quicker than we know! Now, I don’tknow about you, but my taste budsseem to be changing along with the sea-sons. I find myself craving certain foodsthat I normally wouldn’t crave any othertime of the year, one of them beingsquash. Quite random, I know, yetsquash seems like the perfect ingredientchoice as of late — it’s diversity is amaz-ing. It’s that festive time of year again when the air is beginning to get a bit cooler and
appetites are growing eager with anticipation ofThanksgiving. This year, Zippy’s Restaurants onceagain joins hungry diners in welcoming the holiday sea-son with its elite Thanksgiving Meals To Go Packages.Zippy’s has been an essential part of Hawaii’s ohanasince 1966 when its originators Charlie Higa and hisbrother Francis opened the first McCully location, pro-viding the best in local favorites. And as Thanksgivingday fast approaches, Zippy’s dedicated team of employ-ees is working hard to put together a grand holidaymeal all its own.
With our mouths watering at the mere mention ofmoist and flavorful turkey with all the fixings, DiningOut recently joined Zippy’s marketing manager JeanineMamiya-Kalahiki at the table where she dished out allyou need to know about Zippy’s Thanksgiving Meals ToGo Packages — promising to make your Thanksgivingdinner one to remember.
DO: How and when did the idea for Zippy’sThanksgiving Meals To Go Packages come about?
Mamiya-Kalahiki: We started serving ourThanksgiving Meals To Go Packages in November 1998.Back then, we had a department at select Zippy’s loca-tions called “Zippy’s to Go.” The concept was to pro-vide convenience to families by offering foods that areprepared and ready to reheat — the convenience oftake home meals. It was designed for purchasing mealsfor small families. Then we wanted to do something forThanksgiving, and this is when we started the HalfTurkey Packages. In 2002, the Whole Turkey Packagewas added because of customers’ requests.
DO: Obviously, these packages are a hit! How manymeals does Zippy’s sell per year? What can dinersexpect this Thanksgiving?
Mamiya-Kalahiki: Yes,they’re very popular. Iwould say, we easily sellmore than 1,000 Meals ToGo Packages per year.Convenience is key withthese packages. Youcan’t go wrong with a fully cooked turkey that justrequires reheating, plus all the sides! Reheatinginstructions are included with each package.Instead of spending most of your time in the kitchen,with a Meals To Go Package, you can have the entiremeal prepared in one to two hours (depending onthe package you choose).
DO: What has the response to Zippy’sThanksgiving Meals To Go Packages been like?
Mamiya-Kalahiki: The response has been great!We continue serving these packaged meals everyyear because our customers like it! We provide thisservice to customers so now they don’t have tospend longs hours slaving away in the kitchen. Weprepare the complete Thanksgiving Meal for them.
DO: What sets this meal apart from other restau-rants that also offer Thanksgiving meals?
Mamiya-Kalahiki: First of all, we use a ButterballTurkey. The stuffing, mashed potatoes,cranberry/pineapple relish and poultry gravy are allmade from scratch. Our stuffing even consists offreshly-made bread from Napoleon’s Bakery! Ourpackages are reasonably priced, and we save youtime and labor — you can whip up an entire mealwith a whole turkey in no time!
DO: How many Zippy’s employees does it take toget these meals ready to offer to the public?
Mamiya-Kalahiki: It takes hundreds of employeesto make it all work! We start putting everythingtogether a couple days before Thanksgiving eve andsend the packages to our various locations on
Thanksgiving eve and day.

Since we couldn’t getOpakapaka, we had to look at other options. Wecame across this cod and it received a favorableresponse. We really wanted to offer variety to theThanksgiving menu. These dine-in specials aregreat homestyle meals and are available Nov. 22-24from 10:30 a.m., while supplies last at Zippy’s dine-in restaurants and fast-food counters. Prices areslightly higher at Zippy’s Ala Moana, Pearlridge andKahului.
