Under harvesting step, the kernels or pods are harvested from tamarind tree after reaching maturity period. Next thing comes under the process is sorting of harvested kernels. In this method, kernels or pods are broken open to extract the seeds that are further separated by eliminating debris, rotten seeds, stones on one side and keeping the quality seeds on the other side.

Then these sorted seeds are passed through heat for carrying out roasting method; this helps in making seed coat brittle while having minor effect over the endosperm. Once the roasting process is done, seeds are then sent for stripping where brittle coat get stripped from the endosperm.

In the grinding mill, this obtained endosperm is milled to separate it from the germ and manufacture kernel powder. The final product is sent for expert screening for making fine powder and it is later blend with a solvent to obtain tamarind gum powder. The least step is packaging- when tamarind seeds went through different stages and final product is obtained, which is later send to packaging department.
