Selling wine in America is as much
marketing as it is anything else. The
competition is strong and there are a
lot of great wines from a lot of places. Butstaying power, the ability to market your wine
and continue selling bottle after bottle takes
something special indeed. J. Lohr Vineyards
& Wines knows something about making
and selling wines as theyve been doing it for
more than three decades.
Jerry Lohr first started planting vineyards
and making wine in Monterey County in
1972 and then in the Paso Robles region in
1988. In Paso, J. Lohr now grows 2,000 acres
of red wine grapes, making only red wines in
the area that UC Davis called the next great
red wine region. That was in the 1970s.
Now, the Lohr family is all involved in the
family business and Steve Lohr, Jerrys son, is
vice president of planning and development.
Overseeing all of the vineyards and holdings
for J. Lohr from St. Helena in the Napa Valley
to Monterey County to Paso Robles, Steves
work keeps him constantly traveling and
constantly busy.
I got involved right from the start, really,
says Lohr. I planted the first vineyards in
Monterey County when I was 10 years old
and so Ive been around it a long while.
Detouring to Stanford and earning degrees in
civil engineering and economics with careersin construction and engineering along the
way, Steve has now come back to the fold,
along with sister Cynthia and brother
Lawrence, all of whom play roles in the
J. Lohr family business.
A boutique wine feel is what drives the
engine of J. Lohr. The size of the company,
however, allows them to have state-of-the-art
analytical facilities and labs and the result is a
marriage of old-world craftsmanship and
new-world techniques unique among wine-
makers.
Lohr wanted top talent to help manage the
extraordinary winemaking business of red
wines in Paso Robles. He found the right
person in Steve Peck, formerly of Brown-
Formans Five Rivers Winery. Pecks strong
science and chemistry background from UC
Davis was a major factor in his coming to
J. Lohr. We wanted someone with a strong
analytical background, but who also got the
feel of wine, says Lohr. Its not often
find someone with the combination
science and feel like Steve has. We got
right man. Steve Peck whose creden
are long and honorable works alongside

The Paso Robles facility is responsible
some truly extraordinary wines. Among th

inspired by the blends of the Grand
Chateau regions of France including Paui

New World and Old World wine classi-
fications have always been a little bit
at odds with one another. In France,
for example, one doesnt buy a bottle of Pinot
Noir, one buys a bottle of Burgundy. Euro-
pean winemakers have always put an
emphasis on terroir, soil and land, not on
grape variety. New World winemakers have
made the grape varietal king and so buying
wines from either Old or New World
purveyors has become more of an education
than an exercise in choice.
Enter Bion Rice, whose family wine-making foundations include Sunstone
Winery in Santa Ynez, and who decided that
while he learned winemaking in the New
World, it was the Old World idea of blending
and cuvee winemaking that intrigued him.
The longer I spent in the winery learning the
craft and science of winemaking, the more
interested I became in the art of blending
wine. I found that blending really appealed to
my senses and was more creative. Turning
from his roots at Sunstone to the Old World
art of blending wines, Rice began Artiste
Winery and Studio in downtown Santa Ynez.
Artiste is not just another winery, though
as is evinced by Rices dedication to cuvee
blending rather than a focus on varietals.
Artiste allows me to focus solely on quality,
without being ultimately concerned with
designating single-vineyards and political
appellations, or staying vintage and varietal
on the label, he says. Still, that wasnt the
entire basis for his focus.
Working together with artists, Rice devel-oped, not only a unique winemaking facility,
but an artists studio as well. Rice built a
winery dedicated to using the highest quality
grapes to produce truly singular wines from
vineyards all over the state. He is, in essence,
using California as his pallet to create exotic
tastes for your palate. Its a synergy borne of
the artistry of winemaking and thus, Artistes
name.
The winerys showcase of local and world-
renowned artists at the facility showing their
work is the lynchpin in this unique wine
studio. This month, Artiste will host the
paintings of Craig Nelson an artist known for
his rich, lush oil paintings, Nelson is a
favorite of many collectors including James
Garner, Neil Simon, The Toyota Corporation
and many others. His work will be displayed
at Artiste for all to see.But it doesnt stop with seeing other artists
work at Artiste. In the Santa Ynez tasting
studio, prepare to explore your own artistic
side as a public canvas is on display for each
customer to paint, draw or express their own
creativity while tasting premium California

