W ith approximately 4,000 members/families, who represent some 15,000 hectares of olive gro-

ve, Almazaras de la Subbética has overcome the obstacles posed by the rugged terrain of its

plantations and increased ploughing and harvesting costs. With the modernisation of farming

techniques (vegetative cover, organic olive production, integrated production, etc.), the use of small, modern

machinery and a focus on top quality, we have managed to adapt tradition and technology to the high qua-

lity standards demanded by the most discerning of consumers. We currently have two production and sto-

rage facilities: the head offices and main centre in Carcabuey and a second facility in Priego de Córdoba.

The first-level agricultural cooperative Almazaras de la Subbética was formed in July 2007 following the merger

of two prestigious and experienced cooperatives: S.C.A. Virgen del Castillo, founded in 1954 and with over

50 years’ experience in olive cultivation and the production of an olive oil renowned for its quality, and S.C.A.

Olivarera Nuestro Padre Jesús Nazareno, a cooperative founded in the early 1960s that experienced constant

growth during its lifetime, recognised nationally and internationally for the quality of its olive oil.

Production and MarketingThe main business of Almazaras de la Subbética is the production of high quality oil but this is not its only activity. The preparation and curing of table oli-ves completes the production from the olive groves. The farming activity of the orchards of the Subbética province is also harnessed with the cultivation of quince. Almazaras de la Subbética processes and markets fresh quince for processing into its deriva-tive products. Lastly, as a complement to farming, the traditional activity of goat raising in the subbe-tic mountains rounds off the assistance afforded by Almazaras de la Subbética to its members in marketing goat meat and milk for consumption and to be turned into quality food products.

Installations for Manufacture and Storage

At its main production site in the municipality of Carcabuey, Almazaras de la Subbética has an area of 350,000 square metres. The milling facilities were pioneering back in their day, in line with the innovative spirit that has always prevailed in the cooperative.

The olive reception area occupies an area of 10,000 square metres and has seven receiving hoppers fitted with seven independent cleaning lines. This allows for the total separation of the olives according to their qualities and destination (tree, Designation of Origin, organic tree, conventional tree, second tree and floor).

The design of these lines and of the entire plant takes advantage of the natural slope, with the aim of optimi-sing the operation of machinery and minimising energy costs. A battery of 22 stainless steel hoppers allows us to store 1.2 million kg of olives clearly separated and classified.

A milling capacity of 1,000,000 kg/day, with ten production lines, facilitates the strict separation that farmers begin right on the field. Similarly, a warehouse with a capacity for 8,500,000 kg ensures that we achieve our ul-timate goal: QUALITY.

The warehouse can house a total of 1,780,000 kg of oil in 18 tanks of different capacities with similar temperature, storage and maturing conditions as the main mill.

Of the olive varieties milled at the cooperative, 60% of the total oil production comes from olives of the picudo variety, 25% of the hojiblanca variety and the rest are of the picual variety.

With regard to our high-end organic olive oil produc-tion, it has grown notably in recent years and, based on its awards and recognitions, we can con-sider it one of the world’s top five organic oils and the one that has won the most awards in this category in Spain. And The World’s Best Olive Oil 2012.

The facilities of Almazaras de la Subbética currently grind between 50 and 70 million kilos of olives, depending on the weather conditions and the year, producing between 11 and 15 million litres of virgin oil, 80% of which is clas-sified as extra virgin olive oil. This gives us an idea of the intensity and rigour employed at every stage of the process: cultivation, harvesting, transportation, reception, cleaning, milling and storage.

The other oil reception, production and storage site is located in Priego de Córdoba. The new facilities are just one year old and have been fully refurbished and equipped with state-of-the-art machinery and olive oil manufacturing processes.

With six reception lines, it can grind up to 15,000,000 kilos of olives per year and mill up to 150,000 kg of olives every day. It adopts the same philosophy as the main mill

Certifications Almazaras de la Subbética boasts a number of certifica-tions besides the relevant health and hygiene records for the production and packaging of olive oil, namely:

1. IFS & BRC certification.

2. CAAE (Andalusian Committee for Organic Farming) compliance certificate for the production and labelling of organic products.

3. Certified Quality of the Junta de Andalucía.

4. Company certified as belonging to the Designation of Origin Priego de Córdoba.

Awards and AcknowledementsAlmazaras de la Subbética and the

cooperatives that merged to form it have received numerous prizes and acknowled-gements throughout their history, not only for the quality of their oils but also be-cause of their track record in continuous improvement, innovation and respect for the environment.
