Penne with Sausage...Served with garlic ciabatta...

Serves 4. You Will Need…• 1 medium red onion, finely diced • 2 -3 cloves garlic, crushed• 150ml dry white wine • 8 good quality sausages• 75g butter • Sprig rosemary• 2 pinch ground Nutmeg • 90g Freshly grated parmesan • Salt and pepper • Pinch of ground cloves• Penne pasta • 1 garlic clove

What to do…•Ifyouuseagoodbutcher,youcanaskhim to prepare the sausage meat for you.•Removetheskinfromthesausages.•Meltthebutter,andaddtheonionandgarlictothepan, gently fry for 3-4 minutes until the onion has softened (be careful not to burn it).

•Addthesausagemeattothepanandcontinuetocook over a gentle heat in the pan to ensure it resembles fine mincemeat as it cooks through, allow the meat to brown.•Oncethemeatisbrowned,addthewhitewinetothepan.•Choptherosemaryneedlesintotinyshards.•Addtomeatandcookforafurther10mins.•Meanwhileprepareandcookpastaaccording to instructions.•Seasonmeatwithgroundcloves,salt,pepperand generous pinch of nutmeg.•Drainpastaandstirinsausagemeat.•Grate7gofparmesanintothesausagemeat.•Serveonwarmplates,usetheremainingparmesan to decorate.

For The Garlic Ciabatta...•Slicetheciabattaonanangle,andpeelacloveofgarlic, place the ciabatta slices on a baking tray or grill pan, and drizzle each piece with olive oil. Bruise the garlic clove and then rub vigorously the doughy top of each slice of ciabatta.•Finelychopthegarliconceyouhaverubbedeachpieceof bread, and scatter the chopped garlic over.

•Justbeforeassemblingthesausagemeatandpasta,place the ciabatta bread under the grill or in the oven (heated to about 200 degrees) for 3 – 4 minutes, and season to taste.

•Servewithwatercresstossedthroughalightoliveoil, and a splash of balsamic vinegar, and serve alongside the pasta.
