A new chapter has begun for everyone, and also for merci. Walking into the second year with us,

merci’s team members are continuing to bring you more exclusive coverages and excited news from

worldwide.

In the first issue of 2015, we will be guiding on an adventurous tour around Japan, New York, Lon-

don and France. Along the way, we’ll be exploring an innovatively designed hotel in Asia, getting

familiar with contemporary yet colourful home decoration schemes, and getting new inspirations

from Les Sources de Caudalie.

Peter moved to Hong Kong from New York City in 2013. He previously worked for several multinational financial institu-tions in New York, where he also founded and ran a research consultancy looking into the economic and social impacts of climate change. He transitioned away from finance and into the non-profit sector working in the field of environmental sustain-ability in Hong Kong.

Originally from Omaha, Nebraska, Martin Klabunde is a world renowned West African drumming teacher and performer. He also plays a beau-tiful harp called the adungu from East Africa. A prolific artist, Martin has published eight CDs and authored two books. He currently co-runs a global travel business with his wife and teaches African drumming classes in Tucson, Arizona.

HOTEL CYCLE

Bike travelling has been getting more popular around the world. It is quite common

in Europe already, like in France, Denmark where cycle culture is pretty mature. What

about in Asia? It is perhaps the time now to expand the culture apart from Taiwan.

There is a good news for the cyclists and travellers who are passionate in cycling- a bike

The Onomichi U2 is located at Onomichi, Hiroshima. It is a new one-stop-shop

concept of bike hotel located at the seaside, with all you can find there apart

from hotel rooms: café, bakery, restaurant, professional bike shop and even

the daily fresh products from their own farm to supply their own restaurant.

As a guest there, you can just simply ride your bike to the front desk to check-

in, and then take your bike to your guest room and rest. Besides, you can

enjoy the relaxing and peaceful scenery from the surrounding, from the deck

where cargo ships pass or stop by. You can also walk along the promenade to

get fresh air, watch the sunset and forget all the annoyance from busy city life.

Kelly was appointed an MBE for services to Interior Design in March 2009,

marking the pinnacle of her 37-year design career. She has written eight

Battersea Power Station is at the heart of one of central London’s largest, most visionary and ea-

gerly anticipated new developments, which will see this vast 42-acre former industrial brownfield

site become home to a community of homes, shop cafes, offices and 18 acres of public space. The

outline planning application for architect Rafael Viñoly’s master plan for the site was approved by

Wandsworth Council and the Mayor of London in 2010 and approved by Wandsworth Council and

the Mayor of London in 2010 and approved by the Secretary of State and permission granted in

August 2011.

The overall project is divided into seven phases, with each designed by a range of specialist ar-

chitects. These included Ian Simpson Architects and De Rijke Marsh Morgan (dRMM) in Phase 1

(Circus West), Wilkinson Eye Architects in Phase 2 (The Power Station), and Foster + Partners and

Gehry Partners in Phase 3 (The Electric Boulevard, Battersea Roof Gardens and Prospect Place.)

Construction work officially began with Phase 1 on July 4th, 2013 - the 80th anniversary of this

historic building. The overall development is anticipate to be complete in 2025, with The Power

Station itself expected to be open to the public for the first time in over 30 years in 2019.

After graduating as an architect at East London University, Reda Amalou spent his first professional years in London architecture offices. He then moved to Paris where he founded AW2 in 1997, an architectural practice now established as an international leading high-end design office.

Over the last ten years, Reda Amalou has, through AW2, been severaly awarded for it’s work in the design of high end luxury hotels, and recently “World’s Best Ecolodge”, for the Six Senses Con Dao, a five star eco resort. He is currently involved in the design of several resorts and hotels in China, Oman, Morocco, Maldives or Puerto Rico for brands such as GHM, Aman Resorts, Four Seasons, Six Senses & Cheval Blanc.