DO: Is there anything else that our readers needto know?
Mamiya-Kalahiki: Yes, as mentioned, you canadd a pumpkin or custard pie to your package foronly $7.25 more! Also, you can order extra sides —if you want more gravy, stuffing, mashed potatoes,etc. you can order and pick up at the fast-foodcounter! We also are offering our Holiday Sushiplatters, which should be ordered 48 hours inadvance. For those who prefer to roast their ownturkey, we can provide all the sides! “We are always updating the menu— featuring different cooking styles —and we also follow the trends of whatpeople like right now, such as healthyfood with no MSG,” Ma says. “It’s hardto do 100 percent no MSG with Chinesefood (because of the sauces), but wetry to follow what customers like sothey can request that.”
Lung Fung’s innovative dishes setthe eatery apart from others, accord-ing to Ma.
“A lot of restaurants do really tradi-tional (dishes) but I always try to dosomething new,” he says. “I alwayschoose to ask the customer what theylike; if people like it, we most likely putit on the menu.”
This theory of operating by cus-tomer feedback, coupled with theeatery’s banquet menus, led Ma to cre-ate a special, dine-in only “openmenu,” in which customers can cus-tomize their own party menus.According to this menu, customersreceive one free choice of either a lob-ster or an order of Walnut Shrimp withthe purchase of any four entrees.
“With the holiday season coming, wewant people to choose their ownmenus for parties,” Ma says. “While wedo have set banquet menus, this menuis more open; customers can choosetheir orders.”
The “open menu,” as Ma refers to it,is categorized by appetizer, soup,
seafood, casserole, fowl,beef/pork/lamb and vegetable entrées.Customers can pick any four of theseitems to receive the free lobster orWalnut Shrimp. Appetizer choicesinclude Crispy Gau Gee ($8.95; 10

A variety of chicken, beef, pork, lamb andvegetable dishes also are offered, including MinuteChicken ($10.95), Crispy Chicken ($11.95), Salt &Pepper Pork Chop ($11.95), Mongolian Beef($11.95) and Choy Sum with Garlic Sauce ($10.95).This “open menu” is comprised of the most popu-lar items from the eatery’s regular menu.“I see most people order (these dishes) from
the regular menu, so the ‘special open menu’concentrates on the popular items,” Ma says.“We do a lot (of our dishes) with garlic chili; it’slike our signature ingredient. We have a PorkChop with Garlic and Chili ($12.95) and a CrispyGarlic Shrimp ($14.95). We make so many itemswith garlic chili.”While Lung Fung has always promoted its
“open menu,” Ma encourages customers to takeadvantage of the free lobster or Walnut Shrimp
deal, especially as the holiday seasonapproaches and people plan forChristmas parties. Not only does LungFung provide a variety of banquetmenus — in addition to the “openmenu” — but the eatery’s location isideal for large parties, as there isample free parking. “A lot of people choose from this
special menu because of the lobster,”Ma says. “Some people don’t want totouch the shell because it’s too messy;that’s why we keep the option for peopleto have the Walnut Shrimp instead of thelobster. A lot of places sell lobster for $10.95with the purchase of another dish, but we do it ourown way here. It’s good to have a party here (atLung Fung); you don’t have to worry about invit-ing a lot of guests (with all the open space).”For customers who opt to order from the
eatery’s regular menu, Ma recommends that youview the complete selection on Lung Fung’s web-site. The restaurant has a huge selection ofentrées, including many seafood dishes. “We are a neighborhood business trying to
serve the neighborhood better,” Ma states. “Wechanged from a chop suey restaurant to one thatfeatures more seafood and Chinese cooking.”
Kaew’s Thai Villa offers cus-tomers a little slice of Thailandright on Liliha Street. The
eatery serves up both classic Thaidishes and innovative creations in acasual, tranquil setting.
Owner and chef Kaew Anuttsara,who is originally from the Thailandcountryside, boasts years of experi-ence and training, and her restau-rant’s cuisine reflects that.
