It’s amazing how inventive thebad guys can be when it comes toconning you out of either yourcash or personal details. Scamstend to target the weakest of usand recently we’ve had customerswho have been preyed on by veryfriendly and approachableconmen, who are exploiting theirlack of technical know-how andworst fears about their ownpersonal computer. It all starts withyour phone ringing and when youpick it up a friendly, and very per-suasive, voice advises you thatthey have detected issues withyour computer over the internet.Now, at this stage they don’t evenknow if you have a computer,although obviously most of us do,and they probably get rebuffedmore often than not. However, it’sfrightening how many people thenlog on to their computer and, byvisiting a website, give thisunknown person full access totheir system.

So now they have access toeverything on your computer, butthat isn’t enough, so next they willexplain that to fix the problem youneed to download some software,but there is a cost, so you givethem your name, address andcredit card details. Once you’vedownloaded the software thingsgenerally start to go wrong, atwhich point the voice on the otherend of the phone leaves you toyour own devices, never to beheard from again.

Now a lot of you are probablythinking that you would never fallfor this, as within this context itsounds very obvious, howeverthese conmen can be incrediblypersuasive and a reassuring voicecan get away with quite a lot underthe right circumstances. All we canreally stress is that if somebodycalls you, or you get an email youare unsure of, whatever you dodon’t go to any websites or giveout any personal details withoutgetting further advice fromsomeone that you trust. BiodiversityWhat’s it all about?

Biodiversity is a word that was coined in 1985 to describethe variety of all life on earth and the places that it lives.Biodiversity is everything from butterflies to bluebells, whelksto whales, ponds to mountain plateaux. It is the backdrop toour daily lives and it is everywhere, even in the busiest ofcities; though it is seldom noticed.

For most people the place where we first encounterbiodiversity is on our doorsteps. During our childhoodexplorations we will pick Daisies and some of us will makeDaisy chains or we will guess the time with a Dandelion clockor watch helicopter seeds fall from a Sycamore tree anddefinitely find out that Nettles and Wasps are best avoided. Aside from giving us memories of childhood exploration and

discovery, on a largerscale our economy is verymuch built on biodiversity;be it clean water fordrinking or the whiskyindustry, the grass thatthe cattle and sheep eator the landscapes thatthe tourists marvel at. It isalso a major tourismincome for our area, thesuccess of Springwatchand Autumnwatch haveshowcased the area andbrought more touristshere. Biodiversity and ourhealth and wealth areinseparable.

In Highland and Moray we are very fortunate to have somuch of interest on our doorstep. I would like to mention afew of the special species that we have up here.

Bott lenose DolphinsA population of around 130 live in the Moray Firth and rangeall the way down to the Firth of Forth. They are a major drawfor tourists and an unforgettable sight if you get a good lookat them. They are very big, which is something you might notexpect. They can be upbto 4m or 12ft long, the reason theyare so big is to keep warm in our cold waters. They are themost northerly resident population of Bottlenose Dolphins inthe world. www.scottishdolphins.info

SealsThese animals can be taken for granted as they are in mostof the harbours in our area. There are two species, the Greyand Common. The Common stays in our waters all year

round and can breed on tidal sandbanks as the pups canswim almost immediately after birth. The Grey Seal pups willbe 3 weeks old before they can swim so their breeding isrestricted to remote islands or isolated coves where the pupscan grow in safety. 40% of the world’s Grey Seal populationis found in the UK and most of that is in Scotland.www.smru.st-andrews.ac.uk/documents/IdentifyingSeals.pdf

Red SquirrelThis species is a huge favourite for its tufty ears and acrobaticantics. If you want to see it then head to your nearest coniferwoodland and see if you can spot any nibbled cones. If youare lucky they may come to the peanut feeder in yourgarden. It is amazing to think that this species may havebeen extinct in the mid-1800’s and, after some re-introduc-tions, its population sky-rocketed so much that in the late1800s and early 1900s there were squirrel hunting clubs allover the Highlands to control their numbers! The North ofScotland is the last stronghold of this species where itdoes not face competition from that American import theGrey Squirrel.www.redsquirrelsofthehighlands.co.uk

Helping Biodiversi tyPublic awareness of the decline of biodiversity worldwide isincreasing; as is the feeling that this is not inevitable andindividuals can have a positive impact on global biodiversityby taking local action. Local biodiversity action such as greenvolunteering, wildlife surveying or doing some wildlife friendlygardening can have a big positive impact and if lots of peopledo this then it will have a huge positive impact. Many years ago I worked withsomeone whose attitude to lifewas, in some respects, enviable.She would breeze into work,laugh her way through theproblems of the day and excusemistakes (many of them her own)with a rueful chuckle. With acheerful “that’s me off then”, shewould disappear to attend to herown family needs. One of herfavourite lines was a phrase shespotted on a bookmark - don’tworry and don’t hurry and don’tforget to smell the flowers.

