This Malbec is bright cherry red with a violet hue. It shows intense aromas of ripe, red summer fruit, herbs and

subtle warm spice. The palate is rounded yet fresh with soft, supple tannins. This wine will partner well with lamb

and subtle spices.

WHIG 2015 Château La Fleur des Graves Bordeaux France This blend of equal parts Cabernet Sauvignon and Merlot offers lovely aromas of ripe cherries and blackberries

Medium intensity of aromas with fresh dark fruit, such as blackberries and blackcurrants. Hints of blackberry

Matured in old oak. Deeply coloured, this offers a combination of fruit, floral and savoury notes on the nose and

palate, raspberry, blackberry, violet and smoky spice. Energetic and focused, with engaging purity this has an

elegant finish. This is the perfect match for a juicy red meat, any stew and red deer.

Full of concentration and intensity, this wine will tease, tantalize and linger long after the last sip is gone. A

symphony entrances your senses immediately: juniper berry and spice, with just a wisp of toasted coconut hinting

at the American oak aging. Juicy plums and brawny blackberries are succulent and intoxicating, as the full

bodied structure takes hold. Abundant, yet ripe tannins round out the palate, yet don’t overpower the red

cranberry fruit. Needs a full flavoured dish to stand up to the big flavours in this wine.

Deep red cherry in colour with a dark savoury nose of ripe cherry and herbs. Palate shows considerable power

and earthy character with masses of plum, dark berry and a mineral cherry edge. Robust fruit tannin provides an

inner strength that is long and alluring. This wine is great for dishes with earthy flavours, lamb and chicken.

CHAMPAGNE

For those of us who love Champagne, there is nothing quite like the sound of a popping cork . Anticipation immediately

sharpens the senses as one awaits the clinking of glasses and ultimately the first sip. Nothing but nothing can emulate the

best. The mediocre can be challenged the world over but top Champagne is unbeatable. Quite simply the soil and climate

within Champagne conspired, well before man's interventions, to produce a naturally sparkling wine. Coarse and dull, this

would bear little resemblance to the crystal clear wine we know today. It took the dedication and patience of one Dom

Perignon to produce the basis of what we know and love. It was he who learned to manipulate the presses in order to

produce a starbright wine from black grapes, who introduced the cork in place of oiled hemp as a stopper and who,

perhaps most important, realised the advantages of blending. From his time there have been enormous changes in

procedure and technology, but the fact that the area produced an effervescent wine naturally is proof of the intrinsic

advantages over the rest of the world in terms of geography. Winemakers the world over have become obsessed with the

finer details of the Champagne method and, indeed, have followed its every detail but the final product, however good, is

not Champagne. The vital ingredient is the soil and aspect of the region itself. That said, there are enormous variations in

quality within Champagne and that comes down to the skill of the winemaker. Blending grape with grape, cru with cru is

an art form and distinguishes great from good. The Champagne houses must initially concentrate on the quality of the raw

material which they use and, to this end, close attention is paid to every step from growing to pressing. Thence to the

blend. This blending is what gives the Champagne balance and a house its style. For your enjoyment we have chosen a

range of styles, from our house Champagne, very much in the French style with full well rounded fruit through to Krug.

White

Alsace is known for a great diversity in styles of wine thanks to a wide variety of natural factors, climate, soils etc.

alongside a large number of grape varietals. The wines tend to complement fresh water fish and white meats particularly

well.

LOIRE

The Loire Valley is unwisely considered to be one area since it extends from the Nantes area (home of Muscadet) with a

coastal climate through Anjou, Touraine as far as Sancerre which is really central France and which obviously experiences

a markedly different climate. That said, it is one of the most interesting areas as a result of the great variety produced.

RHONE

The Rhone Valley can most easily be looked upon as two distinct areas separated by the Ardèche. The geography is so

different between the North and South as to enforce quite different growing methods and, indeed, different grape varieties.

Generally, the Northern reds are from the spicy Syrah grape (the Shiraz of the New World) with the Southern wines

coming from a blend of several varieties, often dominated by the Grenache.

BURGUNDY

The Red Burgundy Grape is Pinot Noir, a rather pale coloured grape which produces much less intensely coloured wines

than those of Bordeaux, but whose colour often belies great weight and complexity on the palate. Bourgogne Grand

Ordinaire is one of two appellations which allows the blending of Gamay, the Beaujolais grape, with Pinot Noir. This

gives a much earlier drinking Burgundy. Coulanges is a rare buy in this country coming essentially from Chablis country

in the North where we might be surprised to find a wine of this depth.

With the exception of Aligote, all the White Burgundy wines are made from the ubiquitous Chardonnay grape and yet they

all have a markedly different style. Chablis in the North reflects its northerly climate in its crisp acidity and lean elegance.