Reda Amalou is also the architect selected by Patek Philippe for the design of every new flagship stores and corners in the world. Since 2012, he creates product and furni-ture designs under his own brand, REDA AMAL.

The stylishly transformed New York loft-style apartments, each

with spacious lines and stunning harbour views, above trendy

new eatery, CHINO, has preserved the facade and original archi-

tectural features of the classic tong lau. Habitat Property pre-

served the building’s authentic nameplate, emblazoned above

the entrance in Chinese script; lowered the parapets to maximise

sea views; and refurbished the walk-up’s terrazzo staircase, while

also installing a modern-day lift - a first for this type of property.

The design team achieved a sense of calming

and restful luxury inside, through their use

of soft natural materials, a neutral colour

palette, and bespoke luxury accents such as

brass joinery handles. Outside, they refur-

bished the iconic façade retaining as many

of the original features as possible, including

the sweeping, curved glass windows.

At the heart of this vibrant new residential

enclave, highly-designed apartments in the

upmarket Tung Fat Building are available on

the premium rental market and range in size

from 960 to 1,320 sq. ft., including a pent-

house with landscaped rooftop.

Victoria Allan, founder of Habitat Property, firstly bought up all the various components of an original 1960s waterfront Tong Lau be-fore transforming it into 8 stunning New York loft-style apartments.

Victoria’s vision for injecting new life and love into the neglected Tung Fat Building was breaking the mould of the generic residential towers that are prevalent across the city with her edgy design eye, something that has underpinned her successful professional career.

Victoria saw the potential of the aged building with its interesting floor-space and engaged Australian firm KPDO Architects to realise her vision of a calming and restful luxury living environment, creat-ing her imagined sea view sanctuary.

In addition to introducing you to the unveiling of Tung Fat Building, I would also like to take this opportunity to see if you would be in-terested in speaking with Victoria Allan, the founder and director of Habitat Property- a boutique residential real estate firm established in 2001.

This modern and spacious 135 m2 apartment was stripped

and refurbished by famed interior designer, Kelly Hoppen.

Comprising of a total of 9 rooms, Kelly applied to this prop-

erty her design vision and signature style of clean lines and

neutral tones, blended with sumptuous textures and a feel-

ing of warmth.

For this project, the client wanted their

existing apartment to be redesigned as

primarily an office, along with function-

ing as a second home. New finishes for

the floor and walls, cornices, lighting,

doors, skirting, joinery, furniture and

window treatments were installed to

conform with the design aim of creating

a more contemporary and lighter space.

The bathrooms were also modernised

with new baths and showers, as well as

contemporary fittings and finishes, and

the kitchen was fitted with new units and

appliances

York City. Monaco based design firm Casamanara designed

a beautifully contemporary loft apartment. Located within

a building dating from the 1900’s, newly installed bespoke

woodwork and colouful, modern accents create and uplift-

Automotive Limited has staged its first Hong Kong

Classic Car and Vintage Festival at the New Central

Harbourfront in the mid of November. Around 100

classic cars and motorcycles from all eras of automo-

tive history were showcased in the event. The festival

also presented family entertainments with nostalgic

and automotive theme, such as vintage market, old-

fashioned games, film, live music and dancing and

more.

coffee-loving pioneers Frada Lai, Wendy Tsui and Tim Shepherd,

to make use of the Espresso concept to accommodate with the

speedy life of Hong Kong.

‘Zai Fe’ means coffee without milk and sugar in Cantonese.

It is one type of coffee that Hong Kong people order from

local and traditional restaurants. Having been tired of arti-

ficial syrups and flavors used to mask poor quality coffee

and milk, the three founders would like to combine a new

coffee concept with the under developed barista culture.

ZAI FÉ emphasizes on environmentally friendly, sustainabil-

ity and natural. All the products are specially crafted with

natural and organic ingredients to complement the brand’s

high quality coffee, and the takeaway cups are 100% com-

bustible and compostable.

In Italy, it is common to see people popping in and out at

cafes before work or during coffee break, to quickly have

a cup of coffee or espresso for relaxation and enjoyment.

