Vietnamese CuisineVietnamese cuisine is a style of cooking derived from Vietnam. Fish sauce and paste, soy paste, rice, fresh herbs, fruits and vegetables are commonly used. Vietnamese recipes utilize a diverse range of herbs, including lemongrass, mint, Vietnamese mint, long coriander and Thai basil leaves. Traditional Vietnamese cooking is greatly admired for freshness of the ingredients and for the healthy eating style.

• In Northern Vietnam, colder climate limits the production and availability of spices. As a result, the foods here are often less spicy than those in other regions. Black pepper is used in place of chilies as the most popular ingredient to produce spicy flavors. In general, Northern Vietnamese cuisine is not bold in any particular flavor sweet, salty, spicy, bitter, or sour. Most Northern Vietnamese foods feature light and balanced flavors that result from subtle combinations of many different flavoring ingredients.

• The abundance of spices produced by Central Vietnam's mountainous terrain makes this region's cuisine notable for its spicy food, which sets it apart from the two other regions of Vietnam where foods are mostly non-spicy. Once the capital of the last dynasty of Vietnam, Hue's culinary tradition features highly decorative and colorful food, reflecting the influence of ancient Vietnamese royal cuisine. The region's cuisine is also notable for its sophisticated meals constituted by many complex dishes served in small portions. Chili peppers and shrimp sauces are among the frequently used ingredients.

• The warm weather and fertile soil of Southern Vietnam create an ideal condition for growing a wide variety of fruits, vegetables, and livestock. As a result, foods in Southern Vietnam are often vibrant and flavorful with liberal uses of garlic, shallots, and fresh herbs. Sugar is added to food more than in the other regions.

CultureNature has blessed Vietnam with a bountiful harvest of soaring mountains, a killer coastline and radiant rice fields, Vietnam is a cracker. Inland, peasant women in conical hats still tend to their fields, children ride buffalos along country paths and minority people scratch out a living from impossible gradients.

Cooking methods• Vietnamese food is

varied, distinctive and, because it is comparatively low fat and high in carbohydrate, generally healthy. Traditionally, cooking was done over a fire, so preparation is by boiling, steaming, barbequing and frying, not roasting or baking.

Food etiquette• A meal is a complete

entity with many dishes – although these might arrive in sequence for a large meal, there is no concept of ‘courses’ apart from ‘soup’ which is usually a thin, vegetable based concoction that follows the meal.

Tourist• Vietnam is located in

both a tropical and a temperate zone. It is characterized by strong monsoon influences, but has a considerable amount of sun, a high rate of rainfall, and high humidity. Regions located near the tropics and in the mountainous regions are endowed with a temperate climate.

Costumes

Men• Traditional costumes of

the Vietnamese people tend to be very simple and modest. Men wear brown shirts and white trousers. Their headgear is simply a piece of cloth wrapped around the head and their footwear consists of a pair of plain sandals.

Women• Young women wear light

brown-colored short shirts with long black skirts. Their headgear consists of a black turban with a peak at the front. To make their waist look smaller, they tightly fasten a long piece of pink or violet cloth. On formal occasions, they wear a special three layered dress called an "ao dai", a long gown with slits on either side.

Chrysanthemum• Chrysanthemums are

classified into two classes, single or double flowers. All the varieties have very refined and soft colors; there are often yellow and white flowers. Chrysanthemums are planted all year round.

Peach Flower

The peach flower plant grows only in North Vietnam. It is the special flower of the Vietnamese New Year because of its red color, which is believed to bring many favorable opportunities throughout the year.

LotusLotus is a soft plant living mainly in water. This pink or white flower belongs to a species of plant called hollyhock. Another species of lotus with a very small trunk, leaves, and flowers is named little lotus. It can be planted in a vase of water or in an ornamental pond.