Italian varietal, Nebbiolo, Rice blends

When the 15 C Wine Shop & Bar openened last week, it
brought a world of taste to San Luis Obispo County. In addi-
tion to California wine labels, owners Ali Carscaden and
Allison Dominguez offer international wines, artisan beers, imported
sake and a mouth-watering array of gourmet foods.
Their shelves are bursting with a cornucopia of imported cheeses,
domestic and imported oils and vinegars, and even special salts,
honeys and cured meats.
Sensing a market gap in the northern half of SLO County, the
young entrepreneurs decided to open their adventurous boutique in
tiny Templeton, a few miles south of Paso Robles and just off Highway
101 at the intersection of Vineyard Drive.
The name of the shop refers to the ideal temperature for winecellars, according to Ali, a former Henry Wine Group sales rep and
certified sommelier who holds a masters degree in agriculture from
Cal Poly, San Luis Obispo.
People in the U.S. are more familiar with the Fahrenheit equiva-
lent, of course (58), but we felt the Celsius form better reflects our
international theme, she explained.
The shop is optimally arranged with the non-alcoholic items up
front, affording patrons the convenience of leaving the bar to browse
while sipping their wine, beer or sake.
The juxtaposition of food and wine brings other advantages,
enabling customers to indulge in cheese and meat platters or even
desserts while searching for the perfect wine and food pairings. Ofcourse, Ali and Allison will also be glad to provide suggestions and
assistance. In fact, Allison has worked at some of the top restaurants
in the Western states.
Educational seminars, special ordering, chilled beverages and
snack-packs available for take-out, and gift bundles their twist on
the traditional food and wine basket are other distinctive features of
the shop.
Their broad selection of beverages includes many that are hard to
find in the county now such as French Burgundy, sparkling sake and
European brews. Coupled with a high-tech, wine-preserving system,
it creates a truly unique tasting experiences for customers, who cancompare the local, state and international wines or sample a flight of
dessert wines with chocolates. Well even be able to offer hundred-
dollar-a-bottle wines by the glass, Ali said.
Since the women share a strong environmental ethic, they have
been working hard to make their business as green as possible.
Allison even holds a masters degree in environmental science. The
foot-thick concrete walls of our building help keep the shop at the
ideal temperature for wine storage, so we wont need to use much
energy for that purpose, she explained. We also plan to offer organ-
ically produced wines and other green food and beverages.
Of course, there will be a wine club. Three of them, in fact, e
with the option of choosing all red, all white or a combination. C
benefits will include 10 percent off all wine, 10 percent off any w
club reorders, 10 percent off classes and events and free tasting
featured wines.
Wine Rack members will receive two bottles each month, no
exceed $25. Subscribers to The Cellar receive six bottles each qua
with a $150 cap. This is the club for those who like to drink win
well as do a little collecting on the side, Allison explained.The Cav is for the wine connoisseur who wants only the m
exceptional selections that will wow anyone. This level offers
bottles every three months, with a maximum cost of $500.
The dynamic duo even offer cellar consulting, for customers
want to build or upgrade their existing facility. And they will pro
in-home wine events. You pick the theme and the beverages,
well do the rest, Ali said.
The combined expertise of the owners, along with their uniq
diverse food and beverage selections, array of services and ideal l

Ali had a similar yearning. In fact, she wrote the business plan

Grilled Rack of Lamb
Perfectly Paired with
Anglim Zinfandel
GRILLED RACK OF LAMB AND VEGETABLES

Were big believers in the notion that great food doesnt have to be
complicated. We tend toward family-friendly, easy-to-prepare foods
with great flavors, and Steve loves the grill, so its a natural choice
for us. Steve prepared this rack of lamb for our recent Harvest
Festival Barbeque and received rave reviews (Sofia, our 3-year-old
daughter, ate three chops all by herself!) Add an assortment of
vegetables to round out the meal.
Rack of Lamb
Trim fat from the rack of lamb to expose 1 to 1-1/2 inches of bones
and about 1/8-inch of fat on meat. Alternatively, ask your butcher to
dress rack and trim excess fat from the ribs.
At least 3 hours before cooking (or up to the night prior), pat the
meat with olive oil, season with salt and pepper, and rub in about
one-half ounce of Mediterranean herbs per rack. Cover and refrig-
erate. The herb blend we use includes rosemary, sage, lemon, dill
weed, fennel, garlic and marjoram. Google it...or try The Spice House
in Chicago.
Remove from refrigerator and allow meat to come to room tempera-
ture (about 1 hour).
Pre-heat grill, preferably with mesquite charcoal, until very hot.
Grill meat 3-5 minutes per side undisturbed, fat side first. Use tongsto turn. Cook to 5 degrees below desired doneness based on
internal temperature (trust your thermometer). Remove from grill
and allow to stand 10 minutes before cutting.
Grilled Vegetables
The assortment is really a preference issue Steve loves asparagus,
Steffanie loves pumpkin and Sofia loves fingerling potatoes so you
see how we choose. In all cases, we like to pre-cook the vegetables
somewhat (even up to a day before), and then finish on the grill; the
key is to not over cook or theyll end up soggy.
Asparagus: steam in white wine (our Anglim 2005 Roussanne works
nicely) for 2 minutes; trim discolored ends, then grill to warm
Pumpkin / Winter Squash: lightly season with salt and pepper (and
a little cinnamon if you like), and roast in 350 degree oven for 20
minutes or so. Slice into wedges and finish on grill.
Fingerling Potatoes: brush with olive oil and season with salt,
pepper and rosemary; roast in 350 degree oven for 20 minutes
finish on grill.
To serve: Slice chops and arrange meat and vegetables on a large
platter. Serve family style fingers are the tool of choice at our
house and enjoy!

