IntroductionWe offer a range of Hospitality & Catering qualifications from Entry 3 to Level 3 in professional cookery, pastry & confectionery, chocolatier, barista skills and more, designed to suit different learning needs across every sector within the Hospitality & Catering industry.

Our portfolio of qualifications has been developed in conjunction with industry experts, making them highly valued by employers throughout the UK. These courses have been designed to provide a route into employment and develop skills in Hospitality & Catering services.

Culinary skills are developed in our gold “AA rosette” awarded contemporary licensed Riverside Restaurant, college bistros and bespoke workshops in the training and development kitchens. The restaurant has recently been recognised as a Centre of Excellence.

Alongside workshops, our learners enter local and national competitions and further develop their employability skills by undertaking work experience in rated restaurants such as L’enclume, Stanley House, The French, The Freemason, Aumbrey and The Villa at Wray Green.

Our professional staff are current practitioners and have years of industry experience to mentor and support all learners to achieve their qualifications and exceed their goals.

How courses are deliveredThe courses are delivered on both campuses through;

• Practical workshops in the specialised kitchens

• Culinary demonstrations

• On the job training in the AA rosette awarded 60 cover licensed restaurant providing contemporary gourmet food and the 1000 cover Bistros providing new street food dining

• External work placements in AA & Michelin restaurants

• Master classes

• Guest speakers

• Visits to professional partners

• English classes (functional skill or GCSE) if required for Grade C’s. Maths classes (functional skill or GCSE) if required for Grade C’s.

TimetableMost courses are delivered over 4 days, with 3 hour practical sessions in the bakery and craft skills classes, food service and craft theory sessions, 5 hour sessions of employability skills in the commercial areas alongside English and maths sessions (if not achieved C grades at GCSE).

Who is this course for? If you’re just starting out with little or no experience in the Hospitality & Catering industry, and want to gain a good basic understanding, this is a great starting point.

What you will learn This qualification can help you to take your first step into the Hospitality Sector. You’ll learn about many aspects of the industry and gain valuable practical and teamwork skills. The qualification covers routes, including cookery, customer service and the industry as a whole.

In our Entry 3 course you can learn the basic level of preparing, cooking and serving a range of food.

This course will cover areas such as:

• Customer service

• Serving food and drink

• Healthy eating

• Using kitchen equipment

• Basic food preparation.

Who is this course for? This qualification is great if you are interested in learning what is involved to work as a chef or front of house in a restaurant and are looking for an introduction to food services.

You can build the skills and knowledge you need to deliver a high level of service in a variety of customer service environments.

What you will learn You’ll learn about many aspects of the industry and gain valuable practical and teamwork skills, enough to succeed in a job or move on to further study.

You’ll gain the skills to work in a kitchen, from storing food hygienically to cooking simple dishes. In addition you’ll gain the skills to serve food and drinks in restaurants, pubs, bars or other outlets, building confidence and giving great customer service.

Who is this course for? Anyone working, or wanting to work, in the food and beverage service industry in front of house. This course can help fill in any gaps in your front of house skills and help you advance to a more senior position.

What you will learn The skills you need to deliver a great dining experience. You’ll learn essential skills in areas like food service, food safety, handling payments, bookings, serving hot and cold beverages, bar service and menu design.

Who is this course for? This qualification covers all the patisserie and confectionery skills and knowledge needed for a successful career as a pastry chef. This course is ideal if you are looking to become professional pastry chef or if you are wanting to progress within a baking & patisserie career. It’s also great for individuals that enjoy this area of cookery as an interest.

What you will learn Develop specialist knowledge and skills in producing desserts, puddings, biscuits, bread and other patisserie and confectionery items.

This course will cover how to produce:

Entry requirements Level 2 Diploma in Professional Cookery

Who is this course for? This industry standard qualification is for individuals that have worked as a chef for quite some time, for people that have plenty of experience, and you may already supervise others or manage resources. You want to develop your skills further, perhaps to work as a senior chef or restaurant manager.

What you will learn You will develop the skills required to succeed in the workplace and develop the ability to learn and progress whilst building a successful career. You’ll gain a high standard of preparation and cookery skills from processes, sous vide and molecular gastronomy whilst also learning other workplace essentials like menu design. The Level 3 Diploma in Professional Cookery is for anyone who works or wants to work as a chef in more supervisory role.

This qualification covers areas such as:

• Prepare meat for complex dishes

• Prepare poultry for complex dishes

• Cook and finish complex fish dishes

• Cook and finish complex meat dishes

Don’t leave it too late as a lot of our courses are really popular and fill up fast! We’ll confirm we’ve received your application by text and by email.

Step 3 Interview Once you’ve submitted your online application check for texts and emails regularly. You’ll receive an interview date to make sure you are suited to the course and, more importantly, that the course is suited to you. The interview also gives you chance to see the college, meet the staff and ask questions.

Step 4 Offer After your interview you will probably be made a conditional offer. This means that you have a guaranteed place as long as you get the GCSE grades that you need for that level of course.

Step 5 Enrolment In August you will receive a reminder about your enrolment date. Once you have received your results just contact us to confirm your place and you will receive the information needed to come into college and enrol ready for your course to start in September!