The founders believe this should also be applied to the fast

and busy life in Hong Kong- people should not queue for

long time for a cup of good coffee. A perfect shot should be

served within a short period of time, by extracting the es-

sence from the coffee beans to the cup.

ZAI FÉ is creating a stu-dio where customers can come to just like home, having a great place to rest in the terrace, sipping a cup of good coffee and shar-ing food among friends and family. They are also having the ZAI FÉ Espresso Truck in APM Mall in Kwun Tong to give another ex-perience for customers.

This seven-days-only event was held at the RIVA and The Deck

and the new Rooftop Garden. Chef Arnold Tanzer began his

culinary career in 1989 and has worked at numerous hotels

and restaurants. He is also a menu and food development

consultant, Chef Arnold Tanzer’s special menu offers a unique

opportunity to savor the best quality ingredients and flavours

of the rich culinary heritage of South African cuisine. A thick

sliced piece of Duck Terrine with Sultana Relish gave a pleas-

ant start of the tasteful journey. Main course was a tough de-

cision making option between the rare selection of Venison

Loin and Chef Arnold’s famous dish, Lentil “Bobotie”. Baobab

Pear Parfait with Salted Mango Gel and Diced Pistachio was

served at last as a perfect sweet round up of the meal.

About Guest Chef Allistaire Lawrence

Allistaire studied at the prestige Institute of Culinary Arts in Stellenbosch, where he earned a diploma in food preparation and culinary art. He started career with his men-tor Craig Cormack at Spier Wine Estate’s Village Hotel in 2002.

He then moved on to work under the guidance of Bruce Robertson at one of the leading small hotels of the world, Cape Grace in Cape Town in 2005. During these junior periods of his career, he represented South Africa in the Hans Bueschkens Junior Chefs Challenge in New Zealand in 2006. In 2007, Allistaire and Bertus Basson represented South Africa at the prestigious Bocuse d’Or International Culinary Competition in Lyon. Allistaire se-cured an opportunity to work at a top restaurant in Johannesburg, and it wasn’t long before he worked his way up the ladder to lead the kitchen of the award- -winning Roots Restaurant, located in the UNESCO World Heritage Site Cradle of Humankind, where he guided the team to a position in the Eat Out Top 10. He was a member of the South African National Culinary Team that won one gold, two silver and one bronze medal in the 2008 Food Olympics.

In the following year, 2009, Allistaire won the title Chaîne des Rôtisseurs Young Chef ofthe Year. He later returned to Cape Town in 2012, where he was the Executive Chef of 5 Rooms Restaurant at 5 star The Alphen Boutique Hotel in Constantia. In 2003, Allistaire teamed up with mentor Bertus Basson at the award- -winning Overture Restaurant. To-gether, they are opening a restaurant on the Spice Route Wine Estate later this year. Bordeaux has attracted plenty of visitors, wine experts and enthusiasts to come to the city, for its history, beauty and of course because of wine. It is undoubtfully the most popular wine region in the world. When travelling to Bordeaux, perhaps most people may prior-itize winery visit and tasting wines. However, there is a hidden palace among the vines for harmony and serenity, providing a relaxing moment along the travel and to giving you a well-deserved break from all the tastings. It is definitely a place that should not be missed in Bordeaux – Les Sources de Caudalíe.

Les Sources de Caudalíe is a five-starred hotel, situated in the middle of the

vineyards of Château Smith Haut Lafitte, a Grand Cru Classé of Graves region

in Bordeaux which is famous of its white wine production and just selected

by James Suckling into his “Top 100 Wines by 2014”. The hotel was estab-

lished in 1999 and it has been operating already for 15 years, inspired by

the “French Paradox” that stands for a tasty but healthy French diet and

lifestyle, and refers particularly to the southwest of France.

