SLOW COOKER CHICKEN TIKKA MASALA Ingredients: 2 lbs chicken breast, cut into 1.5 inch chunks 1 (29 oz.) crushed tomatoes in tomato sauce 1 onion, finely chopped 4 cloves minced garlic 2 Tbsp. freshly grated ginger 2 Tbsp. olive oil 2 bay leaves 1 cup heavy cream or coconut milk 2 Tbsp. cornstarch Lemon juice (1/2 a lemon) Spices: 1 Tbsp. garam masala 2 tsp. ground cumin 2 tsp ground coriander 2 tsp paprika 1 tsp turmeric ½ tsp cinnamon ½ tsp cayenne pepper (add to taste) ½ tsp black pepper Direction: 1. Rub olive oil inside your slow cooker to prevent food from sticking. 2. Combine all ingredients (except for the heavy cream, cornstarch, bay leaves and lemon juice) in a large mixing bowl. Stir until all ingredients are mixed and chicken is well coated. 3. Pour into the slow cooker and lay the 2 bay leaves on top. 4. Cover with lid and cook for 8 hours on low (4 hours on high). 5. In a small mixing bowl, combine heavy cream and cornstarch. Gently stir into the slow cooker and cook an additional 20 minutes until thickened. 6. Add lemon juice and gently stir. 7.
