minutes or until golden brown.

5) Whilst the shortbread is baking, pour the condensed milk, syrup, sugar and butter into a saucepan.

6) Cook on a low heat, constantly stirring until all ingredients have melted and the caramel has turned into a deep caramel colour.

7) Pour over shortbread and let it cool for 30 minutes.

8) Once cooled, melt 1 bar of chocolate, broken into pieces either in the microwave for 15-20 seconds or on low heat in a saucepan until completely melted.

9) Pour melted chocolate over shortbread and caramel and transfer to the fridge to set for 30 minutes. Once cooled, cut into squares.

S’more Brownie

For the crust:

• 6 tbsp. salted butter, melted.

• 160g crushed biscuits.

• 2 tbsp sugar.

• Pinch of fine salt.

For the topping:

• 1 large bag marshmallows

• For the brownie:

• 8 tbsp unsalted butter

• 113g dark choc, chopped.

• 200g light brown sugar.

• 175g white sugar.

• 1 1/2 tsp. pure vanilla extract.

• 1/2 tsp. fine salt.

• 4 large eggs, cold.

• 120g plain flour.

Method:

1. Position a rack in the lower third of the oven and heat oven to 162°C. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.

2. For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.

3. Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave safe bowl. Melt in the microwave on medium power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.

4. Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.

5. Remove from the oven and carefully position a rack about 6 inches from the grill and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminium flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.

Lemon-Syrup Loaf Cake

For the cake:

• 125g unsalted butter.

• 175g caster sugar

• 2 large eggs

• Zest of 1 lemon

• 175g self-raising flour

• Pinch of salt

• 4 tbsp milk

For the syrup:

• Juice of 1 1/2 lemons

• 100g icing syrup

Method:

Recipe by V. Gawith

1. Preheat oven to 180°C / Gas Mark 4, butter and line your 23x13x7cm loaf tin.

2. Cream together butter and sugar then add the eggs and lemon zest. Add the flour and salt, folding in gently but thoroughly and then the milk.

3. Spoon the mixture into the prepared loaf tin and put it in the oven for 45 minutes.

4. While the cake is cooking, put the lemon juice and icing sugar into a small saucepan and heat gently so the sugar dissolves.

5. Once the cake has risen and is golden, use a skewer and poke holes all over the cake. Pour over the syrup over the cake, trying to let the middle absorb it as well as the sides. Don’t take the cake out until it’s completely cold.

Keeping it Safe & Legal

Make sure all you ingredients are fresh and food is prepared, handled and stored hygienically. Check out the food Standards Agency if you need more information. It’s handy to know what ingredients have gone into your cards—be aware that some people may have allergies. Mark anything containing nuts, dairy, eggs.

Small raffles held on the day of your event can be a great way to raise funds. But if you plan anything bigger you may need a licence. If you’re holding a big event you may need permission from the venue or local council.

We hope your bake will raise lots of money, make sure you keep cash nice and safe and try to have two people present when you’re counting.

DIY Cake Plates

Customise your cake plate to match your theme.

All you need is:

• Wallpaper samples from nearest DIY store.

• Glue (PVA or stick)

• Scissors

• Cardboard

• Plate (various sizes)

Instructions:

1) Draw around a plate or create your own shape on a piece of cardboard and cut out the shape.

2) Copy the shape onto the back of a wallpaper sample ensuring a 1-2 inch edge is made.

3) Glue your wallpaper sample onto the shape, folding the edge around the shape, and leave to dry.

Tip:

Use different wallpaper patterns, plate sizes / shapes for the wow factor.
