Classic Guacamole

6 avocados2 Roma tomatoes, rinsed, seeded and finely diced1/2 cup red onion, finely chopped1/2 lemon squeezedgarlic salt (to taste)kosher salt & pepper (to taste)1/2 cup cilantro, chopped

Scoop the avocados out of their skin and into a largebowl. With a potato masher (or large fork), gently smash theavocados. Add the diced tomatoes, onion and cilantro and stir to combine. Add garlic salt, kosher salt and pepper to taste.Squeeze the lemon juice over the guacamole and stir. Serve immediately and enjoy!

Horsey Shrimp Crostini16 medium shrimp, cleaned and deveined1 small loaf of artisan bread1/2 cup mayonnaise1/4 cup horseradish1 tablespoon mustard1 teaspoon Tony Chachere’s seasoning (or any cajun seasoning),plus more to tastesalt and pepper to tastechives, choppedextra virgin olive oil

Cut the bread into 1/2 inch slices and place on a cookie sheet.Broil in the oven on high for 1-3 minutes until slightly goldenbrown. Meanwhile, in a non-stick skillet add 1 tablespoon ofextra virgin olive oil. Season the shrimp with salt and pepper,and sear the shrimp on both sides until cooked through. Set shrimp aside. In a small bowl, mix the mayonnaise,horseradish and mustard. Add cajun seasoning and salt andpepper to taste. Spread the sauce on the crostini slices, addcooked shrimp, then top with chopped chives as garnish.

Arugula Buffalo Sliders1 pound ground buffalo meat2 Roma tomatoes, rinsed, seeded and thinly slicedarugulaDijon mustardParmesan cheese, sliced6 slider bunskosher salt & pepper (to taste)

Season the meat with salt and pepper, then form small slider patties approximately 3-4 inches in diameter. Grill for about 10-12 minutes on medium heat. Add to the bun, with a dab of dijon mustard, and top with cheese, a slice of tomato and arugula.