The Côte de Beaune's whites are fuller and the best show tremendous finesse. They are enjoyable when young but

undergo a metamorphosis during maturation to become, for those of us who enjoy old White Burgundy, SENSATIONAL!

Even the most straightforward Bourgogne Blanc tends to benefit from a little bottle age. The more robust, hearty wines of

the Chalonnais and Maconnais are hugely different from Chablis. They are full bodied and characterful and represent

excellent value.

Côte de Beaune

The Côte de Beaune commences with the hill of Corton housing Aloxe-Corton, Ladoix-Serrigny and Pernand-Vergelesse.

The fact that Corton Rouge is a wine for keeping which rivals the concentration of a Nuits red, that Pernand-Vergelesse is

soft, seductive and earlier drinking and that the Côte de Beaune magnificent white wines are even more famous than the

reds, age beautifully and rank amongst the very best in the world, gives some idea of the complexity of the Côte.

Chablis is the classic accompaniment to shellfish and flavourful fish and white meats. It is slightly austere in comparison

to the fuller Chardonnays in the South and this complements langoustines, lobster, etc. Petit Chablis encompasses a rather

larger area than Chablis proper and the name identifies wines from borderline Chablis vineyards. It is a wine for earlier

drinking than Chablis from the same year.

Côte Chalonnaise

One of the best value zones in France for quality wines, the Côte Chalonnais is in part calcareous, favouring white wine

production and in part clay, favouring reds. The best known whites are Rully and Montagny which enjoy similar styles

although Montagny is slightly fuller and less subtle than the former. The reds are for early drinking.

Another interesting and well priced area of Burgundy producing wines of note. These tend to be full flavoured wines of a

Côte de Nuits

The Côte de Nuits is devoted almost exclusively to red wines from the Pinot Noir. This northerly part of the Côte d'Or is

much more sharply sloping and narrower than the Côte de Beaune to the South. The best soils for red wine lie lower down

the slope, although there are pockets where optimum soil conditions account for top vineyard names. The great wines tend

towards great potency and concentration. With time, they mature to show smooth elegance and a rich perfumed bouquet.

BEAUJOLAIS

The soil of Beaujolais is markedly different from the Burgundy vineyards to its north. The calcareous soil of Macon in the

North gives way to schistous granite in itself giving the Gamay grape a depth of flavour which it often lacks. There are ten

Beaujolais Crusa, each with its own style. The styles range from light early drinking Regnié through the fuller wines such

as Julienas.

SOUTHWEST FRANCE

This region encompasses numerous small, scattered areas that combine to produce an impressively wide range of excellent

value wines with diverse, but quite discernible, stylistic influences from Bordeaux, Spain, Languedoc-Rouissillon, and the

Rhône. Centered around the small village of the same name, Irouleguy is located in the far south-western corner of France

in the northern Basque Country. Its western and southern boundaries are formed by France's border with Spain.

PROVENCE The region has 3,000 hours of sunshine a year and very little rain – the classic Mediterranean climate. Provence is also

lashed by storms in spring and autumn, often causing difficult and variable harvests. The region has an incredible variety

of soil types and this is reflected in the numerous grape varieties in cultivation. According to Vins de Provence

professional association, the region accounts for 6% of total French AOC wine production for all types of wines. Provence

With production nearly three times that of Bordeaux, or more than the whole of Australia, the Languedoc-Roussillon

accounts for about a third of all French wine made. The sheer scale of production and the intense competition to channel

such volumes through to the market means that in most years supply is greater than demand so prices are kept in check. It

is not for nothing that wines from the South of France offer such great value for money.

BORDEAUX

Claret has long been the natural and favourite source of red wines for Scotland for centuries. Some of the great names

have been shipped to the West Coast uninterrupted since the mid 18th century. The range available is extremely diverse

not only from area to area but within the same appellation as the various microclimates, aspects and soils conspire with the

skill of the grower and winemaker to make Bordeaux possibly the most complex wine region in the world. The Bordeaux

dry white wines have had their ups and downs over the years although it has generally been accepted that inexpensive,

well made dry wine is better than the cheapest dessert wines. As the wines started to enjoy a boom the catastrophic

vintage of 1991 and subsequent price increase stifled aspirations. The very best Bordeaux whites do, however, represent

excellent value.

THE MÉDOC

The style of wine alters more radically over short distances in the Médoc than in any other French red wine district. The

wines are mild and unexceptional immediately northwest of Bordeaux, but from Ludon onwards they become

progressively more characterful, acquire finesse, and – after Margaux – gain considerable body. Beyond St. Estèphe, the

firmness of body of the wines eventually turns to coarseness, and their finesse fades.

