T
he most rustrating part o being a doctor isdiscussing dietary choices with my patients
On a daily basis I see patients making poordietary choicesEven when conronted with the evidence thatcertain ood choices are harmul many patients arereluctant to make the appropriate changes in orderto improve their health
Donrsquot get me wrong I know that my patients want to eat healthier However in todayrsquosinormation-packed world there is a logjam oconflicting dietary advice out there Dr Atkinsrsquo dietsays eat protein Dr Ornishrsquos diet says a vegetarian
diet Which one is rightO course no single diet is correct or everyone
However there is one thing I can say with certaintyAvoiding devitalized ood and eating nutrient-rich ood is the oundation o a good diet mdash oreveryone
Why Because eating devitalized ood leads to adevitalized body
In last monthrsquos newsletter I wrote about whatnot to eat In this monthrsquos issue o Natural Way to
Health I will present ood sources that provide thebody with the basic raw materials to promote ahealthy immune system
Certainly there are more healthy oods out therethan the ones I write about But with these five youcan begin your journey to a better diet
Coconut Oil A Better Way to CookAbout 40 years ago the powers-that-be started
telling Americans that polyunsaturated atty acids
mdash like corn canola or sunflower oil mdash were thehealthy choice We were also advised to avoid oils with saturated ats or cooking
So we stopped using saturated atty acids likecoconut oil and switched to polyunsaturated oilsWhat has been the consequence o this change Wehave more cancer and chronic illness and we stillhave high levels o heart disease
I believe one o the main reasons we have notmade much o a dent in chronic illnesses is due tothe misinormation about which oils are healthyand which are not
In act coconut oil is one o the best substances
to cook withFats are classified as short- medium- or long-
chain based on the number o carbon moleculesthey contain Most o the saturated at in coconut oiis short- and medium-chain ats
Approximately 50 percent o the atty acidcontent in coconut oil is a medium-chain at called

lauric acid In our body lauric acid is converted intoa substance called monolaurin Medium-chain ats
like monolaurin have a number o antibacterialantiviral and antiparasitic properties
Another medium-chain atty acid ound incoconut oil is capric acid which is converted intomonocaprin in the body This also has been shownto have antiviral and antibacterial properties In actthe antimicrobial properties o coconut oil has beenrecognized or more than 50 years
Short- and medium-chain ats are not oundin polyunsaturated oils like corn sunflower soy or
canola oilMany different viruses can be inactivated bycoconut oil includingbull Cytomegalovirus 1 bull Herpes simplexbull HIVbull Measles
Patients suffering rom chronic inections canbenefit rom adding 1 to 2 tablespoons o coconutoil into their diet
Unortunately many people are reluctant to add
coconut oil into their diet because they have beentold that coconut oil causes atherosclerosis also
known as hardening o the arteriesNothing could be urther rom the truth Not
only does coconut oil not cause heart disease it canhelp reverse it
Research dating back as ar as 20 yearsconcluded that the ldquoavailable population studiesshow that dietary coconut oil does not lead to highserum cholesterol or to high coronary heart diseasemortality or morbidityrdquo2
Other researchers have since reported that native
Pacific islanders who have a high intake o coconutoil had no signs o atherosclerosis until theymigrated to New Zealand and significantly loweredtheir intake o coconut oil The scientists ound thatafer migration the islanders experienced increasesin total cholesterol and LDL cholesterol anddecreased levels o HDL cholesterol 3
Ask for Wild-Caught FishFish has long been touted as a healthy ood
mostly because it contains omega-3 atty acids

Saturated Fats Are Beer for Cooking
You have probably heard
about the dangers of trans-fay
acids This refers to the abnormal
conguraon of the carbon bonds in
an unsaturated fat Trans-fay acids
are not essenal fats and provide nobenet to humans
These abnormal fats can disrupt
normal cellular funcon and have
been shown to increase the risk of
coronary artery disease Finally trans-
fay acids increase the producon
of LDL cholesterol Diets free of trans
fay acids are healthier diets Sll
most of the oils found in grocery
stores contain copious amounts of
trans-fay acids
Saturated fats are much beer
to cook at high temperatures
The reason is that exposing oils to
high heat can disrupt the chemical
structure of the oil and cause the oil
to become rancid and full of trans-
fay acids
Saturated fats do not become
rancid when heated at higher
temperatures they maintain their
structure
Trans-fay acids do not occur
in saturated fats like coconut oil
Coconut oil supplies healthy saturated
fats which aid our cell membranes
There is no evidence that coconut
oil causes heart disease but there is
evidence that coconut oil can help the
immune system ght infecons

