    The Tale of the CheckbookDisclosure: Mayoral candidate

    and Gallaghers wife, Sherri,

    contributes the cooking column for

    this publication.

    Last week, the candidates for the Mayors

    seat and District Five and Six Council posts turned

    in their financial reports. Heres the breakdown,

    in descending order of funds raised:

    Barron Casteel Eighth Wonder of the World, Candidate for MayorBarron was collecting money for his run as far

    back as May of last year. One thing you can

    be sure of he knows how to raise cash, and

    hes damn serious about an office that pays

    $100 a month. If there is any doubt about the

    stroke that comes with the Mayorship, let it be

    dispelled at this time.

    Casteel collected over 90% of his big

    money in the nine months before he drew an

    opponent. Smart on his part, because it dried

    up the donation pool before anyone else

    tapped into it, thus discouraging competition

    within his circle of influence, and got

    supporters invested in the campaign. After all,

    when people have money on the line, theyre

    far more apt to round up votes from among

    their family and friends. Theres no question as

    to why a candidate would use this tactic.

    Still, there is a question. Why would

    anyone donate to an uncontested candidate?

    No matter how much you love they guy,

    without an opponent its a given that they will

    win. But hey, Ive thrown a lot of money away

    on less logical things. I once purchased a

    $25,000 actually, I dont want to talk about

    that. At least these folks are buying themselves

    some future political influence.

    Well, some of them are. There are anti-

    river tourism folks on Casteels contributors

    list, right alongside tourism supporters. River

    issues are bound to come up again during the

    next Mayoral term, and both sides seem to

    be betting that their clams will buy them some

    favor with Barron. As you know,

    those two sides share no common

    ground and will clearly fight to

    the last man. Should Barron

    win the race, one of them is

    very likely going to wind up

    feeling that they were had.

    more donors at that level. He also reported a

    total of $24,220 in itemized donations, for

    a total of $30,660. Our math shows all the

    income numbers balance properly. Our math

    also shows that hes highly connected and lots

    of very well-off people think they own a piece

    of his action.

    As for expenditures, nothing out of the

    ordinary. Of course, the only items were

    concerned with are the ones dealing with

    media outlets that are obligated to cover the

    race and its winner. To that end, his report

    included $960 to KGNB and $1,384.75 to

    the Houston-Owned Herald Zeitung. Hmm. It

    seems like the more-credible KGNB always

    gets the short stick on this stuff, but thats

    neither here nor there. Conspicuous by its

    absence on that list is the TX Citizen, but given

    that Barron has declined every request weve

    made to his office for comments or interviews,

    the TX Citizen reader vote is clearly of no

    consequence to the Casteel campaign. Fair

    enough. I mean, nobody knows if yall actually

    vote. Every power player in town is looking

    forward to finding out.

    Wayne Peters Candidate in District Five (Unopposed)$5,715 total, $1,060 in contributions under

    $50. All of Peters big money was raised in

    March, from:

    The Mayors race is interesting to us for a

    different reason than you might think. When

    Gale Pospisil ran against Jason Dias back in

    2011, she was well-known, having previously

    served two terms on City Council. Dias was

    not only unknown, he limited his campaigning

    to debates with Pospisil and a lot of hand-

    shaking. No signs. No ads. And he took down

    nearly 30 percent of the vote. This time out

    were going to see just how much influence

    money has in a small town election. Whatever

    happens, its a story.

    Election day is May 10.

    The Sally M. Kingsbury Sarcoma Research Foundation (SMKSR), is holding their annual Knockout Rose Sale on April 19 and 20. Since its inception in 2007 SMKSR has raised over $152,000 including a recent donation of $25,000 to help fund sarcoma research at MD Anderson Cancer Center in Houston.

    Every year Knockout Roses are sold to help raise funds for this important cause. This year the annual sale will be held at Gruene Market Days on the weekend of April 19 and 20 and at New Braunfels Farm-to-Market on Saturday, April 19. Roses may also be pre-ordered by visiting the SMKSR website at www.knockoutsarcoma.org.

    Sally Kingsbury was a beloved and respected teacher at New Braunfels High School who died in 2005 from soft tissue sarcoma. It was her wish to find a cure for sarcoma, one of the least known and least funded cancers. SMKSR was founded with her wishes in mind and has pursued that goal through fundraisers such as the annual Knockout Roses Sale, the Tour de Gruene and the SMKSR Supporter Party/ Silent Auction.

