The economical production of compounds, fi llings or spreads with an individual note is possible, even in small quantities, with our systems.All plants are operated from a control panel. Plant operation options range from manual to fully-automatic.

With the SALSA® system you achieve the best reproducibility in a defi ned semi-automatic process. The simple, menu-guided control system, which includes temperature control, allows exact adjustment of your desired quality, with end fi nenesses < 15 μm possible.

Compound Coatings
A less expensive alternative to choco-late coatings. More than 5% of the expensive cocoa butter can be replaced by partially miscible vege-table fat (CBR) or even exchanged for an immiscible vegetable fat (CBS) with a completely diff erent composition. Through the melting characteristics of the fat used, a softer and more elastic consistency is obtained.
Fillings
An important ingredient in many sweets. Here the vegetable fats form the continuous phase in which the other ingredients are embedded. That is why the physical and chemical properties of the fat and the resulting factors are especially important to the quality of the end product.
The overall higher fat content and the use of diff erent vegetable fats change the consistency of the mass as compared to chocolate such that manufacturing and processing become easier. On the one hand, targeted tempering is no longer necessary and, on the other hand, the lower viscosity means that the costly and time-consuming dry and liquid conching process can be eliminated.

With a minimum fat content of 27%, rework of any sort, whether with nuts or wafers, caramel or coarse sugar, can be processed with the „SAMBA® System“. Finenesses < 20 μm are easily achieved, so the ground mass can be re-fed into the production process.

The systems off ered by NETZSCH-Feinmahltechnik GmbH for the production of chocolate coatings, icings and fi llings have a modular design. On the one hand, this modular construction minimizes the required space and, on the other hand, it facilitates production expansion. Our line concept includes the initial
homogenization of the individual components in a mixing tank (1) with a rapidly spinning dispersion tool for product circulation, transfer of the mass to the heatable process tank (2) and the fi nal fi ne grinding in the LME agitator bead mills. Shown here is a modular system for icing.
The fi ne grinding of the mass is real-ized in multi-pass operation, i.e. LME agitator bead mills connected in series, for higher quality. Optionally, our systems can be equipped with a feed station (4) and fat-melting system (5), for example.

The pre-ground paste of nuts or rework is directly transported to a process tank for further processing. For short distances between the PRECUTTER VN and tank, no addi-tional pump is needed. The inte-grated PRECUTTER VN unit allows self-cleaning of the machine in circulation with fl ushing liquid. This leads to easy product change and fl exibility during production. The combination of the pre-cutting unit and a hori-zontal agitator bead mill for fi ne-grinding allows the production of premium products like nut creams or rework pastes. Reduced and closed machinery components, equipped with optimized grinding technology, lead to low processing temperatures (40°C to 50°C) and an improved fl avor profi le of your product.

The desired end fi nenesses of choco-late coatings, icings and fi llings are usually between 18 μm and 30 μm. Agitator bead mills that guarantee high throughputs are used to achieve these fi nenesses. The maximum throughput capacity is, of course, infl uenced by the initial particle size of the sugar – in addition to the effi ciency of the separator system.
Fine Grinding of the Initial Mass
Our SAMBA® pre-grinding system saves you the extra step of pre-grinding the sugar. With the model LME hori-zontal agitator bead mill, NETZSCH-Feinmahltechnik GmbH off ers the optimal wet grinding system for the required crushing processes. The mill is equipped with highly-eff ec-tive NEXWING grinding disks and an extremely effi cient separation system.
This combination enables very high throughputs without compression of the grinding media in the outlet area. The grinding chamber is available in chilled cast iron or wear-resistant steel. Steel grinding beads with a diam-eter of 4 mm, 5 mm or 6.35 mm are normally employed, depending on the feed fi neness of the sugar.

First, the production capacity of a plant is dependent on the size of the LME agitator bead mill employed. Second, it is strongly dependent on the initial fi neness of the sugar used. This correlation is shown in the table below.

Mode of Operation
Single-Pass Operation
Is the simplest mode of operation for initial masses with fi ne sugar. The mass is pumped from the temporary storage tank, once through the agitator bead mill and into another tank.The end quality following the single-stage grinding is dependent on the throughput of the agitator bead mill.
Circulation Mode
The initial mass is pumped from the temporary storage tank through the agitator bead mill and back into the temporary storage tank. This process results in continuous quality enhance-ment. This mode of operation is used for initial masses with coarse or pre-ground sugar.
Multi-Pass Operation
Alternatively, for improved quality, the initial masses with sugar fi nenesses ranging from fi ne (100 μm) to coarse (1 mm) can also be ground with two agitator bead mills connected in series. This means that if one mill is being serviced, it is not mandatory to stop production.