Fish oils can be obtained either by eating fish ortaking supplements
Supplements o fish oils can be beneficial buttaking too many fish oil pills can have detrimentaleffects For instance excess fish oil can promotebleeding and elevated glucose levels
Although the research is not clear that fish oilsupplementation raises glucose levels my experiencehas shown that patients who take too many fish oilsupplements may have increased blood sugar levels
Fish can either be arm-raised or wild-caughtFarm-raised fish has become more common inrecent years
However the best way to get omega-3 atty acidsis to eat wild-caught fish
What is wrong with arm-raised fish A lotFirst o all arm-raised fish have been ound to becontaminated with PCBs and other chemicals
Recently the Environmental Working Grouppurchased arm-raised salmon rom 10 grocery
stores across the United States The scientists oundthat 70 percent o the samples they gathered werecontaminated with PCBrsquos at levels that raise serioushealth issues9
On the other hand the levels o PCBs in wild-caught Alaskan and Canadian salmon were muchlower Farm-raised salmon had 16 times more PCBsthan wild salmon and 34 times more than is oundin other seaood
The Environmental Working Group reportedldquoIn total these studies support the conclusion thatAmerican consumers nationwide are exposed toelevated PCB levels by eating armed salmonrdquo
Farm-raised fish can also be contaminated withsea lice In addition they are ofen given high levelso antibiotics to prevent inection and increase theirsize
What most people donrsquot know is that the normalcolor o arm-raised salmon is gray To combat thisthe industry eeds them dyes to give the fish a more
pleasant pinkish colorAnother problem with arm-raised fish is their
atty acid content Compared to wild-caught fisharm raised fish have much higher omega-6 toomega-3 ratios
Farm-raised fish such as Atlantic armed raisedsalmon should be avoided It is not a healthy oodchoice
Whenever I am at a restaurant I ask i the fish isarm-raised I it is I do not order it
Free-Range Cattle MeatThe Better Dietary Choice

