Flying High on Chicken Wings
Im definitely no chicken when itcomes to thrill-seeking
activities.OK, so maybe you wont catch mejumping out of airplanes
just yet orbungee jumping from the highest cliffs,but thats not to
say that I haventalready fallen madly in love with rollercoasters.
If it were up to me, in fact, Idhave annual passes to all the
majortheme parks, including Six Flags, GreatAmerica, Cedar Point,
CaliforniaAdventure Park, Knotts Berry Farm and,of course,
Disneyland.Nothing can compare to the pure
adrenaline rush I get on these hair-rais-ing rides, particularly
the way my bodyis jolted following each twist, turn, riseand fall
of the track.And perhaps the same can be said
about what I call amusement park cui-sine. In my case, I happen
to associate
tender chickenwings with themeparks. I know, someof you may link
thisyummy finger foodto an ice cold beeror a football game,but I
prefer to feaston chicken wingssmothered inranch dressing
after disembarking from one of thoserides of a lifetime. Like
roller coasters, each and every
bite into a chicken wing can be an exhil-arating experience for
your taste buds.Whether its creamy ranch, zesty andspicy sauce, or
jerk seasoning, chickenwings are an invigorating experience forall
your senses.And this week my stomach was ready
as I prepared to hit three local hot spotsthat offer onolicious
chicken wings.While some were mild and others fiery-hot, I wanted
to experience each andevery burst of flavor.So, whether it be
taking on the fiercest
of roller coasters or biting into the spici-est of chicken
wings, I cant help but findmyself screaming the same words:

inside the Sheraton Waikiki, I have topinch myself to make sure
Im notdreaming. For one, RumFire overlooksthe breathtaking Helumoa
Playgroundset against the captivating backdrop ofDiamond Head in
this dreamy ocean-front hotel in Waikiki. Secondly, its easyto pass
the time away while enjoying arelaxing lunch with friends or
grabbingpau hana drinks as some of Honolulusbest contemporary
musicians play on.And while all this is enough to make
me say, Im soooooo lucky to live in thisbeautiful paradise, its
the impeccablecuisine that has me drooling. This chic-ultra lounge
is currently home to aunique Hawaiian fusion menu known
asBahawaiian cuisine, or West meetsWest, featuring an exotic blend
of con-temporary Hawaiian fare and CaliforniaBaja Mexican-inspired
dishes.Guests can enjoy a plethora of various
menu items, including Kalua PorkEnchiladas ($14), RumFires
signatureKim Chee Fried Rice ($14), ChipotleBBQ Rum Baby Back Ribs
($14) andGarlic Pommes Frites ($6).
My favorite of the bunch, however,is RumFires signature Jerk
SeasonedChicken Wings ($12), served with ahot, spicy and creamy
fiesta ranchsauce. Onolicious!We add a secret jerk spice that

Kick off an evening of ele-
gance at 5:30 p.m., as the 1,500-passenger ship departs fromPier
8 at Aloha TowerMarketplace. Festivities beginat the exclusive
CaptainsWelcome Reception on theStars 60-foot-high top deck,where
guests have the opportu-nity to sample a selection ofsummer canaps
served butler-style, accompanied by aHawaiian Bellini.
Amid a pristine atmosphere,guests are then escorted intothe
recently renovated Art DecoSuper Nova room. Posh indcor, this
luxurious diningroom, where semi-formal attireis required, is said
to seat 230people.
Nova is really elegant andplush, it's definitely a placewhere we
have a lot of repeatbusiness, says Gilbert, whostudied culinary
arts atJohnson & Wales University,then later at
KapiolaniCommunity College.
My main focus as the chefhere is consistency consis-tency in
presentation andquality, he adds. My style of
cuisine is very much travel-influenced. I love the local
ingre-dients, and that's a big drivingforce for my cooking.
At Johnson and Wales I wastrained in the classical French-style
of cuisine. I also lived inthe Caribbean and SoutheastAsia, and of
course Hawaii, soI'm also very familiar withPacific Rim cuisine as
well,Gilbert states. In the Novaroom we focus on culinary arts

