Melkbus signifies a series of farmstead raw milk cheeses made on small family farms outside the city of Gouda in Holland. Translated to English, ‘Melkbus’ means ‘Milk Can’; these were used in earlier times to transport farm-fresh milk to the creamery for cheese making. Each farm was assigned a number that was stamped atop the can and served as its identity.

Today, we celebrate these past farmers by resurrecting the stamped milk cans. Each cheese in the series is made on a single family farm which is signified by the Melkbus number prominently displayed on the label. This is a symbol of natural and honest farming, paying close attention to the traditions of Dutch cheese making.

Kinsman Ridge is a semi-soft, tomme-style cheese with aromas of fresh butter, forest, and cured meat. Young wheels are washed with brine before a natural, mottled rind is cultivated. As it matures, Kinsman’s interior transitions from smooth and firm to a giving and creamy consistency. Flavors are rich, savory, and softly floral, with hints of roasted artichoke and asparagus.

Kinsman’s rustic appearance and decadent texture make it a perfect choice for a composed cheese board or plate. Try pairing with a Sauvignon Blanc, wheat beer, or saucisson sec. Though mottled in appearance, the cultivated, mixed rind is delicate enough to be palatable and does not need to be removed before portioning.

Cheesemakers Mateo and Andy Kehler started the Cellars to expertly mature and efficiently distribute the cheeses produced by local dairy farmers turned cheesemakers.

Trained affineurs age and care for the cheeses, reducing the initial investment and training needs of farmers trying to diversify and ensure the consistent quality of their cheese.