Treat Chest Pain With Magnesium
Debbie a 58-year-old engineer had been havingchest pains nearly every day or a year Sometimes theyoccurred when she was walking or exercising Othertimes they came when she wasnrsquot doing much at all
ldquoAfer testing the cardiologist explained to me thatI did not have blockages in my coronary arteries Butthe arteries would occasionally go into a spasm Theblood flow declines during the spasm and I eel pain
He told me no one knows what causes the spasmsrdquoDebbie was prescribed verapamil to treat the
coronary spasms also called vasospasms Themedication helped about 25 percent she told me
Her chest pains came less requently but she wastired and constipated Verapamil is a calcium channelblocker (CCB) a class o medications that act toimpede the flow o calcium into the cells
CCBs are used to treat hypertension and elevatedheart rates and to prevent artery spams in the brainand the heart
In the heart a decrease in cell calcium results inless contraction o the smooth muscles o the arteries(vasodilation) which increases the diameter o thecoronary arteries Theoretically i there is vasospasmo the coronary arteries a calcium channel blockershould lower the cell calcium in the smooth muscleso the arteries resulting in ewer spasms
Use This Drug With CauonI was exposed to CCBs more than 20 years ago
during my medical training Back then they weretouted as the best thing to treat hypertension anginavasospasm and many other conditions CCBs becamemy most-prescribed antihypertensive medications
However subsequent CCB research ound that thisclass o medications was associated with many adverseeffects including headaches dizziness flushing andedema These side effects occur in 10 to 20 percento patients In addition constipation can occur in 25percent o patients who take verapamil
Because these medications block calcium intake tothe heart cells they can result in a diminished abilityo the heart to contract CCBs must be used with
caution by patients suffering rom heart contractionproblems such as congestive heart ailure
CCBs are also associated with increased mortality
afer a heart attack Yet these drugs are still widelyprescribed or heart disease patients In act onestudy ound high-dose CCB therapy was associatedwith approximately a 200 percent increase risk oheart attack in hypertensive patients according to the Journal of the American Medical Association
The body tightly controls calcium levels and veryew patients have high calcium levels Even highcalcium levels deserve a ull workup or an underlyingcause and treatment o the underlying cause can ofenrectiy the situation
lsquoWish I Had Known BeforersquoThe absence o atherosclerosis lef Debbie with a
clear diagnosis o coronary vasospasm While CCBs dohelp with the symptoms (chest pain) they do not treatthe underlying cause o the illness
There is a plethora o literature to support the useo magnesium to treat coronary artery disease andvasospasm In act magnesium deficiency has beenassociated with nearly every cardiovascular diseaseAnd nearly 60 percent o the American populationis estimated to be magnesium deficient accordingto the US Department o Agriculturersquos CommunityNutrition Mapping Project
I asked Debbie i anyone had checked her red bloodcell magnesium level She said that no one had
The test showed that Debbiersquos magnesium levelwas very low at 40 mgdl (normal is 40 to 64 mgdl)I told Debbie that her extreme magnesium deficiencymay be the underlying cause o her chest pain
I prescribed 400 mg o magnesium (magnesiumaspartate) or her to take at bedtime I also askedDebbie to ingest a hal teaspoon o unrefined salt(Celtic Brand Sea Salt or Redmondrsquos Real Salt) per day
as unrefined salt is a good source o magnesiumWithin three weeks Debbie reported that all signso angina were gone I told her to stop the CCB andthe side effects (atigue and constipation) also resolvedwithin our weeks
ldquoI eel so much better with the magnesium I wish Ihad known about this beorerdquo she said
Debbiersquos case is not unique Magnesium is a vitalnutrient that most o us do not get a enough o It isimportant to have your magnesium levels checked (viared blood cell testing) on a yearly basis
In each issue I will share with you the story of one ofmy patients and how sometimes simple alternativeapproaches can solve major health problems Names
and some details have been changed for privacyrsquos sakebut the problems and their resolutions are real

soybeans The reason they are ed a primarily grain-based diet is that it has a high caloric value As withhumans a diet that is high in soybeans and grainsleads to a rapid weight gain
Why do they do this Because the goal o a
conventional armer is to have their cattle reachpeak weight as ast as possible
In order to achieve this goal the animals are alsogiven growth hormones Residue o these growthhormones ends up in the meat people ingest
Conventionally raised animals are also givenantibiotics to prevent inection Likewise remnantso these antibiotics are ound in the end productsthat make their way to supermarkets
Contrast this with meat rom cattle raised in a
ree-range setting Organically raised animals are noted on soy and grains Instead they graze on grass ina pasture
Eating pasture grass provides the animals withthe proper nutrition Animals eating a pasture-baseddiet are able to absorb the at-soluble vitamins (A Dand E) in higher quantities
Studies have shown that grain-eeding results inlower quantities o at-soluble vitamins in milk thatcows produce10
Also animals raised on ree range arms are
not given growth hormones Animals raised this way would be expected to have no trace o growthhormones in their end products
As noted residues o growth hormones havebeen detected in conventionally raised meat
Finally there is a difference in the atty acidcontent o the meat in conventional and organicallyraised cattle
Conventionally raised cattle meat contains amuch higher percentage o omega-6 atty acids
compared to organically-raised cattle meat In actorganically raised cattle meat is ound to have ahealthier atty acid balance mdash which means moreomega-3s 11
Organic meat is a good source o absorbablenutrients such as iron and B-vitamins including vitamin B12
There is no question that eating meat romanimals that are organically raised in a ree-rangeenvironment mdash ree o hormones and antibiotics mdashis a better dietary choice
There Is No Better Food ThanOrganic Eggs
Probably no ood has been more vilified thanthe egg I have heard all the lines ldquoMy doctor toldme to avoid eggsrdquo ldquoEggs raise your cholesterol levelsrdquo
ldquoEggs cause heart diseaserdquoBut I can assure you that there is no better ood
in the world than an organic eggEggs are the only ood source that contains a
ull complement o essential amino acids mdash thebuilding blocks or protein in the body Eggs are thebest source or amino acids
Yet in my practice I see many patients withdeficiencies o amino acids
Organic eggs also provide healthy sources o
protein and at Adequate protein and at helpabsorb at-soluble vitamins A D E and KAnother misconception lies in how we should
eat eggs Many people believe that it is best to eatonly the white part o the egg and avoid the yolk
But once again nothing could be urther romthe truth Egg yolks are rich sources o carotenoidsincluding lutein and zeaxanthin12 both o whichaid the body with eye disease such as maculardegeneration
In act eggs are the best ood source o luteinand zeaxanthin
In addition eggs provide a healthy source ocholesterol or the body with about 200 mg in each
Many patients I see are under the mistakenimpression that ingesting eggs will raise theircholesterol levels
This is another myth There are no studies