Those who are able to go throughlife with such a cheerful andcarefree spirit are blessed -although I confess it cansometimes be a bit wearing onothers around them - particularlyif they sometimes have the task ofclearing up after the happy-go-lucky individual.

Neither are we all naturallyendowed with the same ability tosimply carry on. Some of us by

nature are of a gloomier cast ofmind; we struggle to lift ourselvesafter a setback and may often bein sore need of a comforting armrather than a cheery word.

Frequently it is those who them-selves have experienced traumaand disappointment who are ableto sympathize and help others insimilar circumstances. That is theway the apostle Paul viewed bothhis experiences and God’s expe-rience - as an aid to understand-ing and helping others.

He said “Praise be to the God andFather of our Lord Jesus Christ,the Father of compassion and theGod of all comfort, who comfortsus in all our troubles, so that wecan comfort those in any troublewith the comfort we ourselveshave received from God.”(2 Corinthians 1:3-4)

It is surely of great help to us notonly to know that God under-stands our situation - but also that

he has gone to the trouble ofshowing us he understands us bysending his Son to live like us.Having been shown and havingreceived that comfort from Godwe are then encouraged to usethat experience to benefit others.

So then to comfort others is notjust about expressing our sympa-thies - but to show by our actionsthat we genuinely care enoughabout their situation to dosomething for them.

It is by the action of God that wesee his words are real; likewise itwill be by active involvement inthe needs of others that they willsee our expressions of cheerful-ness are not just lines borrowedfrom a book but the overflow of aloving heart.

Service gave a detailed presentation on

the Draft integrated Risk management

Plan, followed by members questions.

Q. The home Safety visits offered to the

elderly are a very good service. how will

the budget cuts affect this service?

a. We have managed to achieve the 4%

reduction this year without any reduction

in service, although it will get tougher in

future years.

Q. how do we pass information on re-

questing home Safety visits?

a. These can be arranged through the

local fire Station or submitted on-line via

the grampian fire and Rescue Service

Website.

Q. i have concerns regarding the possi-

bility of not attending an automatic fire

alarm event during the day in industrial

premises that are thought to be occupied.

if one of those automatic fire alarms goes

off and you think is occupied but in fact is

not it would worry me if there was no at-

tendance and therefore think the

minimum requirement should be a

response vehicle to check.

a. This is a concern for the fire service

also and will be addressed.

Q. has there ever been any discussion

regarding charging companies for false

alarm call-outs?

a. There has never been a charge for any

emergency call-outs and i would not like

Update

PC harris advised that the Standing

Complaint regarding skateboarding on

the Plainstones is ongoing. he also said

that the Police are happy to work

alongside the elgin north area forum

regarding the litter issue at the academy

and reported that ongoing investigations

are taking place with regard to anti-social

behaviour that has been taking place at

the Doocot Park over the past month. PC

harris also advised that high visibility

policing is taking place in the Town

Centre to target shoplifting, which has

been a problem.

Committee Reports

• Planning - Bryan Watson advised that

the Sainsbury’s proposal is ongoing and

asked members to look at the new

defined proposals which are available on

the moray Council website and let him

know of any concerns. Cllr Divers

advised that there had been some objec-

tions from immediate neighbours that can

be found on the web page.

• Concerns were raised regarding parking

on moss Street should the new islamic

Centre open. The Chairman agreed to

liaise with Bryan Watson regarding the

possibility of putting in an objection on the

grounds of inadequate parking provision.

• Recreation & Leisure - anne glover

reported that Denise gormley has drafted

letters to Primary Schools regarding

The recent winter weatherreminded us all of Moray’sstrong community spirit.Folk were helping eachother throughout all ourlocal communities,clearing snow and

checking on the welfare of neighbours. Weowe a big thanks to all the council workersand others who went that extra mile to keepsociety ticking over. Every cloud has a silverlining - even snow clouds - and many peopleI have spoken to have said that the winterweather has meant that they have spent moretime at home with their families. Perhaps itmakes us all realise that our usual hectic livesdon’t leave enough time with our families andas every family knows, before we know it, ouryoung kids are all grown up and we wonderwhere the time went.