There are currently 40 rooms and 21 suites in the hotel which are embraced

by the vineyards. Among these, 12 suites, “Village des Pêcheurs”, have just

been newly opened in 2014 summer. An enchanting bucolic landscape can

viewed from most of the rooms. Alice and Jérôme Tourbier, the younger

daughter and son-in-law of the owners of the Smith Haut Lafitte, are the

owners of the hotel. It was built with similar appearance with the Château

to give a sign of synchronization to the family and the nature.

The owner couple has put a great effort in creating a warm

home-like atmosphere for guests with plenty of antique furni-

ture, reflecting the cultural heritage of the region and making

Les Sources de Caudalíe to have an atypical character among

the luxury hotels. Meanwhile, the new suites are a mixture

of tradition and modern chic, combining collector’s items and

reproductions in a resolutely modern spirit by featuring Scan-

dinavian and Italian designs, in which are perfectly integrated

into the hotel’s unique environment. Rooms are built in a style

reminiscent of Cap Ferret oyster-fishermen’s huts on stilts and

named after villages on Cap Ferret. This also indicates the city

of Bordeaux – you can easily find a lot of historical buildings,

but combined with modern and artistic atmosphere.

Guests are welcome to borrow bicycles to travel around the

whole hotel, spa and vineyard areas. They can also jog along the

vineyard to go into the private forest of the Château to feel the

peace and nature, and to feel like doing normal exercise when

being at home. The newly opened indoor swimming pool is a

combination of wellness and art together. The 15-metre inimita-

ble pool is located in a magnificent glasshouse with an impres-

sive wooden frame, built out of timbers from the 18th century, at

the entrance to the “Village des Pêcheurs”. The fins of a Japanese

fugu fish magnified X20, installed at the bottom of the pool with

a golden tone, is veritably an underwater work of art for guests

to appreciate and imagine when being there. Besides, the hotel

has maximized the use of sustainable energy and energy saving

measures, in all the rooms, restaurants and Caudalíe Vinothéra-

pie® spa.

The hotel has not only provided psychological comfort and cozy

feeling, but guests can also physically enjoy with nice gastro-

nomic pleasures. La Grand’Vigne, a restaurant that earned a

Michelin star in 2010, is specialized in local culinary, seafood

and meat-based dishes, and relying on finest seasonal delica-

cies. The restaurant is inspired by the 18th century ornamen-

tal greenhouses, with a small terrace next to a small lake with

swans and wooden boats. Guests can enjoy a delicious break-

fast, lunch or dinner in serenity and intimate environment to-

gether with a glass of Smith Haut Lafitte Blanc from the Châ-

teau. La Table du Lavoir is the second restaurant in the hotel

which was a wash house in 19th century, paying tribute to the

“terrior” with delicious, unusual and bistro-style gourmet.

Having a glass of wine may be a good option before or after the

meals, or when coming back from a swim, cycle or hike. Apart

from the existing French Paradox Bar, Rouge, another new open-

ing in this summer would be the perfect choice for that in the

hotel. It is a new fancy food shop and wine bar with its name

representing the colour of Bordeaux – the colour of ripe grapes

in the autumn and the luminous colour of a great wine. The cav-

ernous bar is the signatory design with huge beams recovered

from an old building, and countless wooden strips going from

ceiling to the floor. If weather allows, the large sunny terrace

provides great views towards the main building together with

endless vineyards of the Château. Rouge is ideal for a light lunch

or enjoy a friendly aperitif offered by both restaurants, accom-

panied by nice Bordeaux wines ranging from great growths to

more affordable wines that can be consumed either on site or

purchased to take away. Besides, quality foods such as foie gras,

preserves and tapas in addition to cooking implements are avail-

able in the shop.

A must-go facility in the hotel is the Vinothérapie® spa. The

Caudalíe Spa is absolutely an exceptional parenthesis for soul

refresh. Caudalie is the unit to measure the duration of the

wine’s flavor on the palate. The finer a wine is, the more Cau-

dalies it has for each second the flavor remains.