    Dear Uncle Esel:There is a guy at work who is always

    criticizing others and running them down. When we call him on it, he says hes just being honest. While he makes everyone feel bad or angry, none of us know what to say since he is simply expressing his opinion. What should we do?

    Tired of Being Ridiculed Dear Tired:We have all run across this particular

    types of, um, p###k. They will level criticisms and then take the moral high ground by claiming that they are only being truthful, thus virtuous. The truth is theyre completely immoral. Heres why:

    First, criticisms from these types of people are usually unsolicited no one asked their damn opinion.

    Second, their views are nothing more than opinions and, thus, have no validity outside of their own heads.

    Third, they make others feel bad by taking advantage of the fact that most people are nice and want to avoid conflict. By doing so, they feel powerful by trying to control your emotions.

    Fourth, they hide behind the adage that honesty is a virtue. However, honesty is only virtuous when it is applied to our own selves. We are supposed to be honest about who we are, our strengths, our flaws, etc.

    Fifth, by hurting others in proclaiming a moral honesty, they actually violate the higher moral of the Golden Rule, which states we should treat others as we would like to be treated (sado-masochists need not apply). There is a good reason that every major religion in the world follows this principle.

    Another type of person in the category is what I call the Buddha Jerk. This is the person who criticizes someone then, when asked to stop, says something pithy, like you shouldnt get your self-esteem from others. Well, thank you Master P###k. Now, why dont you find for me the divine text that says, Say bad things about another person. It is for their own good.

    There are two ways to deal with these types of people: The first is to simply ignore them, while the other is to throw their criticisms back at them. Since so much of their identities are wrapped up in believing in their own perfections, both tactics have a marked affect on their psyches.

    When your coworker begins his round of criticism, have everyone just pretend like hes not there. This is this higher ground. If, however, you wish to take the lower ground,

    reply to his attacks with, Yes, Joe, but then everyone hates you.

    You might well ask, But Uncle Esel, you have certainly criticized others in your column. Arent you acting immorally?

    The answer to that is a resounding yes. So dont push it.

    you believe in multiple universes. Does this mean you believe in evolution, too? Dont you think the idea of evolution is ridiculous? I cant see how any person of faith could possibly believe in the myth of evolution.

    Not in the Bible Dear Not:For the love of God look at the bones!At every stage of scientific progress, there

    have been people like you, screaming about devils and damnation. The fact that we are here, in the 21st Century, still arguing about this, is absurd.

    I know, I know. You believe in the Bible literally and the Bible doesnt mention evolution. You want to go that route, fine. But do you eat kosher? I bet you dont. Thats in the Bible, too. If you are going to follow the Good Book literally, then follow all of it, not just the parts you find convenient.

    Also, did it occur to you that maybe, just maybe, evolution was Gods creation?

    This issue of creation vs. evolution is still being fought out in the Texas Board of Education. The reason for this is to ensure that students dont get properly educated.

    You see, people who are educated can become intelligent, and intelligent people ask uncomfortable questions that dumb officials have trouble answering. When dumb people cant answer intelligent questions, intelligent voters start to demand intelligent leaders. When that happens, dumb people with political aspirations lose careers.

    Faith is faith, science is science. They do different things and play different and significant roles in our lives. Use them wisely.

    Dear Mexican: I like reading your articlesthey are funny, sad, insightful, crude, serious and even a little provocative and antagonizing at times. One thing I find a little antagonizing is the use of the term Latino as a synonym only for Hispanic; certainly yours is not the only forum in which these two terms are used interchangeably. Ive noticed that you tend to favor Hispanic quite a bit more than Latino; thank you, for that. While I may sound racist by making that remark, I am actually trying to raise cultural awareness and combat racism.

    I see it everywhere and its use is absurd and has become ubiquitous. The Latins as a people, a culture, a language, a tribe, came from ancient Italy. On employment applications or government forms, the race/ethnicity section doesnt include anyone other than Hispanics as synonymous with Latin(o). Where is the room for us Latin-Europeans? Us Italians, or French or Portuguese? As Italian-Americans, we rarely even get associated with a culture that came from our own land! See how racism can take many forms? Some that most arent even aware of! Thanks, and hope to hear back from you.