In the News Reading Between the Medical Headlines
Fluoride May CauseCardiovascular Disease
Scientists recently studiedatherosclerotic arteries and theirability to take up fluoride and
published their results in the January 2012 issue o the journal Nuclear Medicine Communications
Using positron emissiontomography (PETCT) scanningthe researchers ound a significantcorrelation between fluorideuptake and calcification o arterialwalls
There was also significantcorrelation between a historyo cardiovascular events (heart
attacks) and presence o fluorideuptake in coronary arteries
The conclusion o the articlestated ldquoAn increased fluorideuptake in coronary arteries maybe associated with an increasedcardiovascular riskrdquo
Perhaps what we know asldquohardening o the arteriesrdquo is morethan calcium deposits
Most o us still drink fluoridatedwater But there is no good datasupporting the benefits o addingfluoride to the water supply
Now we have a study findingthat those with a history o heartdisease have more fluoride intheir coronary arteries comparedto subjects without heart diseaseFluoride is a known neurotoxinwhich poisons hundreds oenzymes
More Bad Press forBisphosphonates
A headline in the May 10 2012issue o The New York Times readldquoStudy Cautions Over Long Use oBone Drugsrdquo
The article reported about anFDA review that was published inthe previous dayrsquos issue o the New England Journal of Medicine whichcautioned about the long-term use
o osteoporosis drugsThe authors stated ldquo patients
at low risk o racture mayprove to be good candidates ordiscontinuation o bisphosphonate
therapy afer 3 to 5 yearsrdquoAlthough the NEJM articlemade headlines across the countryits conclusion did not go arenough There is concern thatlong-term use o bisphosphonatemedications can lead to seriousadverse problems such aspathological ractures in bones
I have written aboutbisphosphonate medicationsbeore in Natural Way to Health
A large portion o my book DrugsThat Donrsquot Work and NaturalTherapies that Do is devoted tothe dangers o bisphosphonatemedications
This class o medications shouldbe pulled rom the market WhyBecause the mechanism o actiono the bisphosphonate drugsguarantees that there will beadverse effects in the bones
Osteoporosis does not orm
due to a bisphosphonate-drug-deficiency syndrome
Osteoporosis orms rom avariety o issues such as eatinga poor diet ull o refined oodbeing vitamin D deficientoveruse o antacid medicationsmagnesium and calciumdeficiency as well as poor exercisecapacity
Correcting the underlying
cause o osteoporosis will result inhealthier bonesMany times this is accomplished
by eating a healthy diet avoidingsoda and correcting nutritionaldeficiencies
I you have osteoporosisI suggest working with aknowledgeable healthcare providerwho is skilled with searching orthe underlying cause
Dietary MagnesiumLowers Stroke Risk
Researchers studying therelationship between magnesiumintake and stroke risk looked at
seven studies that included 241378subjects This population included6477 cases o stroke
In the February 2012 issue othe American Journal o ClinicalNutrition the scientists reportedan inverse association betweenmagnesium intake and risk ostroke An increase o 100 mg omagnesium per day was associatedwith an 8 percent reduction in risko stroke The authors concluded
ldquoDietary magnesium intake isinversely associated with risk ostroke rdquo
Magnesium is essential or lieUnortunately our ood supply iswoeully deficient o this mineral
Where do we get magnesiumrom Nuts coffee cocoa tea andgreen leay vegetables are goodsources Unrefined sea salt is also arich source o magnesium
Due to the depletion o themineral content o our armlandthe magnesium levels in our oodproducts have been declining overthe years
I have been checkingmagnesium levels in patients ornearly 20 years and I have seen asteady decline o magnesium
Supplementing may lower yourrisk o not only stroke but alsoheart disease headaches asthma
diabetes and osteoporosis Averagedoses o magnesium range rom100 to 400 mgday The onlymajor side effect o magnesiumsupplementation is loose stoolswhich can be rectified by loweringthe dose
I your doctor is not checkingyour red blood cell magnesiumlevels I suggest finding one whodoes

