Encapsulation of Ananas Comosus with Centella Asiatica via Spray drying technique
This work is conducted to
investigate the capabilities of spray
dryer in Ananas Comosus
encapsulation and to model the
oxidation inhibitor through lower
energy requirement and minimizing
the amount of Maltodextrin and
substitution with Centella Asiatica
as encapsulation matrix. This study
will combine the encapsulation inlet
temperature and substitution of
Maltodextrin with Centella Asiatica,
which should be able to reduce the
amount of extensive energy usage
and retaining Ananas Comosus
nutritional properties.