Haut Médoc

The Médoc runs along the left bank of the Gironde and is divided into two regions: the Haut Médoc towards the South (the

home of most of the great properties) and the Médoc. The unique combination of gravel, top soil and clay, chalk and

limestone as subsoil is all important in the health of the vines and the characteristics of the wines produced. Vines grown

in atypical soils such as those close to the river do not qualify for the appellation.

GRAVES, CÉRONS, SAUTERNES AND BARSAC

The finest red Graves wines are produced in Pessac-Léognan, good red and improving dry white wines in the centre of

Graves, and the great sweet wines of Sauternes and Barsac in the south. The emphasis in production is on classic red

wines.

Graves

The Graves region is, as the name suggests, known for its predominantly (but by no means exclusively) gravelly soil. The

better wines come from the North of the area. The wines of Graves can show similar intensity to those of the Medoc but

they are, over all, more robust and heartier than the more elegant wines from the North.

THE LIBOURNAIS AND FRONSADAIS

The right bank of the Dordogne River, known as the Libournais district, is red-wine country. Dominated by the merlot

grape, the vineyards here produce deep coloured, silky – or velvety – rich wines of classic quality in St-Émilion and

Pomerol regions, in addition to wines of modest quality , but excellent value and character, in the “Satellite” appellations

that surround them.

Côtes de Castillon This is an attractive hilly area squeezed between St-Émillion, the Dordogne River, and the Dordogne déparetment. Its wine

has long been appreciated for quality, consistency, and value. Firm, full-bodied, fine-coloured wines with dense fruit and

finesse.

Pomerol Pomerol rather defies classification and its sheer diversity in styles goes a long way to proving that soils make essential

ITALY

Northwest / Piedmonte

In the Northwest of Italy, the Nebbiolo grape is king of red wine production, being responsible for wines of world renown

such as Barolo. Also, in Italy the name of the producer is shown which is different from Bordeaux, where it is the name of

the commune. In this region the supremacy of red wines leaves little room for whites, but one native white grape, Cortese,

is responsible for Gavi, a wine of uncommon grace and delicacy.

Northeast

This region which abuts Austria makes wines of an understated, classical and often austere style. Here, a white wine

tradition that parallels Piemonte's devotion to reds, supported by splendidly exposed hillside vineyards, gives us Italy's

most distinguished white wines. The wines are noted for their excellent balance, crispness and acidity. The reds are also

well made, the usual style is fuller and rounder. Northeast Italy can, at best, supply some of the most highly renowned

Italian wines and where good husbandry, microclimate and vinification work in harmony the results are outstanding,

Valpolicella, at its best from the more difficult, rugged slopes which identify the Classico region, is the better known wine

and is available at several quality levels. Amarone comes from the ripest grapes and is a rich, full bodied wine which

balances weighty alcohol with good fruit. Veneto's whites are not in the same league as the Alto Adige or Friuli, but are

nonetheless among the most engaging, certainly the most popular produced in Italy.

Tuscany/Umbria/Lazio

Tuscany was once identified, almost exclusively, as the home of Chianti. Now, despite retaining an almost antiquated,

rural appearance, it has become a highly innovative region. Three of the few wines recognised by legislation as being

Italy's best come from Tuscany - Chianti itself, Brunello Di Montalcino and Vino Nobile Di Montepulciano. In its force,

weight and overbearing style, Vino Nobile is the quintessential Tuscan wine. It derives its lineage from the Sangiovese

grape and for those who enjoy forcefully vinous, solid, spiced sensations in a wine will respond to its intensity. Brunello

Di Montalcino is considered among the most prestigious of Italian wines. It was invented over a hundred years ago by

Biondi Santi and its quality and reputation have been nursed and nurtured ever since. If one is in doubt about how the

terms austere, big and full are applied to wine, a mouthful of Brunello will give a forceful demonstration of their meaning.

This area comprises the regions of Emilia-Romagna, The Marches, The Abruzzi and Mloise. The best quality wines come

Sardinia

Cannonau (a.k.a. French Grenache, Spanish Garnacha) is the most planted variety of grape in sardinia and is concentrated

in the centre of the island. It gives its best on warm, gravely/pebbly soils that limit its natural productivity. The wines are

generally high in alcohol and lower in acidity providing for nice round flavours. The intense scents of dark red berries,

plum and tobacco are reflected in the taste where notes of chocolate and coffee from oak casks make their appearance. It’s

a wine worth aging and does extremely well in blends such as the Mandrolisai (together with red varieties Monica and

Bovale sardo).

SPAIN

Wines have been made in Spain from ancient times. There are records of the Phoenicians buying in the southern regions

and it is probable that Spanish wines were imported into England before the Middle Ages and possibly even in Roman

times. Spain has more land given over to wine production than any other country in the world. The Rioja wines are

predominantly fruity reds with a pronounced oaky nose and flavour. The best of the Catalonia wines rival Rioja and are

dark in colour and high in alcohol.