refinedNova servers present youwith Chilled Kahuku CornSoup with
Avocado Graniteand Bouquet of BabyGreens consisting of
searedscallop, red and gold beetcarpaccio, basil oil and pas-sion
fruit vinaigrette.
The first main entreshowcases an Air-FlownLive Maine
Lobsterpoached in a season-infused butter broth, pairedwith grilled
polenta,chanterelle mushrooms,summer truffles and vegeta-bles in a
light lobster fumet.
We change up the menuby the season, so every threemonths youll
find somethingnew, Gilbert says. We prep90 percent of cuisine on
land,then once on ship we recon-stitute the food and
re-plateit.
Next, cleanse your palatewith a refreshing MangoSorbet before
indulging inthe highest grade PrimeTenderloin of Beef accentedwith
savory foie grasstuffed fondant potatoes,saffron cream and
porcinimushroom demi glace.
Although we do featurea prix fixe menu, we also dooffer special
menu itemswith a 24-hour advancednotice such as BakedSalmon with
Dill LemonButter Sauce; RoastedChicken Breast stuffed
withmushrooms, spinach andSwiss cheese; Medley ofFresh Fruit; a
vegan/gluten-free Black Truffle Risottowith wild asparagus
andportabella mushrooms; orRoasted Rolled Eggplantstuffed with
French greenlegumes in a kabochasauce, Gilbert says.
Finally, round off thisexquisite feast with an effer-vescent
White Chocolate
Swan filled with fresh fruit,sponge cake and mascar-pone cream
all atop a puddleof heavenly lychee sauce.
To make good food isnot that difficult, really.Whats difficult
is creatingnew ways to design it, newways to showcase it, andthats
where molecular gas-tronomy is a huge toolgoing forward,
Gilbertexplains, noting thatmolecular gastronomy is arather new
philosophy ofcooking.
I love my job, heexclaims. Being on theocean is a great
highlight ofbeing executive chef forSuper Nova I see thesunset five
days a weekfrom the ocean, and itsamazing. Sometimes welleven see
whales up close.
Really, who could ask formore? Its a feast for all thesenses
aboard the Star ofHonolulu. So sit back, relaxand enjoy the

the goal ofcomplementing their foodofferings. However, at
StageRestaurant, located on thesecond floor of HonoluluDesign
Center at 1250Kapiolani Blvd., the cuisinerepresents masterful
works ofart prepared by executivechef Ron de Guzman and hisskilled
staff. The foods presentation fits
the restaurants theme, andeach finely crafted plateserves as a
piece of art withina gallery of unique furnitureand design
elements. Whenplaced before guests, thedishes make even a
$20,000Fendi dining table and chairset fade into the background.
Appropriately, pupu items
at Stage are presented on the
menu as the opening act of aperformance under the head-ing Act
One: Overture deAppetizers. The GrahamCracker Crusted Calamari($13)
steals the show as thecurtain rises on Stagesunique seafood
starter. Thecalamari is tossed in finelyground graham crackercrumbs
before being fried andserved with an accompani-ment of dipping
sauces: yuzu-chili aioli, wasabi cocktailsauce and sriracha. The
itemis back by popular demand,says de Guzman of the dishthat is
available as a specialitem, but will soon be gracingthe permanent
menu.Sticking with Stages
seafood selections, the StageAhi Poke ($13), Pan SearedManila
Clams ($13) and CrispLump Crab Cakes ($14) each
offer an eclectic mix oftaste and extraordi-nary color. The
pokeinvites diners with aclever concoction thatincorporates
avoca-do, marcona almonds,orange tobiko,Spanish onions, yuzu-olive
oil and wasabi.We keep the food
fun and different, butwere not way outthere, explains deGuzman.

Landmark coffee house serves upfavorites to customers, cast and
crew of Hawaii Five-O

Its a sun-filled Tuesday morning atWailana Coffee House and
alreadyhungry patrons are lined up wait-ing for a table at the busy
Waikikieatery. Its nearly lunchtime, butplates loaded with waffles,
pancakesand other breakfast staples are stillmaking a steady stream
into the din-ing room from the bustling kitchen.
We serve breakfast 24 hours a day, which alot of people like,
says general manager
Kenton Tom, who runs the family-friendlyrestaurant with
brother/CEO Malcolm Tom andsister Joanna Leong.
Today is especially busy at Wailana, becausethe next day it will
be closed. It seems the castand crew of a little show called Hawaii
Five-0will be descending upon the iconic diner to filman action
scene for its highly anticipated sec-ond season.
Its very exciting for us! Kenton says. Itssort of ironic, too,
because when the originalHawaii Five-0 was being filmed, they shot
ascene in the original Kapiolani Drive Inn. Itssort of history
repeating itself.
Located at the corner of Ala MoanaBoulevard and Ena Road,
Wailana Coffee House
stands in the spot formerly occupied byKapiolani Drive Inn. When
the drive-ins popu-larity began to wane in the 1960s,
Kentonsfather, Francis Tom, decided it was time todevelop a new
restaurant, and in 1969 foundedWailana Coffee House on the values
of goodfood, good service and value, which the Tomsiblings continue
to follow to this day.
His principles really guided us, Kentonsays. Were reasonably
priced, we have a lot ofvariety on the menu, and we offer a lot of
valuefor what you order.
A dish that proves you can have both qualityand quantity food is
the Oxtail Soup ($11.25).Offered every Thursday, the special is a
com-forting bowl of tender oxtail, peanuts, dried red