proving that eating eggs raises the bodyrsquos cholesterollevels
Whatrsquos more cholesterol is an importantsubstance or maintaining cell integrity and helpsprevent cancer Cholesterol does not cause heart
diseaseMore inormation about cholesterol can be
ound in my book Drugs That Donrsquot Work and Natural Therapies that Do
Another essential nutrient in eggs is choline which is ound in every one o the bodyrsquos cellmembranes and is particularly concentrated in thebrain
Choline absolutely is necessary or proper nerveunction Deficiency causes problems with the liver
kidney nervous and cardiovascular systems as wellas causing problems with bones Choline deficiencycan even cause cancer13
I encourage my patients to eat organic eggs aspart o a healthy diet I even advise my vegetarianand vegan patients to introduce organic eggs totheir diet as these patients are almost all deficient inessential amino acids
How many eggs per day do I recommend Irecommend that people eat at least two organic eggsper day Personally I usually consume three each day
More Fruits and Vegetables for aHealthier Population
Our mothers were right We need to eat ourruits and vegetables Fruits and vegetables providethe body with a host o antioxidant nutrientsincludingbull Carotenoidsbull Magnesiumbull Vitamin Cbull
Vitamin EMost Americans do not eat enough ruit and vegetables I we all increased the intake o ruit and vegetables we would have less chronic illness and ahealthier population
Once again it is best to eat organic ruitsand vegetables that are ree o pesticides whichrequently contain toxic halogens such as brominefluoride and chlorine The ingestion o pesticidespoisons enzymes and causes iodine depletion
I have written in past issues o Natural Way toHealth about the consequences o iodine deficiency which include cancer o the breast ovary uterusthyroid and prostate
Iodine deficiency is also associated withother diseases o the thyroid gland includingautoimmune thyroid disease
Fruits and vegetables are best eaten as soon asthey are harvested Studies have shown that nutrientlevels decline the longer it takes to bring the oodsource to market
The Most Important DecisionYou Make Every Day
There is no question that you are what you eatEating a diet ull o devitalized refined ood sources which contain refined sugar salt flour and oil will
result in a nutrient-depleted bodyOn the other hand eating a healthy diet ull o
unrefined ood choices can supply the body withthe vital nutrients necessary to promote health Thebiggest daily health decision anyone makes is whatthey eat
There are still a lot o myths about ood butitrsquos not that difficult to make good ood choicesI encourage you to educate yoursel about theood you are eating And I am sure that once you
learn about the health benefits o organic ruit and vegetables eggs meat and wild-caught fish as well ascoconut oil you will come to the same conclusionsthat I have reached
More inormation on maintaining a healthydiet can be ound in my book The Guide to Healthy Eating