One of Kaew’s Thai Villa’s mostpopular dishes, and one ofAnuttsara’s personal favorites aswell, � is the Grilled Salmon Filet,Panang ($12.50). The dish fea-tures a succulent piece of grilledsalmon, bathed in a panangsauce with coconut milk and fullleaves of fresh basil that perfect-ly complement the slightlyspicy flavors.
Another popular dish is theWhole Fish (Pla Sam Rod), whichis a whole deep-fried RedSnapper with the house specialsweet and sour sauce ($25 to$30, based on size).
The Hot Spicy Fried Rice(Kao Pad Keaw Wan) withchicken ($9) or shrimp ($10) is

She first became interested in cook-ing while watching her father prepare meals as achild growing up in northeast Thailand. “I used tosee my dad cooking, and I wanted to cook just likemy dad,” Anuttsara says. “I loved my dad’s cooking.”As she got older, she started making meals for
her family. She then went on to study culinary artsand has trained with some of the best Thai chefs.“I love to cook for the people,” Anuttsara says. “I
love to see people happy when they eat my food.”In addition to her passion for cooking, Anuttsara also
brings her love of healthy ingredients to her dishes.“I love fresh vegetables,” Anuttsara explains. “I
don't like oil, and I don’t use MSG at all. I want myfood to be healthier.” Kaew’s Thai Villa gets much ofits produce from local farms. Anuttsara gets many freshvegetables from friends and family who work on localfarms. And, she goes to the farmer’s market daily togather fresh ingredients.Anuttsara says that one of the healthiest dishes at the
restaurant is the Tom Yum Soup that is served with chick-en or vegetables ($8), shrimp ($10) or seafood ($13.50).Tom Yum Soup features kaffir lime leaves, lemongrass,cilantro, ginger, tomato and mushroom.“I just want people to eat fresh and healthy food,” she
says. “These are simple dishes, but dishes that are freshand taste good.”

Chinese restaurants are astaple on the Island, sowhen you’re choosing
where to go for Asian cuisine, doyou ever open yourself to some-thing new or do you resign your-self to the tried and true? The for-mer can be a gamble and the lat-ter … well, redundant. Today, my vegan lunch pal and I
opt for the thrill of the gamble.Driving along Alakea Street, I’moften drawn to the elegant exteriorof The Mandalay with its classypeach-toned marble and graniteexterior, so we decide to give it a try.The veggie items on the dim
sum menu are Vegetarian SpringRolls (3 pieces, $3.50) andVegetable Rolls (2 pieces, $3.50;lunchtime only, 10:30 a.m.-5 p.m.).The crispy spring rolls containshredded taro, shredded blackfungus, carrots, cabbage andbamboo shoots, and come with asweet and sour sauce — yummy,but tradi-
tional. The vege-tarian roll thatarrives in abamboo steam-er is more of asurprise. Theplump dumpling
filled with hunks oftofu, bean curd, black mushroomand baby corn is almost burstingfrom its cabbage leaf wrapping. Abite into that luscious bundlerewards the palate with an explo-sion of warm broth from thespongy tofu (we’re told it’s madefrom bean sprouts) and thenthere’s a crunch and a satisfyingchewiness as your teeth hit thecorn and the mushroom. At our request for something
vegan for the main course, ourhost, owner Linda Chan, feels thechallenge. She wants to offer usthe popular mu shu dish, butthere’s no way around the eggs.She finds a quick solution:Vegetarian Lettuce Wrap ($12.95,not on the menu, must be special-ly ordered). A plate of six roundsof iceberg lettuce and a dark plumsauce arrive accompanied by aheaping plate of somethinggrainy-looking —�it’s just a tan
heap, no beautifulflourishes or variety inshape or color. My companion andI each grab a piece oflettuce, spread on aspoonful of the deeppurple sauce, lay onsome of the mys-tery filling and arerewarded with a
zesty mouthful of nutty flavorsin assorted consistencies, fol-lowed by a delicate hint of wok-fried smokiness.“The filling is water chestnuts,
chestnuts, bamboo shoots andmushroom,” reveals Chan. “Westir-fry it with garlic and onion.”The lettuce is a lighter way than
the mu shu wrap to hold it alltogether and the plum offers adelightful tang. In the end, we had both eaten to
our content. With a toast of ourtea cups, a few sips of the jasminebrew rounded off a great meal.We’d made a gamble and withMandalay we hit the jackpot.

