Along the way, he has managed to pick up some hobbies. “Fifteen years ago, I went to Texas to buy some miniature horses. In the cor- ner of the yard, I saw something I’d never seen before.” Hammons was told he was pur- chasing a miniature Zebu which is related to western breeds of cattle. They are native of India, Africa and Southeast Asia. “I’ve learned they are some of the oldest and smallest breed of cattle.” The first miniature Zebu bought was a little bull for Hammons’ grandson. “We fell in love with him, but he needed a girlfriend.” Hammons also started showing his new breed of cattle from California to Florida. Hammons said more and more people are buying them as pets. “They can range in price from $500 on up. They’re so easy to care for and they don’t eat nearly as much as a big cow.” Hammons said when he started purchasing the miniature cows and bulls, there were about 1,000 regis- tered breeders in the U.S.; now, he estimates there are more than 4,000. from Kinder and Jacob ChanceConstance, 23, from LakeCharles were booked into AllenParish Jail today and each was
charged with one count of theftof livestock.According to an investigator
with the Louisiana Departmentof Agriculture and Forestry(LDAF) Brand Commission,the two suspects reportedlyremoved old back tags fromthree cows that were being heldat Kinder Livestock Auction.Back tags are a temporary formof identification used on cattlein livestock markets. The stolen cows were given
new tags indicating they wereowned by one of the suspect’srelatives. The three cows soldon Monday, December 15, 2014and a check for $4170.97 waswritten to the suspect’s relative.Investigators say JacobConstance accepted the check.A Kinder Livestock Auction
employee contacted the BrandCommission on Tuesday,December 16, 2014 to reportthe theft. Brand inspectionrecords and animal health
traceability records confirmedthe three cows sold in the nameof the suspect’s relative werethe same three cows missingfrom the pen where they werebeing held by their owner. LDAF Commissioner Mike
Strain, D.V.M., said, “This casehighlights the importance oflivestock identification and ouranimal health traceability sys-tems which clearly helped toverify that those were indeedthe stolen cattle.”

In a medium to large Dutch oven, over medium-high heat and add oiland onions. Sauté until onions are clear and browning. Add peppersand celery; sauté until soft. In center of pot, add garlic and sauté forabout 30 seconds. Add ham hocks and sausage and sauté another 4 to5 minutes. Add chicken stock, bay leaves and oregano; bring to boil.Cover and reduce heat to a simmer, stirring occasionally, until hamhocks and peas are tender, about 3 hours. Remove ham hocks, setaside to cool. When cool, remove the meat and return to pot. Discardbones and skin. Season to taste. When ready to serve, return to sim-mer. Garnish each bowl with chopped green onions if desired.
Honey Spiced-Rubbed Pork Tenderloin¼ cup Catalina Dressing, divided1 large pork tenderloin1 tsp. red pepper1 tsp. garlic powder
Brush 2 tablespoons of dressing over pork. Mix dry ingredients: rubonto pork. Let stand 10 minutes to 24 hours to marinate. Preheat grillto medium heat. Place pork on grill; cover. Grill 20 minutes, turningoccasionally. Mix remaining 2 tablespoons dressing and honey.Brush some of the honey mixture over pork. Continue grilling 5 to10 minutes, turning and brushing with honey mixture until pork iscooked through (160 degrees). Cover with foil and let stand, for afew minutes before serving.

Zaunbrecher, a rice farmer in AcadiaParish and a member of theLouisiana Rice Research Board, washonored on Dec. 8 as Farmer of theYear at the USA Rice FederationOutlook Conference.Zaunbrecher, a fifth-generation
farmer, was recognized for his farm-ing career and leadership in the riceindustry. He graduated from LSUwith a master’s degree in agronomy.He farms rice, crawfish and soy-
beans on 4,600 acres with his broth-ers – Paul, Philip and Bill – and hesaid their commitment to the farmallowed him to participate in organi-zations including the USA RiceFederation.He credited his parents and his
wife, Candee, for his farming suc-cess. “It takes a very special personto live with a farmer,” he said.His father, Glenn Zaunbrecher,
worked at the LSU AgCenter RiceResearch Station in Crowley beforefarming.Steve Linscombe, director of the
Rice Research Station, said theZaunbrechers are outstanding farm-ers. “The farming operation of thisgroup of brothers is one of the mostprogressive in the region,”Linscombe said.Linscombe said Zaunbrecher is
one of the most active rice industryleaders in Louisiana. “He under-stands that the success of his opera-tion is dependent on the contribu-tions and hard work of all the indi-viduals within his group.”Also Dec. 8, Hayes rice farmer

Linscombe reviewed the researchefforts by the LSU AgCenter. Hesaid breeding work on the Provisiarice technology project is makingprogress, with 12 rice lines beinggrown now at the winter nursery inPuerto Rico. It will allow farmers analternative to Clearfield technologyin the control of red rice. “We thinkProvisia is going to be a huge stepforward.”Hybrid work at the station contin-

producers discussed the benefits ofdifferent forage systems and humannutrition at the Louisiana Forage andGrass Council’s annual conferenceon Dec. 5.LSU AgCenter forage specialist Ed
Twidwell, who serves as secretaryfor the council, said each year theytry to bring in a variety of speakers,which includes people from theindustry and producers to give theirexperiences in growing forages.“If I had to name an overall
theme for this year’s meeting, Ithink it would be growing foragesfor the late summer and early fall,”Twidwell said. “We had some pro-ducers talk about the things theyplant to help to get them through
that period.”That is typically the period of the
year when it’s pretty dry and there’snot a lot of forage production,Twidwell said. Producers like toplant something in the summer thatwill carry them into winter.A producer panel discussed vari-
ous options for late summer andearly fall forage production. Some ofthe options discussed were forageradishes, cowpeas, stockpilingBermuda grass and Alyce clover.Twidwell said the market for for-
age-fed beef seems to be increasingacross the state with the growingnumber of farmers markets and thedemand for locally grown products.“But I would want growers to be
aware that it takes high-quality for-age and a lot of it to be successful inthat market,” he said.
On the program promoting theconsumption of beef and other ani-mal products was Peter Ballerstedt,forage product manager for theBarenburg Group in Tangent,Oregon.Ballerstedt said many Americans
believe fat from animal products isbad for their health, but can in fact bepart of a healthy diet.“A number of people would be
able to restore their health by switch-ing to a diet that is lower in carbohy-drates and higher in animal prod-ucts,” he said, noting that most of thecarbs Americans eat come fromcereal grains and caloric sweeteners.It doesn’t matter what type of ani-
mal products, Ballerstedt said.“Whether it’s beef, pork, chicken orfish, barring certain food allergies,they are all acceptable.”