Spring is slowly creepingup on us, which I am surewe are all fairly gladabout around Morayafter some horrendouswinter weather over agood number of weeks.

With it of course comes lighter nights and,hopefully, some milder temperatures,which means I will have absolutely no excuse not to be exercising after the winter nights. My MSP colleague inMoray will no doubt be ensuring that isthe case by handing me large quantities ofleaflets to deliver for the May election.Politics aside, an election certainly helpsshift some excess pounds that might havebeen gained!

INTRODUCTION:Located just a few miles east of Elgin, thewoodland and countryside around thevillage of Lhanbryde provide a great oppor-tunity for outdoor access.Starting at the map board in centre of theold village (on St. Andrews Road).

THE ROUTE & FEATURES OF INTEREST:Loch na Bo is a picturesque man madeloch to the south of Lhanbryde. It is sur-rounded by woodland and is full of wildlife,including red squirrels, Daubenton bats,mink and swans.To reach Loch na Bo follow the GarmouthRoad and turn right at the playing field pastthe Community Centre. Take the secondleft onto Elsher Road and at the far end,

walk down the slope onto the path thatruns along the back of the cemetery. Turnright and follow the track to the A96.Cross this road with care. Follow theprivate road directly opposite. This leadsyou to a waymarked path around the Loch.TERRAIN: Pavements, farm tracks andinformal woodland paths (gravel andearth). Some paths can be muddy inplaces, so stout footwear is recommended.SIGNAGE: Partly SignedWALK GRADE: ModerateAn undulating path of between one andfour miles, which may have a few shortsteep sections and/or varying surfaces.MILEAGE: 4 MilesESTIMATED WALKING TIME: 2 Hours

arranging a meeting with Lorna

Davidson to discuss the Relief Roads

proposed routes consultation and would

inform members of the date, time and

members feed comments back to the

R&T Committee after viewing these

due to take place on 27/28th Jan. 2011

Chocolate Mousse with Drambuie Cream

Over the last few months, Peter has given you aprofessional flavour of what Knockomie does. Over thecoming months I would like to share with you some ofmy recipes, developed from the 24 years we haveowned Knockomie, but also dishes that are not necessarily designed for the a restaurant environment.I use the same principles at home as the hotel does inthat I always use local meat, fish and vegetables where possible.

February is the month of romance and chocolate isthe food of love. Chocolate will definitely be a featureof Knockomie's Valentines Menu and with complimen-tary fizz over Valentine's Weekend, romance will be offto a fine start. We look forward to welcoming you.

IngredientsServes 2 (can easily be doubled or tripled)

110g 70% cocoa Chocolate2 Large eggs, separated100ml Double Cream lightly whipped25ml Drambuie

Method

Break the chocolate into small pieces and place ina heatproof bowl over a pan of barely simmering waterto melt. When it’s smooth and runny, take it off the heatand beat in the egg yolks whilst the mixture is still hot.Leave the chocolate and egg mixture to cool for 10-15minutes.

While you are waiting for the chocolate mixture tocool, whisk the egg whites until they are just peaking -too stiffly and they wont fold in easily. Fold the eggwhites in to the chocolate mixture and pour in toramekins, champagne flutes, or espresso cups and chillin the fridge.

Just before you are ready to serve lightly whip thecream and add the Drambuie to it. Top the chocolatemousses with the cream and place the shortbreadhearts at the side and serve.

Shortbread Hearts

225g Unsalted Butter at room temperature325g Plain Flour sifted70g Caster SugarPinch of saltHeart shaped cutters

Pre-heat the oven to 150˚c / 300˚f or gas mark 2

Dice the butter and place in a mixing bowl, add allthe other ingredients, rub together gently to form a ball.The easier way is to place all the ingredients in to afood processor and blitz until it forms a ball. Cover withcling film and place in the fridge to chill for 30 minutesbefore rolling out.

Lightly flour the work surface and remove the short-bread mix from the fridge. Roll out the shortbreadmixture until it is about ½ cm thick, then cut into heartsand place on a greased oven tray, and return to thefridge for 30 minutes.

Lightly dust with some extra caster sugar beforeplacing in the oven for 20 – 30minutess until goldenbrown. Remove from the oven and leave to cool completely before removing from the tray.

Store in an airtight container.
