► Hard;reallyhardtobelieveithasbeen50years!Fiftyyearsagomakesthiseventseemalmostlikeithappenedtosomeoneelseinanothertime.Ihave,however,takensomemomentstoreflectontheexperienceandrecallitasveryenjoyableandratherscaryforsomeonewholikestohidefromthepubliceyeasmuchasIseemto.Everyonewasgener-ousandImetsometrulyinterestingandthoughtfulfolks.► Asayoungwoman,Ilovedthefarm,theanimals,thefactthatwewerepartofagroupofpeoplewhosuppliedsome-thingofgreatvaluetothewellbeingofpeople.► Inowliveinthecity,Minneapolis,MNwhichisalongwayfromthefarm.Iamenjoyingthisexperienceandfindtherearemanywaystobepartoftheearth,evenhere.LastsummerIhadtheopportunitytovisitthefarmwhereIwasraisedandlivedduringmytimeasDairyPrincessanditisdefinitelyabittersweetmemory.Timehaschangedsomanythingsandrecognitionwasonlyinglimpses.

Debrahisadairyfarmerwithherhusband,WilliamJ.MurphytwomilessouthofFairfield.Theyhavebeenthere41yearsandhave350head;milking170cows.Sheraisesthecalves,feedingasmanyas40twiceaday.Theyhavefourchildrenand10grandchildren.Sheenjoystravelingtothelong-distancegrandchildren.

► OnDecember4,2013,theirfarmwillcelebrateacentennialofMurphyownership.Conse-quently,sheisplanningsummer2013farmtoursthe100-yearcelebration.

DebrahisactiveintheFairfieldRestorationAssociation.Withahistoricalcomrade,shetookpictures,142differentviewsofthebarnsintheTownofFarifield.Hermotivationwastodocumentthembeforethedeterioratingbarnsfelldown.Thereisaslidepresentationofthebarnviewssettothemusicof“GonewiththeWind.”Thereare3postersavail-ableforpurchase.Eachposterhasacollageof18barns.

High-protein yogurt gains popularitySupermarket shelves across the country are expanding to make room for thicker types of yogurt, and your milk-marketing entity Dairy Marketing Services (DMS) is taking full advantage of the chance to help meet the exploding consumer demand.

During the last few years, Greek-style yogurt has skyrocketed in popularity thanks to its tangy taste and health benefits, says Dean Ellinwood, vice president of sales and marketing for DMS, which markets and transports milk for Dairy Farmers of America, Inc., Dairylea Cooperative Inc., St. Albans Cooperative Creamery and other cooperatives throughout the Northeast and Mid-Atlantic areas.

A staple in Mediterranean diets, Greek yogurt contains approximately twice the protein of regular yogurt, Ellinwood adds. Its consistency compares to sour cream, but both Greek and regular yogurts begin the same way; milk is heated and slightly cooled before probiotic cultures are added. Unlike regular yogurt, Greek yogurt uses an industrial-sized cheese cloth to strain excess liquid. Solid whey proteins remain, giving Greek yogurt its thick, creamy texture and added health benefits.

As it continues to fly off supermarket shelves, the Agro Farma, Inc. manufacturing facility in South Edmeston, N.Y. — producer of Chobani, the first overall yogurt in the Northeast and the number one Greek yogurt in the United States — is expanding its manufacturing facility to keep up with consumer demand, says Nicki Briggs, director of communications for Agro Farma.

“We’re currently building a new warehouse to increase capacity, storage ability and wastewater treatment,” Briggs says. “By the time we are through, we’ll be using 25 million pounds of milk per week.”

DMS currently supplies 22 loads of milk from 450 local farms to the Agro Farma plant each day, which amounts to 40 million pounds of milk per month. With the expansion, that number is expected to increase. On average, DMS producers in the area are receiving more money per hundredweight because their milk is being used in Class II plants instead of Class IV, Ellinwood says.

Chobani is made from 100-percent fluid milk, Ellinwood says.

“This gives the yogurt a different flavor characteristic that people enjoy,” Ellinwood says.

According to Briggs, it takes three pounds of milk to make one pound of Chobani Yogurt. The facility currently ships 600,000 cases each week, and the economic impact of this expansion on the local farming community will surpass $500 million in the first year, Briggs says.

Agro Farma first produced Greek yogurt in 2007 and has recorded a 243-percent growth since last year, Briggs says.

“The majority of the product’s success has been through word of mouth,” she says. “Our fans, who we call ‘Chobaniacs,’ have been amazing. We’ve been told that Chobani is a brand that people love to own and tell people about.”

Briggs says Chobani’s success comes from a high-quality product that is priced well.

“Some see Greek yogurt as a premium product,” she says.“But we think everyone should be able to afford a great cup of yogurt.”

Chobani’s 6-ounce cup currently comes in 11 flavors, with three additional flavors launching in January. Popular flavors include strawberry, peach and blueberry, as well as consumer requests of raspberry, pineapple and pomegranate. Agro Farma also recently started producing Chobani Champions, a 3.5-ounce Greek yogurt cup for kids.

“This is a real Cinderella story for this Greek-style yogurt,” Ellinwood says. “Overall, we’re seeing a dynamic change in the marketplace. More companies are looking to build and expand the manufacturing of dairy products in the Northeast.

“This is great for dairy farmers, good for business and helps the local economy. This growth is excellent for a

part of the country that really needed it.”
