In March 2005, Paul Markosian made what he describes as a “mid-life career change,” leaving a job making food and coming to
PERFORMANCE Foodservice - NorthCenter to sell food.
“I was nervous,” says Paul. “I had worked in the food industry my whole life, mostly in the back of the house in restaurants. Before coming to NorthCenter I was the production manager at Sullivan Harbor Farm, a producer of artisan smoked seafood. I had never held a straight sales position before, and I wasn't sure if I could do it, or if I'd even like it.”
Fortunately for Paul, and for NorthCenter, the arrangement worked out, and within a short time, Paul decided he would most likely stay at NorthCenter until he retired. “I was learning so much,” he recalls. “Doing sales gave me insights into
the food service industry that I had never had before. I became highly focused on trends, and on topics like sustainability and local sourcing and controlling food cost and social media marketing, and on strategies that independent restaurant owners can employ to compete with the chains.”
And along the way, the notion of getting back into the restaurant business himself, as an owner, began to creep into Paul's mind. “We'd bring a new product line in, and I'd imagine cooking with it. Or I would read about some trend, like how soup sales keep growing, and I'd start building a soup menu in my mind for my imaginary restaurant.”
Then about four years ago, Paul's wife, Lorena Stearns, took over the ownership of Finn's Irish Pub, a restaurant near their home in downtown Ellsworth, Maine. Paul kept himself out of the operation, knowing that his own job was too demanding to allow any moonlighting, but eventually the couple started to talk about working together once again.
“We met working for a catering company in New York City back in the early nineties,” says Paul, “and we knew we could work well together.” They first considered whether there would be a role for Paul at Finn's, but eventually decided that they would prefer to launch a second restaurant. The question was: what type of concept? “We considered a number of possibilities, from bistro to casual Italian to Mexican, among others. But I love sandwiches. I just really love them, so I became focused on a concept where we could do a really fun sandwich menu.”

Paul and Lorena learned in early December that a space was about to become available three doors up the street from Finn's, and they jumped on it. Paul met with his district manager, Rob Branch, and regretfully announced that he had decided to leave. (The news was regretfully received, along with an expression of hearty congratulations by Rob.) Three months later, they opened the doors to Flexit Cafe & Bakery. It was almost exactly ten years to the day since Paul began his job at NorthCenter.
“Flexit has so much of what I really love about the food business,” says Paul. “Really fresh, healthy ingredients. Bold flavors. Clean ingredients. A mashup of different culinary traditions. And really good, strong espresso!”
Flexit features a changing selection of four soups every day (including one vegan option), as well as sandwiches and salads, and a wide array of pastries, breads, cakes, and quiche that are baked on premise. They use antibiotic-free chicken and turkey, beef raised without hormones, and many organic ingredients. Their sandwich menu includes a Cubano made with applewood smoked ham, and a banh mi sandwich, with a choice of roast pork, tofu, or grilled chicken. The restaurant also feature two different paninis, one with portobello mushrooms and olive tapenade, the other with grilled marinated chicken and pesto.
“The Cubano is a big hit, as I thought it would be,” says Paul. “What's surprised me is how many people love the banh mi, many of whom had never even heard of it before.” For the record, a banh mi sandwich is a blend of two cultures, French and Vietnamese, and consists of a baguette with mayonnaise (the French part) along with a pile of fresh cilantro, shredded carrots steeped in rice wine vinegar, cucumbers, hot peppers, and some kind of protein. “I first discovered the banh mi about ten years ago on a visit to Houston, where there is a large
Vietnamese population. I became instantly hooked. Now I'm so excited to be able to serve them myself every day!”The name Flexit is meant to evoke, among other things, the term “flexitarian,” which is an approach to eating that is not locked into a single dietary model. “Someone who is generally a vegetarian, but enjoys a good steak now and then,” explains Paul, “or a carnivore who willingly goes without meat once in a while. Also someone who likes to try, and mix, wildly different styles of food.” Flexit also refers to the idea that the menu supports a healthy life style (flexing muscles), but that it is flexible about that, serving comfort food and indulgent desserts alongside salad. And finally, says Paul, “Flexit stands for a can-do spirit, the notion that we are highly customer-centric and service oriented and will do whatever we can within reason to meet our guests' needs and requests.”
How does Paul feel about making a second “mid-life career change,” ten years after the first? “It was tough leaving NorthCenter. I made so many good friends, within the company and the vendor community, as well as among my customer base. I learned so much. I don't think I could have confidently made this move without the knowledge I gained working there.”
But, ultimately, says Paul, he hasn't really left. “I'm now a NorthCenter customer. Or, I should say, I am a customer once again. And I'm having so much fun. I'm part of a community, Lorena and I get to collaborate as business partners, and we have a truly wonderful team here at Flexit, including Matt St Germain, formerly the chef at Finn's, who took on the challenge of leading the kitchen here, and Beth Fendl, the manager at Finn's who is helping to get us launched and will remain here a day or two a week. Two years ago, I wouldn't have imagined this really happening, but today, it's happened, and I'm excited!”

Since its inception in 1991, Take 2 Dough has been New England’s premiere dough producer.
Our product is available through numerous well known distributors, and Take 2 maintains a close relationship with its distributors and customers. We are always available to go on-site to offer training to chefs, restaurant owners, store man-agers and sales staff. There is endless versatility to this product.
Our Process
The key to growth in this competitive market is producing a top quality product with never failing reliable consistency, and overcoming the tradi-tional perception that only a homemade dough is acceptable. To meet these challenges, Take 2 has developed a dough production facility with systems that ensure that the product is every bit as good as a homemade dough. Controlling temperature and humidity levels inside the production facility is crucial, as is consistent water quality, purity and freshness of ingredients, storage practices, and maintaining a well-trained staff that follows dough-making procedures to the letter. The Take 2 Dough facility is not automated like many large scale dough manufacturers. It is still a hand crafted, small-batch product.

INSTRUCTIONSCut small slits in the skin side of the duck breast, without slicing all the way into the flesh. Season the duck on both sides with salt and pepper. Preheat a skillet over medium-high heat and sear the duck breast, skin side down, for 5-7 minutes, reducing the heat to medium-low after 3 minutes. Flip the duck breast over and cook for an additional 3-4 minutes. Transfer the duck to a plate and keep warm. Using the same skillet, turn the heat back up to medium and deglaze the pan with the honey and balsamic vinegar, scraping up the brown bits as the sauce cooks. Simmer the glaze for 2 minutes, then season with just a dash of salt. Return the duck to the pan and glaze with sauce. Slice and arrange duck breast on a plate, drizzling the sauce around the duck, serve with appropriate starch and vegetables and garnish with fresh thyme.