Chinese parsley andshredded ginger.
Its a local favorite, Kenton says, adding,We cater a lot to
local people, because webelieve that if the local people come to
therestaurant, tourists will follow. If local peoplecome to the
restaurant, tourists know it mustbe good.
Other menu items popular with locals andtourists alike are the
Broasted Chicken($10.95), which is a plate of oven-roastedchicken
breast, leg, thigh and wing; HibachiSampler ($12.50), a trio of
chicken breast,shrimp skewer and mahi mahi filet
preparedhibachi-style; and the Eggs Benedict ($9.85),an ensemble of
poached eggs, smoked hamand turkey breast piled atop an English
muf-fin, served with a house-made hollandaisesauce and hash browns
on the side.
We make a lot of things from scratch; itsnot out of the can,
Kenton reveals.
Homemade food seems to be the majordraw for customers,
especially when thewords all-you-can-eat precede the itemsname.
People love our pancakes, Kenton says,referring to the
all-you-can-eat ButtermilkPancakes ($5.50).
Theyre so good, if you just enjoy the taste
of pancakes, you dont even need the syrup!The batter for the
pancakes is prepared a
day in advance, which allows the mixture toaerate and yields a
fluffier pancake. Extrassuch as blueberries, bananas,
macadamianuts, coconut and pineapple also can beadded for an
additional $1 charge.
You can even ask for a combination ofbanana and macadamia nut,
for example,Kenton suggests. All pancake orders comewith eggs,
bacon, as well as whipped butterand a trio of syrups on the
side.
Besides breakfast, the menu offers evenmore mouthwatering
choices, from soupsand salads to spaghetti, saimin, fried rice,beef
stew, fish and chips, short ribs, kal-bi,even desserts.
(Note: Most entrees come with a choice ofrice, mashed or baked
potato, or fries, as wellas choice of soup, fruit cup or salad
bar.)
We have feature sandwiches like the PattyMelt ($8.75), French
Dip ($9.50) and theReuben Grill ($9.35), and we also have a lot
ofhamburgers, like the Paniolo Burger ($7.65),which comes with
chili and onions, and theTokyo Burger ($6.75), which is a teriyaki
burg-er rather than a regular hamburger, Kentonnotes.
We have a large menu, he adds, and wehave all kinds of things,
all day long.

branch, which opened inMarch 2006, and theDillingham branch,which
opened last year.While the restaurant ispopular with the
localFilipino community, SanLuis notices that Hawaiilocals as a
whole arelikely to try the flavorfulcuisine at Maxs.
Our base is still Filipinobecause they know the restau-rant;
they know the name fromback home, she says, but we arebeginning to
get a lot of adventur-ous locals who are venturing intoFilipino
food.The international chains trade-
mark dish Maxs Fried Chicken continues to be immensely pop-ular.
Through the cooking process,
you end up with a product thatscrispy on the outside, but
verytender and tasty on the inside,San Luis says. Originally,
thatswhat started it all. Since then, wehave evolved into a
full-fledgedFilipino cuisine (eatery).Maxs most popular dishes
include Kare-Kare ($12.50/$18.95),a peanut-based stew served
withbeef shank, stewed oxtail and veg-etables. For dessert, the
Halo-Halo($5.70), a mixture of tropical fruits,beans and milk
served in a bowlwith shaved ice and topped with apiece of flan and
ube (purple yam)ice cream, is often requested. TheCrispy Pata
($12.95/$16.95) is a cus-tomer favorite for main entrees.

