As the inspiration for so many journeys, ancient and modern, bringing traditional cuisines of different countries from people to people, east to west, ‘Indian Ocean’ was an irresistible choice for the name of a restaurant designed to offer its diners a veritable travelogue of culinary experiences.

The Indian Ocean stretches to the waters of the southern pole, and reveals the great continent of India as the close European neighbour that it really is. It shows us why the explorers and travellers who sailed to and from this land that borders China, Tibet, Nepal and Bhutan were always destined to make it the crossroads of trade, culture and cuisines journeying between Britain and Asia that it is today.

Our master chefs excel in the authentic skills of Punjabi, Kashmiri and Indian cuisine.The restaurant boasts a team of no less than twelve chefs, six of them recruited directly from recognised centres of excellence, carefully chosen to represent the full range of differing and distinctive ethnic cooking that can be found by those lucky enough to travel across the Indian subcontinent. Six chefs have trained with dedication and passion at Indian Ocean under Executive Chef Sheikh Kamran for up to fourteen years, perfecting dishes that provide our restaurant diners with the extraordinary choices that make up the virtual travelogue of culinary delights that is available to suit every palate at Indian Ocean today.

INDIAN CUISINE A luscious land of many cultures that shares traditions as well as cooking and ingredients with both Punjab and Kashmir. Indian cooking today touches every cuisine in the world, and has developed across this vast and ancient region over the last 60 years to cater for many western tastes. Holding true to authentic Indian cuisine and its largely vegetarian heritage, all our chefs have extensive training from this region, retaining as much of the genuine Indian style as possible whilst pleasing local tastes. Collectively, our chefs have over 50 years experience in preparing authentic Indian cuisine.

KASHMIRI CUISINEKashmir borders with two great cooking nations, India and Pakistan, and many would say the country shares the best of their culture and cuisines. Nevertheless quite unique, the ancient and traditional cooking style of Kashmir goes back hundreds of years. At Indian Ocean, our Kashmiri recruited chefs cook in the authentic style of Kashmir to provide a range of specially selected dishes, designed to bring a taste of the Himalayas and the traditions of a lush mountain environment; where everything is grown and cooked fresh for the table, to the urban landscape of England.

Cooked in traditional copper curry pots, forged for their renowned health giving properties, and in clay pots for flavourful slow-heat cooking, we follow the ultimate in authentic preparation to retain all the true flavour and atmosphere of Kashmiri food. PUNJABI CUISINE One of the most prominent cuisines is the Punjabi style, which owes much to its location, where it is the agricultural heart of Pakistan and the meeting place of the country’s five great rivers, and again sharing its geography with India.

First developed as a style of cooking created to satisfy the palate of labourers returning from the field and looking forward to a nourishing and filling meal, Punjabi Cuisine requires a skilful blending and cooking of ingredients to produce its distinct flavour.

Our chefs - direct from Punjab and masters of all types of Punjabi cooking, from the cuisine of the lush crop fields to the menus favoured in the country’s bustling cities - have all the skills needed to prepare this special selection of dishes.

Famously, the Punjab is also the home of Daygh (cauldron) cooking - which is perfectly suited for large party catering. COOKING STYLES – TRADITIONALChoose from a mixture of regional favourites and Indian Ocean exclusives

Madras A southern Indian dish with hot and spicy taste Prepared with fresh herbs and tomato puree.

Vindaloo Originally a Portuguese dish, transformed in colonial outposts from Goa to Madras to become the restaurant favourite that is enjoyed across Britain today. A fresh but fiery curry with tomato puree and herbs. Not for the beginner.

Patia Like its more famous cousin, dhansak, patia is a Parsee dish. Lightly fried onions cooked with tomatos to a natural red sweet and sour sauce. A hot dish with a distinctive aroma, garnished with fresh coriander.

Methi Methi is the Indian name for the herb fenugreek, which has a distinctive taste and aroma. The curry is medium strength cooked with garam masala, fresh onions and of course fenugreek.

Bhuna This is first and foremost a style of cooking in which the spices are gently fried to bring out their flavour before they are used in the recipe. Bhuna dishes themselves are made with meat cooked in its own juices, for deep strong flavours but very little sauce.

Dopiaza The dopiaza is a classic Indian dish dating back at least to Mughal times. The name dopiaza broadly translates as “double onions” and a classic Indian dopiaza uses onions in two different ways, fried and boiled, at different stages of the cooking. The restaurant version has small fried pieces of onion in the sauce and then larger chunks of lightly cooked onion added towards the end of the cooking.

Rogan Josh Rogan josh is a long time favourite on the Indian Ocean menu. It was originally a Kashmiri dish but is equally at home in the Punjab. An authentic Rogan josh is delicately spiced and cooked to its distinctive deep red colour with the use of sweet pimentos, capsicums and tomatoes.

Handi A medium spice Indian dish flavoured with methi leaves, exotic spices, onions and fresh garlic in a tomato and creamy yoghurt sauce.

Balti Prepared in an hot Indian-style wok with fresh green chillies, garlic, ginger and tomatoes cooked quickly in a manner reminiscent of a stir-fry.

Jalfrezi Literally meaning “hot-fry” but probably better translated as “stir-fry”, the term entered the English language at the time of the British Raj in India. Our chef uses the jalfrezi method to cook green peppers, carrots, tomatoes, mushrooms, green peas and plenty of green chillies as the basis for a curry with just a little sauce. The chillies make the jalfrezi taste very fresh.

Acharwala Like a balti dish in preparation, with the addition of a light pickle spice gives this dish a fresh and a slightly tangy flavour.

Sagwala Sagwala is a medium strength spinach curry cooked with lots of fresh spinach leaves, plus fresh green chillies, garlic, ginger and tomatoes in a medium balti sauce prepared in the chef’s own inimitable style.

Nepali A fiery dish Cooked in the traditional style. Prepared with garlic, tomato ,lemon and fresh naga chillies garnished with ginger.

Masala Nation’s favourite Indian main course mild and creamy with a hint of coconut and a ‘natural’ deep red colour.

Korma Mild creamy, but never bland, a traditional korma requires long slow cooking of marinated meat abraised on a very low heat until all the juices condense down into a thick sauce with ground almonds, coconut and thick cream.

Dhansak A famous Parsee dish, often known as “sweet and sour with lentils and pineapple”. A fabulous curry with mouth watering flavours and textures.

Pasanda Derived from a dish served at the court of the Mughal emperors, marinated tandoori lamb or chicken fillets are cooked to a mild sauce with cardamom pods, pureed tomatoes and cream. Garnished with almond flakes and pistachios.

Ocean Masala A medium & creamy house sauce cooked with green peppers to give a unique and nourishing flavour.

Chat MasalaA delicious combination of chick peas and roasted cashew nuts served in a medium spiced sauce.

Biryani Prepared by gently cooking saffron flavoured basmati rice with a mixture of mild aromatic spices. Served with a fresh omelette and a curry sauce of your choice.Please note: £1.50 extra for this dish

Karela Gosht or Murgh ......................................£8.50Bitter gourd, or popularly known as Karela in the sub-continent, this vegetable is one of nature’s bountiful gifts to mankind. It not only has fabulous digestional properties, it is a storehouse of traditional remedies. Our traditional recipe of Karela and succulent lamb or chicken is a testament to our chefs culinary ability.

Safayd Korma Gosht or Murgh ..............................£8.00A carefully balanced blend of white onions, milk and yogurt go to make this delightful dish with its traditionally delicate but satisfyingly tasty sauce
