Roasted Beet Citrus Salad
1. Preheat the oven to 400°F.
2. Wrap each beet in aluminum foil with a drizzle of olive oil and generous pinches of salt and pepper.
3. Place the wrapped beets on a baking sheet and roast until they’re fork-tender. Mine usually take 35-60 minutes – the time will depend on the size and freshness of your beets.
4. Unwrap the beets and set them aside to cool.
5. When they’re cool to the touch, rub off the skins. Do this step under running water for easy cleanup!
6. Make a vinaigrette from a few splashes of sherry or balsamic vinegar, fresh orange and lemon juice, and a few pinches of salt and pepper.

Upcoming Holiday Events Historic Town of Smithville
Over 120 Christmas Trees made from over 50,000 Christmas lights, magically float on Lake Meone in the center of Historic Smithville. The moment darkness falls, an orchestrated show of lights and music is played out across the lake. The lights seem to dance and chase each other to the music all the while reflecting of the water’s surface. This show can be seen from either side of the village as well as the bridge. Thursday, Friday, Saturday & Sunday evenings from dark thru
8:30pm.
Storybook Land Santa Lights the park every night at 5pm.
The park is open from 2pm to 9pm on the weekends and from 4:30 to 9pm on weekdays For info go to: storybookland.com
Ocean City Horse and Carriage Ride Come down to 9th and Asbury Ave. and get in a horse drawn carriage for a ride thru town. The rides are free so go enjoy!
Carriage rides start on November 21st and run from 1pm to 4pm on Saturday and Sunday thru December 20th.