Crispy Pata is crispy porkknuckles, she says. Its very ten-der
and we cook it for hours, andthen its deep-fried and servedwith a
vinegar soy sauce dip. Another of the restaurants
signature dishes is the LumpiangUbod ($5.95), which

Dear Emily,There are many rules to
proper dining etiquette, buthere are a few essentials tomake you
feel comfortable atthe table.
Once seated, be sure toremove the napkin from itsplace-setting,
unfold and placeon your lap. Then, as the serv-er begins to serve
the meal,its important that you first
wait until everyone is servedat your table before you startto
eat.
I know the sheer amount ofdinnerware can be overwhelm-ing, but
dont be discouraged its actually really simple.Always remember that
anyfood dish to the left and anyglass to the right is yours. Asfar
as utensils, start with thefork, knife or spoon that is far-thest
from your plate and workyour way in. Usually the saladfork is on
your far left, next toyour dinner fork. Your soupspoon is on the
far right, and ispreceded by your beveragespoon, salad knife and
dinnerknife. Finally, your dessertspoon and fork are placedabove
your dinner plate.
Beyond these rules, thebest advice I can give you is totry and
relax and just be your-self.
What constitutes the per-fect first meal of the dayvaries from
person toperson, country to country. In theU.S., for example, we

With summer officially in full swing, most folksare spending

years ago, the South King Street
restaurant has gained a steady following of fans thanksto what
can best be described as affordable Japanesecomfort food. But what
many people may not know isthat Hinone Mizunone also offers bentos,
perfect forthese busy summer days.We make anywhere from 40 to 50
bentos every single
day, says operations manager Eiki Tamaki.The bento boxes come in

Hinone Mizunone literally means soundof fire, sound of water,
and refers to theway in which the eponymous Japaneserestaurant
prepares its rice the old-fashionedway in a big pot over a
carefully monitored fire.We dont use a rice cooker, says operations
manager Eiki Tamaki.
We cook the rice in a big pot you can see it in the front
windowwhen you enter the restaurant.The end result, according to
Tamaki, is rice that is sweeter and
fluffier.In fact, it was the desire to share this style of rice
with locals that
prompted Masahiro Fujio to open his first U.S.-based
HinoneMizunone restaurant in Hawaii in May 2008.Hawaii is a rice
culture. People here eat a lot of rice even at
McDonalds you can order rice, exclaims Fujio, president of
FujioFood Systems, the parent company of Hinone Mizunone.
But even though people eat a lot of rice, they dont respect
therice, he quickly adds.Fujio gives the example of serving rice
with an ice cream scoop,
which cuts the rice and alters the texture and taste. This
practice, heexplains, is disrespectful to the rice farmers and
their product.Its etiquette to the rice farmers to serve the rice
well, just like it is eti-
quette for wine growers to serve the wine in a wineglass and
not, say, a ricebowl, Fujio says.We wanted to show Hawaii a better
way of serving and enjoying rice.Mission accomplished, as customers
of the family-friendly eatery have
embraced Hinone Mizunone for its rice as well as its affordable
selection ofJapanese comfort foods.(Japanese food) should be
something people can afford to eat every
day, Fujio says. I wanted local people to be able to come down
and eathere as much as they can.Fujios personal
favorite dish on the menuis the Saba Nitsuke($8.50). A true
delicacy,the simmered mackerelplate is a top-seller bothhere and in
Japan, as thecompany goes through awhopping 1,500 tons ofmackerel
each year!And with the success
of his first Hawaii venture,Fujio anticipates addingmore
restaurants to thelocal dining scene some-time in the future.We
just started busi-
ness here, but I do planto open many more(restaurants) here,
saysFujio, whose companyowns more than 20restaurant brands inJapan
and overseas. Itmay be a little differenttype of restaurant, but

Founded in 1986 by Sid Fanarof inLaguna Beach, Calif., the

wheat flour used to preparepizza dough fresh daily, to
specialityproducts like MSG-free pepperoni, part-skim rBGH-free
cheese and gluten-freeand vegan options, zpizza uses only thebest

And it is that exact attention to tastydetail that caught Cesar
Llarenasattention during a trip to NewportBeach several years
ago.When I first tried the pizza, it waslove at first bite,
Llarenas says. Mydream was always to own a restaurant,but I didnt