    Dear Gabacho: While I appreciate you regularly reading my columna, methinks youre not poniendo much attention. If I ever use Hispanic in this column, its usually in disparaging terms, as thats a creation of the Ford administration. I barely even use Latino, since this is a column about Mexicans and only Mexicans (with the occasional jabs at coos, carajos, conchas, and catrachas, of course). All of this said, I agree with the spirit of your letter, and urge you to direct your ire not toward Mexicans but rather intellectuals.

    Its 19th-century French intellectuals, after all, who promoted the idea of a Latin America in opposition to Anglo-Saxon America in Frances eternal struggle against the English. Its the love of anything French that drove intellectuals in Spanish-speaking countries in that era to warm up to that idea of pan-Latino identity in their eternal struggle against gabachos. And its gabacho intellectuals up here who bought into that idea in their eternal

    quest to categorize Spanish-speaking folks as subhuman, carrying on a clash of civilizations that goes back to the Spanish Armada trying to kill Good Queen Bess.

    Dont believe the Latino hype: Mexicans will only consider themselves Latinos for welfare, Hollywood roles, and affirmative action. The rest of the time, were puro mexicanos, cabrones.

    It has come to my attention that when I watch YouTube videos of 1980s music, whenever I sample a lot of the Italo songs, that a lot of Mexicans comment on the videos. Basically, anything from Patrick Cowley, Rofo or Mike Mareen would have Mexicans commenting in, mostly to give their memories of that era. My question is how did Italo Dance/Hi-NRG became so popular with Mexicans, at least the Mexicans from Mexico? And dont forget in more recent years El Pollito Pio and Macarena.

    Dear Gabacho: Dont forget Vamos a La Playa (Lets Go to the Beach) by Righeira, a danceable tale of nuclear holocaust along the coast covered by Los Joo and immortalized in Lola la Trailera, the Mexican Smoky and the Bandit except with more murder and mujeres. And you can even toss in Eva Maria, a 1960s ditty by Spanish pop group Formula V. Point is, Mexicans love synth-heavy pop dreckembarrassingly so.

    Sometimes, great music comes out of this amorwitness grupero groups like Los Barn de Apodaca or Bronco, pop geniuses such as Los Bukis, or 96 Tears by ? and the Mysterians, the greatest song in human history. But most of the times, its just terriblelook at Timbiriche or whatever youth group Televisa is placing on a telenovela. Italo dance and 1970s- and 1980s-era Eurodance falls somewhere in between great and grating, which means Mexicans will dance to it. Hell, Mexicans will dance to anythingwhat else explains the popularity of Man?

    My journey to Southeast Alaska has begun and I am sending you my first recipe from the M/V Liseron. There is a lot for me to learn and I am really looking forward to sharing lots of new and interesting recipes for you all to try at home.

    Easter is just around the corner and there will be an abundance of brightly colored hard boiled eggs around the house just waiting to be deviled. The term deviled refers to the spices in the egg mixture. Growing up, we would refer to these eggs as dressed eggs if attending a church function. Whatever you choose to call them, these pickled eggs are a beautiful shade of pink that will certainly add extra pop to your familys Easter dinner.

    Easter Beet-Pickled Deviled Eggs 6eggs

    3canspickledbeets,reservejuice

    1/3cupapplecidervinegar

    1/3cupmaplesyrup

    1tblspeppercorns

    1tspsalt

    Filling 1tblsDijonmustard

    1/4cupmayonnaise(IpreferDukesMayonnaise)

    1/2tspcurrypowder(CansubstitutewithOldBaySeasoning)

    SaltandpeppertotastePlace eggs in a medium sauce pan. Fill pan with cool tap water, cover by an inch or two.

    Place the pan on high heat and bring the water to a boil. Once boiling, turn off the heat and cover the pan with a lid. Let the eggs sit in hot water for 10 minutes. Drain the eggs and place them in a bowl of ice water to cool. Peel and set eggs aside.

    To prepare the brine, pour beet juice into a mason jar or a bowl. Add vinegar, maple syrup, peppercorns, and salt. Lower the eggs into the brine, cover and let sit for 12 hours, or up to two days. The longer the eggs sit in the brine the pinker they will become. When brining time is finished, cut each egg in half and scoop out yolks. Place yolks in a medium sized bowl along with Dijon mustard, mayonnaise, curry, vinegar and olive oil. Mix until smooth. Fold in red onions. Using a pastry bag or a plastic bag with the corner cut off; pipe the yolk mixture into the pink eggs. Garnish with rosemary, diced red onion, and season with salt and pepper.
