The Vassilakis Estate of@ices are based at our olive press in Neapolis town, in the area known as “Mirabello”, in the Lasithi prefecture of Crete, next to the ancient settlement of Driros . The Vassilakis family olive grove is just 10
kilometers from our press. Our 3500 olive farming partners, who share the
same microclimate and olive‐cultivating conditions, are all located within a radius of
around 30 kilometers.

• In 1865, the family patriarch, Manolis Vassilakis (“Vassilo‐manólis”), established one of the @irst olive presses in Mirabello. • In 1980, his grandson Manolis retired from a career as an engineer in the merchant navy and decided to inject new life into the family business. • In 2001, “Vassilakis Estate” was incorporated. • In 2006, Vassilakis Estate olive oil production became fully vertically integrated.

Olive oil production is fully controlled from grove to bottle. The annual olive harvest begins in mid‐November every year and is a busy time for the Vassilakis Estate and for our 3500 olive farming partners. When the olives are ready, all are responsible for carefully and quickly collecting the perfectly ripe olives and ensuring they arrive undamaged, as soon as possible after harvesting, at the Vassilakis Estate olive press.

polyphenols and natural antioxidants for longer. Our high‐capacity processing capability of 12.000 kilos of olives per hour produces 2.5 to 3 tonnes of olive oil in an hour. This means that the olives, the mass of which are all harvested within a short window of time, get pressed immediately without delay, which minimizes or eliminates any quality deterioration.
Our modern olive press is organized into two separate production lines, one for extra virgin olive oil and the other for organic extra virgin. Once the olives have been pressed, storing the olive oil until it is ready for
bottling is another important stage of the procedure.

Every one of our olive oil bottles arrives at your table with all its nutritional values Vassilakis Estate product quality standardization is fully verticallyintegrated, with each batch qualitycontrolled at our olive press. The Einal stage of bottling, capping and labelling is carried out exclusively onpremise by our Elexible automated Eilling line, capable of handling up to 3000 bottles an hour, minimizing order processing time. The whole Eilling procedure is carried out under controlled atmospheric conditions and each bottle is sterilized, so that Vassilakis Estate extra virgin olive oil arrives at your table with its quality and nutritional characteristics intact.

Trace your olive oil back to its original tree
If you want to know which tree or olive grove your Vassilakis extra virgin olive oil comes from, we have developed a system of online traceability, so that you can follow all the stages of production. You can follow the whole olive “voyage” online: from the grove, its farmer, date of pressing and temperature, its quality characteristics analysis, where the packaging materials come from, right up to the sales outlet where you bought your bottle of Vassilakis Estate extra virgin olive oil.

Aerobic composting
Nothing of value is wasted
The olive leaves and twigs removed before pressing as well as the organic by‐products of our olive press, around 1200 cubic metres, are all recycled in our outdoor aerobic compost, which since 2006 is located in its own separate area.
The resulting compost of around 500‐700 cubic metres is a nutrient‐rich soil conditioner (high in bioactive micro‐organisms) which helps to reduce or prevent plant disease, contributing to healthy soil and disease‐resistant olive trees.

Social Responsibility #3 Fruit and vegetables from our organic orchard Planted several decades ago, our organic orchard produces seven different fruits, with intercropped seasonal vegetables. The orchard is in a particularly biodiverse and fertile outdoor location which regularly produces delicious fresh fruit and vegetables all year round. These are freely available to all our extended family: friends, visitors, neighbours, workers and of course, us.
Waste Saving Our investment in advanced olive pressing equipment ensures that olive waste by‐products are minimal. Any olive waste, however, is recycled or used to produce organic composting.
EfEicient Energy Use Energy‐ef@icient capacitors, which stabilize voltage and power @lows, have been installed in our power transmission system for electricity saving.