in L.A. called zpizza, I said, Wow,we gotta take this to
Hawaii.
Llarenas opened Oahus first zpizzain 2008 in Ward Centre and,
after a suc-cessful two years in business, theHawaii franchise
owner decided toexpand operations to the Windwardside last year.A
lot of our customers would comefrom Kailua to go to Ward Centre,
andthey encouraged us to come over here.So when we found a
location, this isthe place we want to be for our
secondlocation.
The second zs location opened inKailua last November in the new
151Hekili St. building, a perfect comple-ment to the zpizza
eco-friendlylifestyle.This building that we were able toget into is
energy efficient, saysLlarenas, noting that all of their pack-aging
from pizza cartons to carry-out bags is compostible.
We take pride in all of that, hestates. And, you know,
Kailua,they know our ingredients, andso it is a well-fit for us to
behere.
So far the top-seller on thez Kailua menu is the Napoli,a
thin-crust pizza toppedwith homemade roastedgarlic sauce,
mozzarella,fresh tomato rounds,
Parmesan and freshbasil. Also popular is the
Provence, which layersorganic tomato sauce, home-
made roasted garlic sauce,mozzarella, artichoke hearts,capers,
tomatoes and fresh basilover zs legendary fire-baked crust.Its very
simple but its verygood, Llarenas says.Pizzas come in 10-inch
small($12.95), 14-inch large ($22.95)
and 18-inch extra-large ($26.95) piesizes as well as by the
slice. Choosefrom one of zs 12 signature pizza cre-ations, or build
your own from the listof never-ending ingredient combina-tions.We
are a gourmet pizza place wherewe use a lot of premium
ingredients,Llarenas says. For example, we have atruffle oil that
we use, we use the crem-ini and shiitake mushrooms, we use apili
pili oil its an olive oil that we mixwith a hot pepper and it
creates a spicyoil and pretty much we try to buy asmuch local
produce that we can.
We take pride more in all the qualityand all the ingredients
that go in thepizza.In order to offer customers an evengreater
number of healthful choices,zpizza recently launched the Rusticas,a
line of personal-sized, free-form arti-san pizzas inspired by
global cuisine.Theres the Chicken Curry & YamRustica, a blend
of mozzarella, currychicken, yams, mango chutney, raisinsand
cilantro that takes its cues fromIndia; as well as the Pear &
GorgonzolaRustica, a creamy-sweet mix of moz-zarella and gorgonzola
cheeses withfresh pear slices and thyme.

Ingredients: 4 large portobello mush-room caps 1/4 cup olive oil
2 cups Dungeness and/orsnow crab meat, drainedwell 1/4 cup finely
diced greenbell peppers 1/4 cup finely diced redbell peppers 1/4
cup Spanish or Mauionions, finely diced 1 tbs. chopped garlic 1
tbs. chopped parsley 1 tsp. sambal oelek orchili paste1 cup
breadcrumbs 2 whole eggs 4 cups spinach (halfOkinawan, if
available) salt and pepper, to taste
Preparation: Pre-heat oven to 425 F.Clean portobello mush-room
and remove gills,then coat with olive oil in alarge bowl and season
withsalt and pepper. Place on aroasting pan and roast for
20 minutes. Saute green and red bellpeppers, garlic and
onionsuntil onions turn translu-cent. Let cool. Once cooled,combine
with the remain-ing ingredients. Adjust seasoning to taste. Remove
mushrooms fromthe oven and place upsidedown on rack to cool
slight-ly. When cool enough tohandle, fill each one withthe crab
mix to make aneven saucer shape. Saute until brown in alarge pan
with crab sidedown first. In another frying pan,lightly wilt the
spinach thenplace a thin layer over craband cut mushroom cap
inhalf. Place one half on top ofthe other so spinach meets,to make
a sandwich. Cut inthree wedges and placearound plate with
wiltedspinach in the center. Serve with roasted garliccream and
cabernet reduc-
tion. (See recipes below.) Garnish plate with whole-roasted
garlic cloves.
Roasted garlic cream: 20 garlic cloves, peeled 1/4 cup olive oil
2 cups white wine 2 shallots, finely diced 2 tbs. finely diced
celery 2 tbs. finely diced carrots 1 bay leaf 1 cup chicken broth 2
cups heavy cream salt and pepper, to taste.
Preparation: Place garlic and olive oilin a small roasting pan
andcover over low heat onstove top. Roast until garlicis golden
brown and soft,approximately 20 minutes. Pour wine in pot and
addthe diced vegetables andbay leaf. Bring to a boil andlet reduce
until dry. Addchicken broth and reduce
by half. Blend in heavycream and simmer for 5minutes, then
strain. Place cream sauce in ablender with eight garliccloves and
blend. Strain again then adjustseasoning.
Cabernet reduction: 1 cup red wine 1 shallot, finely diced 1
tbs. finely diced celery 1 tbs. finely diced carrots 1 bay leaf 1
can beef broth, reducedto 3 tbs. 1 tbs. unsalted butter salt and
pepper, to taste
Preparation: Pour wine in a pot and adddiced vegetables and
bayleaf. Bring to a boil andreduce until almost dry.Add reduced
beef broth andmix in butter, then strain.