Agriculture guidelines suggest a healthy diet orteens should contain 72 grams o sugar
Unortunately much o our ood supply hasrefined sugar added to it so itrsquos easy to exceed theUSDArsquos recommendations You could do it simplyby eating a quarter cup o pancake syrup or havinga 12-ounce sof drink Even a ruit-filled yogurtcontains nearly the entire daily allotment
Whatrsquos more the USDArsquos recommendation doesnot take into account the quality o sugar We shouldall avoid refined sugar
Unrefined sugar (such as pure cane sugar) whichcontains potassium calcium and magnesium isa much better choice Sugar substitutes includexylitol maple syrup and molasses
I was diagnosed with Graves disease and a goiterabout four years ago Every time I eat pasta or breadI feel extremely full and have gastrointestinal painsIs there anything you could suggest
mdash Peggy G Shreveport La
Graves disease is an autoimmune illness o thethyroid gland Although we do not know exactly what predisposes a person to get an autoimmune
thyroid illness I have no doubt that there are twokey actors iodine deficiency and gluten sensitivity
It is impossible to experimentally induce Gravesdisease in an animal without ensuring iodinedeficiency According to the Centers or Disease
Control iodine levels have declined more than 50percent over the last 30 years in the US
During this same time we have seen anepidemic increase in all thyroid disorders includingthyroid cancer and autoimmune thyroid disorders
I have also ound a direct correlation betweengluten sensitivity and autoimmune thyroid illnessSimple blood tests can ofen detect antibodies toproteins ound in wheat rye oats and barley Theseantibodies ofen react with thyroid tissue causing aninflammatory response in the thyroid gland
Removing gluten rom the diet can help reducethe inflammatory cascade and should be a priorityor those suffering rom autoimmune thyroidillness Studies have shown an improvement inautoimmune thyroid illness when gluten is removedrom the diet
Not everybody who is suffering rom anautoimmune thyroid illness improves on a gluten-ree diet But my experience has shown that morethan 70 percent o autoimmune thyroid patients will improve
I you are going to try a gluten-ree diet I suggestat least a six-month trial in order to ascertain i thediet will improve your condition
More inormation about how to implement agluten-ree diet can be ound in my book The Guideto a Gluten-free Diet

Another medium-chain atty acid ound incoconut oil is capric acid which is converted intomonocaprin in the body This also has been shownto have antiviral and antibacterial properties In actthe antimicrobial properties o coconut oil has beenrecognized or more than 50 years

Unortunately many people are reluctant to add
coconut oil into their diet because they have beentold that coconut oil causes atherosclerosis also

only does coconut oil not cause heart disease it canhelp reverse it
Research dating back as ar as 20 yearsconcluded that the ldquoavailable population studiesshow that dietary coconut oil does not lead to highserum cholesterol or to high coronary heart diseasemortality or morbidityrdquo2

Saturated Fats Are Beer for Cooking
You have probably heard
about the dangers of trans-fay
acids This refers to the abnormal
conguraon of the carbon bonds in
an unsaturated fat Trans-fay acids
are not essenal fats and provide nobenet to humans
These abnormal fats can disrupt
normal cellular funcon and have
been shown to increase the risk of
coronary artery disease Finally trans-

most of the oils found in grocery

trans-fay acids
Saturated fats are much beer
to cook at high temperatures
The reason is that exposing oils to
high heat can disrupt the chemical
structure of the oil and cause the oil
to become rancid and full of trans-

Saturated fats do not become
rancid when heated at higher
temperatures they maintain their
structure
Trans-fay acids do not occur
in saturated fats like coconut oil
Coconut oil supplies healthy saturated

evidence that coconut oil can help the

More inormation on maintaining a healthydiet can be ound in my book The Guide to Healthy Eating

mdash Narda K Dallas Ga
We certainly eat too much sugar in the UnitedStates Teenagers are estimated to ingest more than34 teaspoons o sugar per day That correspondsto more than 130 grams The US Department o

How do I kick the sugar habit Is there a food that Ican substitute
mdash Narda K Dallas Ga
We certainly eat too much sugar in the UnitedStates Teenagers are estimated to ingest more than34 teaspoons o sugar per day That correspondsto more than 130 grams The US Department o

More inormation about how to implement agluten-ree diet can be ound in my book The Guideto a Gluten-free Diet

soybeans The reason they are ed a primarily grain-based diet is that it has a high caloric value As withhumans a diet that is high in soybeans and grainsleads to a rapid weight gain