Just the mention of lamb to anyone who dabbles in wine
and food pairing would automatically elicit a response of the
traditional match: Bordeaux wine or, when speaking ofdomestic wine, a Meritage wine. These are wines that blend
Cabernet Sauvignon, Merlot and other traditional Bordeaux
grapes into a classic and elegant wine. But Paso Robles
Anglim Winery kicked the intrigue up a notch, without sacri-
ficing elegance, with their 2005 Zinfandel from St. Peter of
Alcantara Vineyard. Its richness, bright fruit and notes of
cinnamon spice all bring out the earthy spiciness of the lamb.

When Doug and Nancy Beckett, a couple of
school teachers looking for a better life, moved their
family to Paso Robles in 1982, they never envi-
sioned the life they would lead today.
The Becketts brand has become nationally
distributed in 48 states and select international
destinations. Their wines have been recognized in
many publications over the years. The November
2007 issue of Bon Appetit recommended the 2005
Westside & Snow Vineyard Zinfandels as the
perfect wine for holiday menus.
This coming year production is set for 84,000
cases, their largest production yet. In order to
secure premium fruit, Peachy Canyon sources
grapes from more than twenty local growers in the
Paso Robles AVA and 100 acres of their estate vine-yards.
The winery is still headed by founding vintners
Doug and Nancy. Now, after years away from home,
both sons, Josh and Jake returned to Paso Robles
and Peachy Canyon to work for the family busin
Josh has been with the winery for ten years
has been the winemaker since 2003. Combining
varied experiences with different winemakers regions, Josh keeps an open mind in order to cr
the most exciting wines possible. Jake, the youn
son, wasnt able to resist the lure of the family b
ness either. For years, Jake worked as the viney
manager over-seeing the four Peachy Canyon V
yards and working with local growers to en
fruit quality. In 2005, Jake wanted to learn o

Canyon tasting menu, you will find Cabern
Merlots, and special blends that are availabl

a wonderful outdoor seating area under an ancient oak tree and a

The boutique winery is a bit off the beaten path, but well worth
the drive through some of the areas most dramatic vistas. The winery
features award-winning, estate-grown Rhne varietals such as Viog-

winery is that all of the Rhne grapes grown are ENTAV certified.

Fall colors adorn an 800-square-foot
tasting room that is something of the
American dream come true. Scott
Cellars, the brainchild of Peter Fraser (middle
name, Scott), in Los Olivos is a boutique
winery with a no-nonsense practical dreamer
at its helm. He built the wood bar himself
and the pictures on the wall are photos he
took himself of the vineyards where he
sources his grapes.
I was living in Los Angeles in 1992 when
the riots hit, recalls Fraser. I simply sat andre-evaluated my life. What did I want to do?
How did I want to do it? The soul-search
led to an impromptu job at a wine marke
wanted to be a winemaker, but Id never d
anything like it before. So, first, I wante
learn how to sell it. The job at the store
to a job with a distributor and even at
point, a job selling the infamous 2-b
Chuck brand, Charles Shaw befor
became a household name.

buy and I made wine at home. Thats how I learned. No mentors,
no great winemaking god in the background of his life, Peter Fraser
decided what he wanted to be and worked hard to become that. Thatled him and his wife, Jennifer to San Marcos Avenue in Los Olivos
where Scott Cellars was born.
Producing about 1,000 cases of wine a year, Frasers plan calls for
him to increase slowly and at intervals. I am a one-man show. I am
the Owner, Winemaker, Tasting Room Manager, Marketing Manager,
Sales Manager. and Chief Cook and Bottle Washer, he says. Jennifer,
an administrator for a medical insurance company in nearby Santa
Barbara, helps out in the tasting room at times. Shes a real inspiration
to me.
Fraser buys grapes from vineyards all over the Central Coast. His
most popular wine, Cuvee J (created by Jennifer) is a Zinfandel, Syrah
blend. But the Scott Cellars stable produces everything from Pinot
Gris to Pinot Noir, Chardonnay to Zinfandel. Fraser says his home-
made spicy crab bisque paired with his Pinot Gris is one of the best
meals hes had.
I cant [over] sic emphasize the importance of working in and out
of the cellar. The cellar taught me technique while sales taught me the
market. You cant have one without the other, Fraser says. S
