Mumbai’s very own burger. Vada pav is a popular road side spicy vegetarian fast food dish native to
the Indian state of Maharashtra. It consists of a batter fried patty (batata vada) sandwiched between two slices of a slider (pav).
Batata vada refers to a vada (fritter) made out of batata, (potato).
Pav refers to unsweetened bread or bun. It is also known as an Indian burger.
This is a simple dish that can be prepared at home as an easy meal or a quick snack.
Vada Pav- 15mins10 Fritters ( serves 5 people )
Sliders ( Buns) 10 nos
For BatterGram Flour (Besan) 250gms
Salt to taste
Turmeric Powder 5gms
Red Chilli Powder 2gms
Water 100ml
Vadas (Potato Patty)Potatoes Boiled 500gms
Oil 500ml for frying
Mustard Seeds 5 gms
Polished Urad Dhal (lentils) 10gms
Curry Leaves 5-6 nos
Chopped Chillies 10gms
Ginger paste 25gms
Garlic paste 25gms
Turmeric Powder 10gms
Salt to taste
Fresh Coriander Leaves 50gms
Method for Patty:1. Peel potatoes, place in a pot of water and
bring to a boil. Once soft , drain cooked potatoes and mash them.
2. Heat oil in a pot, add mustard seeds and polished dhal. Once ingredients starts to splutter add curry leaves & chopped chillies.
3. Add ginger & garlic paste and sauté for a minute.
4. Add turmeric powder & salt followed by mashed potatoes & fresh chopped coriander leaves.
5. Mix the entire mixture properly & take it off the heat.
6. Allow the potato mixture (Patty) to cool down before making your Patty.
Once mixture has cooled grab a hand full and press in to a Patty then keep aside .
Batter:1. Whisk flour, turmeric powder, red chilli
powder , salt and water in a bowl to a smooth consistency. .
2. Dip the already mixed Patty into the batter coating it evenly, and deep fry in hot oil until golden brown. Place it on a paper towel to remove excess oil .
The finish:Cut the sliders into halves, place the batter fried patti in the sliders as a sandwich and
serve with garlic chutney and mint sauce.

As the dust from the global financial crisis begins to settle, we are seeing a different workplace emerge. Aside from
unemployment, I believe the use of independent contractors is one of the more visible differences in the post GFC work environment. It’s hard to say whether this is as a result of business owners being forced to create a more manoeuvrable workforce, or, more employees are striking out on their own and taking on the Kiwi entrepreneurial spirit. Either way, both laws surrounding independent contractor relationships, and the taxing of contractors, will be increasingly put to the test.
Contractors have been brought to the attention of The Inland Revenue Department, and therefore IRD have decided to include contractors as part of their current compliance focus. This means that contractors have been added to the IRD’s top ten list of areas to investigate in the small-to-medium enterprise category.
What are the IRD doing as part of this compliance focus?
The IRD are currently investigating those industries that are known for having a high number of contractors
• Tax records from businesses within those industries are then used to identify contractors who have had minimal or no tax deducted
• Tax returns submitted by identified contractors will be checked against the business’s records
• Should there be a difference between the business’s and contractor’s records, the IRD will issue either: a letter giving the contractor the ability to amend their tax return, or a letter notifying the contractor of an audit. (the former being more likely)
• If the IRD believe there is other undeclared income then they will access bank statements without your knowledge!
Have you got it right?
First, you must identify whether you are being treated as a contractor or an employee. From the perspective of the IRD this will be represented by the tax code that the business you work for has associated with you. If they use a WT tax code or do not deduct tax, then it is likely the business and IRD are treating you as a contractor.
If you are a contractor then you will need to
prepare a tax return, and include the contract income as well as other taxable income (if you are unsure what to include then talk to an accountant, preferably us).
One of the most common mistakes for contractors, is to either not include income in their tax return, or not prepare a tax return, as they assume that they are an employee, or that they have had the correct tax deducted.
What happens if you get it wrong?
If you have incorrectly filed a tax return i.e. did not include contracting income into your tax return then the IRD will charge interest and penalties. Penalties can be up to 150% of the tax shortfall depending on how intentional the “mistake” was and whether the error is disclosed
to the IRD before or after an audit letter is issued.
Therefore do not wait until the IRD issues a letter, if you believe you could have made an error then contact an accountant, once again preferably us!
Looking Forward
As a final note, the current requirement for businesses to deduct tax for contractors, is limited to a few industries only. The level of non-compliance that the IRD may or may not uncover, could start a process to change tax legislation. Thereby increasing the number of industries where businesses will have to deduct tax on behalf of contractors.

They say time flies when you are having fun. The last two months
have been both hectic and exciting in the mortgage world. There appears to be so much confidence that 2014 is going to be a good year. I’m thrilled to help clients who are taking the opportunity to set new personal and financial goals.
Rising property prices for some means the feeling of increased wealth, which can also present the perfect opportunity to review your mortgages and the security that you are providing the bank.
So often clients come in and ask me to assist them to review their portfolios and the structures they have in place. I find that they have often exposed themselves by having all eggs in one basket. That is that they only have one lending provider who takes security over their entire property portfolio. This is often completely over the top, unnecessary and an expensive exercise.
You have to pay both solicitor fees and Land Transfer registration fees to register a mortgage on a title, and then the same again to discharge it. Most lenders also charge you a “handling fee” to discharge the mortgage as well. They may give you a contribution towards professional fees to buy in your loan in the first place, but then they sting you on the way out!
With rising property values, now is the perfect time to have your property portfolio revalued with the view to
asking your bank to release any extra security not required.
If receiving rental income from a property portfolio in retirement is part of overall investment strategy then ensuring the property is debt free needs to be part of that strategy as well. Whilst moving the mortgage from one property to another won’t directly achieve that goal, it can still indirectly help you reach the end goal, one of which is probably peace of mind.
Building a good portfolio is only part of the equation. Unfortunately for most of us that means taking on debt. Slowly repaying the debt, and then eventually be free of it entirely, is the ultimate goal.
We need to structure our mortgages to ensure we maximise the opportunity to pay it back
as fast as possible but also have the ability to utilise good debt when opportunities present themselves.
The banks continually review the types of loans available in the market place. When did you last review your mortgages to ensure it is designed to meet your goals?
