The audiovisual enjoyment of water is one of
the most delicate and subtle hints of the 333
years-long Moorish colonisation of Ibiza. Water
was, and still is, the elixir of life. Fountains and
wells, the permanence and depth of nature, are
highly valued elements of the island’s hydraulic
heritage and collective memory, the stage of
ancestral rituals to worship the elixir of life. Up to
57 fountains splash the municipality of Sant Joan
and the Rubio, Benirràs, Xarraca and Balansant
torrents feed the vegetable gardens, probably the
richest on the island.
Ibiza has always been the most genuine
Mediterranean island, the object of desire of
different peoples who successively tried to access
it by land and sea, more or less successfully.
The city built a powerful wall to defend itself
from unwelcome attacks. The country dwellers,
vulnerable in their dispersion, took shelter in the
watchtowers or defence towers. This invention,
rotund and robust, is found across the coastline
from north to south and from east to west,
sometimes inland. Two of them stand out due
to their location: Portinatx tower and des Molar
tower in San Miguel.

LOS BOSQUESDEL DIOS BESTHE FORESTS OF THE GOD BES
For some 7000 years, the pine has been the most
important reference in the forests of Ibiza and so it was
island soil. They soon turned the pine into a worthy
trade alongside that of the salt business, especially
under Moorish colonization. There was much export of
timber, fuel and charcoal and it was said that the pine
were excellent for shipbuilding. Later, as per the law of
opposites, the over-exploitation of the Ibiza pine tree
transformed into its under-exploitation, and the tree
once again became the king of the local Mediterranean
vegetation, its unmistakable scent permeating the air. It is
estimated that there are currently seven million pine trees
in Ibiza, more than half of those responsible for scenting
the countryside of Sant Joan.
pine tree. Spread across the valleys, an abundance of
almond, carob and olive trees while in the mountains,
under the white pine, the juniper takes shelter.

The lush vegetation in Sant Joan offers a perfect

In the 80s there was only Ibiza Sound Studio, which
was probably burnt down due to the incendiary

slow and costly endeavour which involves ongoing

Totem Wines (2007), are the four wineries in Ibiza. They

merlot and cabernet sauvignon in small family estates
where the stocks are 20 or even 50 years old.

Market demands and the will to improve the product
have motivated the wineries in Ibiza to progressively
make their wines more varied, so that now it is
cabernet sauvignon and 5% syrah. The resulting liquid
is plum-coloured, bright and has the scent of a ripe
fruit; in the mouth it’s warm and dense. The regulation
‘Vinos de la Tierra de Ibiza’ also includes the varieties
ull de Llebre, merlot and tempranillo, and the white
varieties macabeo traditional Ibiza stock, chardonnay,
moscatell, parellada and malvasía.
Wine makers in Ibiza who wish to give their wine
greater balance and aroma nuances all prefer French
oak barrels, where the wine is left to age for between
three and 18 months, depending on the type of wine
that is being made. In the Balearic Islands and in
exclusive shops away from the islands we can try Lausos

Red 2008, 100% 40 year old stocks of monastrell
grown in the north and the south, including 50% wine
aged in French oak barrels.
Between 2002 and 2009, the total surface dedicated
to growing vines has increased from 19,64 hectares
to 34,60 hectares, which is equivalent to an increase
in grape production from 105,000 to 177.400
kilogrammes. Production of red wine has always been
greater than that of wine or rosé wine. In 2009, 610
hectolitres of red wine were produced, in contrast
with 271 hectolitres of white wine and 266 hectolitres
of rosé wine, proving that monastrell has adapted
perfectly to the conditions in Ibiza.

very much alive still today, which defend payés* wine.
This is a tasty wine to be enjoyed locally, but it has
nothing to do with the wine that the four aforementioned
pitiusas wineries produce and bottle, which has for
long been mistaken for the other home-made variety.
The only relationship between the two is the fact that
the wineries which produce, bottle and commercialize
technically correct wines make use of the stocks and the
grapes which the local vine growers have inherited and
learnt to take care of, generation after generation. This
is how you start loving wine. Juan from San Vinya den
Palerm and Mariano from Can Rocas are well aware
of this, as they have spent their whole lives making
payés wine using traditional methods and investing the
greatest of love.
In the 6.000 squared metres which Juan dedicates to
wine, half is dedicated to some 50 year-old stocks and
the other half to 30 year-old tempranillo. The average
3.500 litres of wine produced per harvest are consumed
within the family or locally, as it is always welcome in

around the vines since he was 14, sells most of the 5.000
litres that he harvests to Sa Cova, a bottling winery in
proud to know that his wine is bottled, commercialised
and consumed beyond the island.
Bright red. The red that stains everything it comes into
contact with, crimson red, which can excite the most
are generous in variety and quality. Sunlight, dampness,
lime, clay, magnesium, some water and a lot of work
come together to bear fruit, pure pleasure for mankind.
Wine is one of the few agricultural products of Ibiza
which are exported and, in its travels, it carries with it
the basic values which are often rooted to the land.

What a liqueur!
If you’ve had the privilege of tasting hierbas ibicencas
you’ll agree that, chilled and in a short glass, or in a tall glass
with ice, it is the best after-dinner liqueur ever invented.
The quintessential Ibiza spirit has been manufactured
for more than two centuries and is obtained from the
hydro-alcoholic maceration of aromatic plants present in
the Ibiza countryside. Up to 18 types of plant may be
included in the mix, providing the power and balance
of this elixir and giving rise to precious formulas such

Virgin olive oil
trulls were traditionally
present in the Ibiza countryside, buildings
which produced oil for all the neighbouring
farms. This collective form of production has
fallen into disuse. However, the last few years
have witnessed a considerable increase of olive
farming and production, with the extraction
of top quality virgin oils, as in the case of Es
end of 2010. The farm is located in Sant Joan,
close to the Can Curuné restaurant, on the
road leading to Benirràs beach. Production is
limited to between 2.000 and 3.000 litres per
year, depending on the harvest, and the entire
process until the precious liquid is obtained is
organic, sweet, fruity and thick, the result of
mixing the picual variety of olive with some
empeltre and a touch of sevillana. The olive
from Jaen, the leading province in olive oil
production worldwide since the Romans
settled in Hispania. The Phoenicians brought
the olive oil to Ibiza and the story goes on.