ARGENTINA

Argentina is the fifth leading producer of wine in the world. The Catena Chardonnay is a fine example of how good a

wine may be when a producer is dedicated in their pursuit of excellence. Red wines from Argentina's top bodegas can

possess considerable flavour dimension and complex aroma profiles. Robert Parker rates Bodega Weinert as producing

South America's greatest red wines and he feels they are the qualitative equal of the finest reds in the world. The ultra

premium Catena Alta wines are made from single vineyard sites and only in exceptional years. Parker gives the Malbec a

Hungarian is one of only two European languages, which hs its own word for ‘wine’ (bor) that is not derived from Latin.

This means that the ancient Magyars already had contact with grapes and wine over a thousand years ago. The climate and

the soil are perfect for wine making in Hungary and this small country embraces 22 wine regions, each with a different

microclimate producing different tastes and styles. Furmint, the main grape of the [Tokaji] region ... is up there with the

CALIFORNIA The preferred wine producing areas of California are the cooler regions to the north including the Napa and Sonoma

Valleys. Generically there is little to be said about these regions as so much depends on the individual winemakers. Napa

is the Indian word for plenty, a very fitting name for such a rich and fertile land. The Napa Valley is regarded as the most

prestigious vineyard county. Being highly prized, land costs determine the production of most quality wines. Cabernet

Sauvignon dominates in the production of red wines although the rather cooler area Carneros to the south benefits

sufficiently from the breezes from San Francisco Bay to allow Pinot Noir to be grown. The wines from Sonoma County

come from the Sonoma Valley, Santa Rosa, Russian River, Alexander Valley and Dry Creek. The Sonoma Valley lies

parallel to the Napa Valley being separated by the Mayacamas Mountains which play a decisive roll in terms of climate.

Dry Creek, Russian River and Alexander Valley have acquired their own individual appellations.

WASHINGTON STATE In recent years, Washington's wine industry has become the fastest-growing agricultural sector in the state. The number of

Washington wineries has increased 400% in the last decade, attracting two million annual visitors to Washington wine

country and creating a two million dollar wine-tourism industry. Located on approximately the same latitude (46ºN) as

some of the great French wine regions of Bordeaux and Burgundy, Washington State wine country now includes 13

federally recognized American Viticultural Areas (AVAs), commonly known as appellations. Three of them share

territory with Oregon State. Climates of individual Washington wine regions differ dramatically. Cross cut north to south

by the Cascade Mountains, Washington State is more mild and lush to the west of this volcanically formed barrier than the

lands to its east. Vineyards on the east side of the Cascades grow 99% of Washington's wine grapes, and 12 of the state's

13 official AVAs/appellations are located here. The macro appellation of the Columbia Valley encompasses the smaller

Yakima Valley AVA, Rattlesnake Hills, Red Mountain AVA, Walla Walla Valley AVA, Horse Heaven Hills, Wahluke

Slope, Snipes Mountain and Naches Heights. The Columbia Gorge AVA begins at the western edge of the Columbia

Valley AVA and continues west and south to areas along the Columbia River in both Oregon and Washington.

AUSTRALIA

Although bulk wine still accounts for a large proportion of turnover in Australia, the general trend moves towards ever

improved quality. That said, scant regard for designated wine regions means that blending of different grapes from any

number of regions continues. There is little by way of guidance therefore on a label save the winemakers name. Whether

by luck or by design it was decided to market wines using grape variety. Traditionally Shiraz, a rich, soft, peppery red,

dominated red wine production but the ubiquitous Cabernet Sauvignon is now enjoying great success. Full ripe forward

fruit dominates in soft easy drinking wines which are low enough in acidity to suit most palates.

NEW ZEALAND Despite the situation of New Zealand geographically, its mountains, its lack of land mass in relation to surrounding ocean

and wind conditions all conspire to provide a surprising range of growing conditions which are, in the main, rather cooler

than Australia. This relative coolness allows for subtle wines with some finesse.

CHILE Of all the wine-producing regions around the world, Chile has for years offered the best value. Unfortunately in the last

decade the quality has slipped to be replaced by quantity. That said, natural conditions are ideal for grape growing in

Central Chile. Chilean Cabernets have led the way with original flavours that are rapidly gaining in quality, while Merlot,

Sauvignon Blanc and Chardonnay are now showing equal promise. A new region called Casablanca is proving especially

good for Chardonnay. Several French and California winemakers have invested in vineyards and wineries and as well a

number of the better local producers are once again turning out finer wines while keeping prices stable.