Caudalíe, a French skincare brand, launched officially in 1995

by Mathilde and Bertrand Thomas, the elder daughter and

son-in-law of the Château owners. They met a polyphenols

specialist in 1993 during the harvest in the vineyard and dis-

covered the active polyphenol extracted from grape pips are

significantly more effective than vitamin E against free radicals.

In 1999, the two sister couples were working together to cre-

ate the hotel and the first Vinothérapie® spa in the vineyard for

wellness and inspiration of the guests.

The Caudalíe spa is made of wood and stone which is per-

fectly matching with the vineyard and hotel setting. The zen

atmosphere and the wood and marble décor procure a feeling

of peace, as well as physical and mental well-being. Walking

along the covered outer passageway with a view of the out-

door swimming pool and going into the outdoor wooden hot

tub are enough to remove all the stress and nuisances of eve-

ryday life. The changing rooms overlook both the relaxing area

and indoor pool. Guests can enjoy the panoramic view of the

Smith Haut Lafitte vineyards from the spa. Several adjacent

outdoor terraces offer guests the opportunity to refresh in the

The Vinothérapie® spa utilizes the beneficial properties of naturally warm spring water that comes from over 540m

depth, with ancestral anti-oxidant power from vines and grape extracts to guests for spa and facial treatments. There are

20 contemporarily designed rooms in three floors, mainly with natural or indirect lighting, to offer guests with enchanting

and relaxing experiences. These include well-being treatments with own range of vine and grape-based products such

as Crushed Cabernet scrub, Honey and Wine Wrap, or Winemaker’s massage that uses grape-seeds, honey, brown sugar

and essential oils to exfoliate skin. Guests can bathe in red wine and grape pomace (the remains of pressed grape), be

massaged with fresh grapes or wrapped in honey and wine. Guests can also sense the rain, wind and smell of the vineyard

through the window blinds during the process, accompanied by soft and relaxing music.

The Angelus, meaning angel in Latin, is a Catholic devotion commemorating the

Jesus Christ. The devotion was traditionally recited in Roman Catholic churches,

convents and monasteries three times everyday: 6:00 am, noon, and 6:00 pm,

which was also used by some Anglican and Lutheran churches. The Angelus was

usually accompanied by the ringing of the Angelus bell, which was a call to prayer

and to spread God’s will to everyone.

The successful story of the Saint-Emilion Premier Grand Cru Classe has to be traced back to the 15th century. At this pe-

riod in history, following the Holy Empire’s victorious battle against the Ottoman army on July 21st 1456, Pope Nicholas V

ordered as a sign of thanksgiving that all the bells in Christendom should ring each day in the morning, at noon and in the

evening. This prayer took the name of the Angelus. Henceforward, over the centuries to follow the traditions, at seven in

the morning, at noon and at seven in the evening the Angelus rang out, setting a rhythm to the days. At these moments,

all the men and women in fields and villages stopped their work to pray.

Here, at Chateau Angelus, located at the centre of a natural amphitheatre where sound is amplified, a small plot of very

old vines from which vine growers were able to hear the Angelus being rung simultaneously by the three local churches.

They were the Mazerat chapel, the church of Saint-Martin de Mazerat, and that of the Saint-Emilion, which was the place

that gave its name to this property. Meanwhile, the bell on the label of Chateau Angelus symbolises this origin and these

moments of reverence.

A Remarkable 2012 for the Golden Angel

2012 was a special and unforgettable year for Chateau Angelus. All the glories and good happenings were spotting on the

Chateau. Angelus is a family owned winery, by the de Bouard de Laforest family with roots in Bordeaux that can be traced

back to 1400s. Georges Bouard was the first linkage of the family to the region in the 16th century. Then in 1782, Cath-

erine, known as Sophie de Bouard de Laforest, married Souffrain de Lavergne and came to live in Saint-Emilion where the

story officially began. In the beginning of the 20th century, Comte Maurice de Bouard de La Forest settled at the property.

