www.chefmarshallobrien.com © 2021 Chef Marshall O’Brien Group Zesty White Fish Stew 4 Servings Ingredients 3 tablespoons olive oil 2 cups yellow onions, diced 1 large (1 1/2 cups) red bell pepper, diced 1 tablespoon garlic, minced 2 teaspoons paprika 2 teaspoons cumin 2 teaspoons coriander ½ teaspoon salt ½ teaspoon black pepper 1 ½ pounds tilapia filets, chunked 1 – 14.5 ounce can diced tomatoes 1 - 14.5 ounce can coconut milk 3 tablespoons lime juice ¼ cup fresh cilantro, chopped Directions Heat olive oil in pot over medium heat, add onions, and bell peppers, to pot and cook until onions are aromatic and start to become tender, about 2-4 minutes. Add garlic, paprika, cumin, coriander, salt, and black pepper. Stir. Reduce heat to low then add tilapia, diced tomatoes and coconut milk. Cover and let simmer for 15 minutes, stirring occasionally. Add lime juice and cilantro and simmer for another 5 minutes, until fish is cooked through.