The restaurant also isknown for its Sizzling Hamburger Steak whichconsists of ground beef and pork, touchedwith a demi-glaze sauce. stand out is its trademark rice.“We’re known for our rice. We cook it in an

“I don’t put MSG in my cooking,”says manager and chef Shane Young.“The thing about curry is you have tomake it fresh. We make ours freshevery day.”
When it comes to Curry King’suniqueness, Young states he strives topresent his customers with classy dish-es at lower prices.
“It’s my business to bring classierfood down to a lower price so people cantaste it,” he explains.
Although theeatery’s name is“Curry King,” itssignature dish isthe Paitan Ramen($6.25). For anyof the eatery’sramen dishes,customers canchoose either amiso base or pai-tan (white soup)base, but thePaitan Ramenremains the mostpopular.
“‘Paitan’ means ‘white soup;’ it’s a pork-based soup that simmers until it turns a natu-ral white,” Young says. “There’s no artificialcoloring, and no artificial flavor is added.”
Curry King’s Paitan Ramen contributes tothe restaurant’s uniqueness, Young states.
“In the Japanese culture, the soup base isthe most important ingredient of the ramen,”he explains. “That (the soup base) makes aramen unique. In Hawaii, everybody likesshoyu ramen, but this (the Paitan Ramen) issomething different and it’s healthy. (Here atCurry King), people can eat healthy.”
Promoting healthy eating is part of Young’svision for the restaurant, as many of thecurry entrées are served with a tossed greensalad, pickled vegetables and rice.
“Our business features dishes that arefresh and healthy,” he says. “With the curryplates, I include a salad so people can eatsomething light. They have a meal, but theyalso have a salad, so it’s not an oily addition.”
Curry dishes popular among customersinclude the Chicken Katsu Curry Rice($7.55) and the Salmon Katsu Curry Rice($7.55). The Sautéed Garlic Butter Salmon($7.25) is another one of the eatery’s spe-cialties.
“We bread our katsu dishes right on thespot, right after the customers order it,”Young says. “We bread it right away so itdoesn’t get soggy. People taste the differ-ence; it’s crispier if we bread it (immedi-ately).”
While the menu at Curry King includes
a variety of ramen — Shrimp Tempura Ramen($7.88) and Mabo Tofu Ramen ($6.88) — aswell as Curry Rice dishes, Curry Ramen dish-es, specialties like Pork Yakisoba ($6.55) anddonburi entrees, Young is always looking fornew dishes to add to his menu.
“If I were to go to a restaurant, I would lookfor new things, so that’s my same vision — Iwant to put more items on the menu so peo-ple have a variety of new and different things(to choose from),” he says.
In addition to expanding its menu, CurryKing strives to draw customers with its rea-sonable prices. Currently, the eatery is fea-turing a Curry & Ramen Combo Set, in whichcustomers receive a mini ramen, four piecesof gyoza and their choice of a mini curryplate. The choices for the mini curry plateinclude the Mini Croquette Curry, MiniShabu Shabu Beef Curry and the Mini SpamKatsu Curry.
“You get ramen, gyoza and curry for only$9.55, so that’s pretty reasonable,” Young says.
For just $5 more — $14.55 plus tax — cus-tomers can opt for a regular curry plate, aregular paitan or miso ramen and six piecesof gyoza.
