Almost half of the year has gone past. The virus has put all of us in our homes. Good point is that we could all sit and stitch. We are expecting large finishing orders in the months to come. Don’t forget to get your piece in as soon as possible to avoid the rush. We here in Spring, Texas have been keeping our communication open to help anyone in need. Just call or email and we will be happy to help you. We have provided curbside service if you like or even walk ins. This is a feel and touch industry and if possible, we like to see what is out there. The Nashville market came just before the virus outbreak. Merchandise was shipped to us and some of you have not had the chance to see everything. Come on in and look. Our limitation is the amount of people that we can have in the shop. Everyone has been in compliance with what is needed. After all we have to now get ready for the long hot summer of drinking “sweet tea” and stitching. Come check out all the new stuff and find projects that will suit your needs. We are a one stop shop. If we have the chart, we have all the parts. Come join us for a day of laughter and joy as we celebrate our 25th Anniversary of the
shop. Who would of ever thought of it. When we opened we only planned to be here
for one year and see what happens when you are having fun. I would like to thank you
and all of the 3 Stitches crew (SAPS- Stitching Aide Problem Solvers) who have made
this possible. We want to take the opportunity to thank you by making a celebration
day with drawing, food, drinks, and of course gifts. It isn’t a party at 3 Stitches
without gifts.
Green Goddess Salad
3 heaping cups tender herbs (such as dill, parsley or cilantro)
½ cup mayonnaise
½ cup plain whole-milk yogurt, sour cream, or buttermilk
2 Tbsp. extra-virgin olive oil
1 Tbsp. drained capers
1 garlic clove

Kosher salt
2 lemons, divided
Freshly ground black pepper
2 chilled cooked medium skinless, boneless chicken breasts (about 1 lb.) one 15 oz.
can chickpeas, 8 boiled eggs, or three cans oil-packed tuna
2 celery stalks
1 ripe avocado
1 head Bibb, butter, romaine, or iceberg lettuce
Potato chips (for serving)
Combine 3 heaping cups tender herbs (dill, parsley, or cilantro), ½ cup mayonnaise, ½
cup plain whole milk yogurt, sour cream, or buttermilk, 2 Tbsp. extra-virgin olive oil,
1 Tbsp. drained capers, 1 garlic clove, and a big pinch of kosher salt in a blender.
Finely grate zest of 1 lemon into blender. Cut lemon in half and squeeze in juice
through your hand or a fine-mesh sieve to catch the seeds. Blend on high until bright
green, and speckled with small pieces of herbs. Taste dressing and season with freshly
ground black pepper and more salt as needed.
If using 2 chilled cooked medium skinless, boneless chicken breasts, slice against the
grain 1” thick. Tear each slice into bite-size pieces. If using one 15 oz. can of
chickpeas, drain and rise well. If using 8 boiled eggs, peel and cut into bite-size
pieces. If using three 5-oz. cans oil-packed tuna, drain and flake with a folk into bite-
size pieces. Place protein of choice in a medium bowl. Add ¼ cup dressing to protein
and mix well to combine. Place remaining dressing in a small bowl and set aside for
serving.
If using tuna, remove any leaves attached to 2 celery stalks. Thinly slice stalks on a
diagonal and mix into salad. Season with salt and pepper. Top with any celery leaves.
Cut 1 ripe avocado in half. Remove pit, scoop flesh out of skin, and cut into ½” thick
wedges.

Separate leaves of 1 head Bibb, butter, romaine, or iceberg lettuce. Wash and dry
leaves thoroughly.
To serve, place bowl of salad and reserved dressing on a platter and arrange lettuce,
avocado wedges, and a big pile of potato chips around. Slice remaining 1 lemon into
wedges. Drizzle a bit of juice over avocado. Arrange lemon wedges on platter.
Season avocado with some salt and a crank or two of pepper.
Stitching Tip: Threading a needle
If you are threading a needle over your finger it is easy to determine if
you have the right size needle. To do this, lay your thread over your
index figure. Left finger if you are right handed and right finger if you
are left handed. Put the needle in your other hand and slide it down the
finger with the thread until it comes up through the eye of the needle. Pull the thread
through the needle. Come by the shop and we will be happy to show you this step.
With enough practice, this will become a quick method for needle threading.