In 2012, the family was celebrating their 230th anniversary!

Now it is the 8th generation of the family running the

Chateau. Stéphanie de Boüard-Rivoal was appointed

Deputy Managing Director of Angelus in 2012.Interest-

ingly Chateau Angelus has been run by many women,

with 3 women in 8 generations in a leadership position,

which is quite uncommon in Bordeaux wineries. With

Stephanie on board, Chateau Angelus endeavours to

maintain traditions with modernization and innovation

at the same time. Upon long discussion and reflection,

together with foreseeing of the future, Angelus had un-

dertaken a huge renovation for the Chateau. Spending

26 months with massive investment to modernize and

enlarge the building, Angelus is keeping the traditional

patrimony architecture from hard works by specialized

French craftsmen using traditional methods with noble

materials such as stone, French oak, metals and glass. The

renovation finally finished by 2012. Unlike the 1855 Classi-

fication of Bordeaux Left Bank, Saint-Emilion Classification,

where the wine growing region is on right bank of Bordeaux,

was only officially established in July 16th 1955 that the Clas-

sification list was updated more frequently, around every 10

to 15 years. There were initially 12 Premier grands crus class-

es and 63 Grand crus classes. With the most updated 2012

Classification, there are 18 Premiers grands crus classés and

64 Grands crus classes, in which Premiers grands crus classes

are divided into A and B classes. Chateau Angelus was pro-

moted to Premier Grand Cru Classe A, together with Cheval

Blanc, Ausone and Palmer at the same classe, to reward the

intensive work by Angelus in previous decades to produce

excellent wines.

nTo celebrate this spectacular year, a special label was

designed for the 2012 Angelus bottle. With a black cap

presenting the de Bouard de Laforest family crest, the

2012 bottle has replaced its traditional paper label with

an imprint in embossed gold. This label is embossed with

a 21.7 carat gold encasement and refined through two

firing processes over 500 degrees Celsius, and attended

with handcrafted precision and care. The precious alloy

adorns the glass, bestows its radiance and enhances the

bell, the emblem of Angelus. All 2012 vintage are avail-

able since December 2014 in impressive bottles, from

the bottle format to the Melchior (18L). The production

of the vintage 2012 was with 80,000 bottles, the releases

in En Primeur were all sold out. This vintage is good with

ageing potential, best to serve from 2020 to 2045, and

surely is a collectible item for wine connoisseurs.

As Coco Chanel once said, “fashions go out of fashion, but

style never does”. This applies exactly to the outstanding

terroir and quality of Chateau Angelus. Let’s cheers for

the golden bell

Base• Sponge cake from bakery shop

• Purple Sweet Potato Cream

• 1 medium purple sweet potato (about 200g)

• 25g whipping cream

• 10g icing sugar (optional if the sweet potato is sweet enough)

Directions1. Preheat oven to 220C.

2. Wash the sweet potato and pat it dry with tissue paper.

3. Wrap it with aluminium foil and place it on the oven rack.

4. Bake for 1 hour. Insert a knife into the center to check the doneness.

5. Take it out from the oven and remove the skin. (Sweet potato can be done in boiling method alternatively)

6. Add whipping cream, icing sugar into mashed sweet potato and stir well.

7. Press mashed the sweet potato through a fine sieve become silky and smooth cream.

8. Put the cream into a piping bag with a star tip and set aside. If the cream is too stiff, add little water once at a time

to check the piping consistency.

9. Cut the sponge cake with 3.8cm diameter round cutter.

10. Brush the surface of the cake with rum.

11.Beat the whipping cream until it forms to stiff peaks and put into a piping bag with a round tip.

12. Pipe little bit of whipping cream and put a piece of chestnut in the center.

13. Pipe the cream around the chestnut, like a mountain.

14. Pipe the sweet potato cream in swirls on top.

15. Decorate with some chopped pistachio, dry cranberries and icing sugar.
