Happy Sunday, Ono readers! Iknow, I know, it’s the last day ofthe weekend before the Monday

blues set in, so enjoy today for all it’sworth! Spring is in full bloom, and beforewe know it warmer temperatures andsunny skies will hint that summer is wellon its way. With that said, turn upLMFAO’s Party Rock Anthem and bringon them cocktails.

Wait. Hold up. I don’t drink alcohol,but that doesn’t mean the party shouldcome to a screeching halt — it’s Easter,after all. Anyone who knows me knowsfull-well that I don’t need a drop ofalcohol to have a good time. Trust me,natural highs are the best.

Yet, I do love my virgin cocktails suchas lava flows, pina coladas and more.They have this magic way about themand makes you feel like you’re on vacationwith the very first sip. Maybe it’s thearray of vibrant colors, fun straws andfresh fruit garnishing — whatever it is,when cocktails are involved it’s bound tobe a blast.

Tropics Bar & GrillWhenever my work brings me to

Hilton Hawaiian Village’s Tropics Bar &Grill, I know I’m in for a treat. Thisworld-class dining establishment catersto both locals and tourists alike, andoffers an invitingly picturesque view ofDiamond Head, in addition to temptingly

delicious grinds and a super-sized bar —the perfect place to quench your thirstand enjoy a cocktail.

Tropics Bar is open to patrons from 11a.m. to 10:30 p.m. daily, and bartenders,such as Rocky Nago, are more thanhappy to serve up virtually any cocktailyou can imagine, including the resort’ssignature Blue Hawaii, Classic Mai Taiand more.

Yet, being that I don’t consume alcohol,I would assume that there really isn’tmuch for me to enjoy. Well, guess what?Nago proved me wrong. There’s plentyfor the non-drinker to sip on. Where do Ieven begin? First there are Book ’emDanno ($7), virgin Pina Colada ($8) andvirgin Lava Flow ($8). My, oh my!

“By far virgin Pina Colada is the mostpopular non-alcoholic drink,” Nago says.“It’s one of those cocktails that is definitelymore established and it’s something thateveryone is familiar with.”

Sweet and creamy, it’s safe to say thatyes, “I like pina coladas, and gettingcaught in the rain.” At first sip, you’lldefinitely notice a strong emphasis onthe coconut flavor blended with a hint ofpineapple. It is absolute heaven! But wait… it gets better. My personal favoritewhen it comes to non-alcoholic drinkshas to be a virgin lava flow, and Nagoand his team can definitely mix up one ofthe best virgin lava flows you’ve evertasted. If you thought the virgin PinaColada was good, Nago adds a bit ofstrawberry puree to the resort’s Lava

Flow creating an eruption of flavors inyour mouth. Now, that’s something tosmile about.

And after a sun-soaked day on the beach,cool off with Book ’em Danno, a one-of-a-kind drink created by Nago himself. Listedon the menu as a non-alcoholic refresher,this drink pays tribute to Hawaii Five-0,and the vibrant red and blue colors signifynone other than police lights.

“Book ’em Danno has been catchingon lately and tastes just like an OtterPop,” Nago says. “It features blue raspberry

“We’re very adamantabout entertaining guestsin a true Sicilian fashion,”says Conan Paik-Rosa,general manager ofTaormina. “We’re anauthentic Sicilian restau-rant, and a lot of peopleask what’s the differencebetween Italian andSicilian cuisine. When itcomes to Sicilian cuisine,we use a lot of freshingredients. We don’t useheavy tomato sauces orcream sauces, instead we

use a lot of fresh toma-toes, fresh seafood, whitewine and lots and lots ofolive oil. Sicilian cuisineis a lighter cuisine — sim-ple, but very elegant.”

Taormina opened itsdoors in November 2007,and pays homage to thetime-honored cuisine ofSouthern Sicily with con-temporary style and flairall within an invitinglywarm and modern, family-friendly atmosphere (dresscode is casual). And exec-utive chef Hiro Mimuraups the ante on a dailybasis as he expertly pairsthe freshest of pastas withthe highest qualityseafoods and meats.

“I’ve been to Taormina,Italy, many times. Food isthe culture there, peopleare always eating,” saysMimura, who has dazzled

diners at restaurants acrossthe globe with his extraor-dinary culinary tech-niques. “I’ve worked inTokyo, Florence andSicily,” he states. “Mymentor is chef LucaPecorini, who I workedwith in Florence. He’sbeen an inspiration to me.

“Sicilian cooking incor-porates a lot of fruits,nuts, cheeses and seafood,in addition to a lot ofherbs and spices such ascoriander and cumin,”Mimura says.

As the only Sicilianrestaurant here in theIslands, it’s no surprise thatthis gem of an eatery is fre-quented by both locals andtourists alike. In fact, Paik-Rosa recommends dinersmake reservations at least aweek in advance to guaran-tee a place at this hot spot,

especially during the din-ner rush.

“We have a grand menuaka our regular menu, amid-day selections menuand a five-course menu forpatrons to enjoy,” Paik-Rosa says, noting that thefive-course menu andgrand menu are availableall day. “We highly recom-mend the five-coursemenu ($60 per person)because it’s the perfectamount of food with eachcourse, and it allows ourguests to sample some ofthe most popular items offof our grand menu.”

tion of marinated squidand octopus. Then cleanseyour palate with a refresh-ing bowl of Chilled GreenPea Potage Soup toppedoff with olive oil, parsleyand croutons. Next, yourSicilian culinary journeycontinues with a pasta ofyour choice, whether it beSpaghettini alla Taormina(spaghettini with pan-friedshrimp, fresh tomato, aru-gala and basil lightlytossed with garlic andolive oil) or Ricci di Mare(spaghettini with fresh seaurchin and garlic).

“You can upgrade yourpasta choice to Ricci diMare for an additional$10,” Paik-Rosa explains.“We just recently addedthis to the five-coursemenu because this unipasta is our signature dish.It’s really popular and a lotof people want to try it.”

As for your main course,select from three exquisiteentrees of Seared Ahi Tunawith Salsa Cecca,Hawaiian tuna filet withfresh tomato salsa servedwith mixed greens, beetsand goat cheese; Filetto diManzo, grilled beef ten-

derloin with a balsamicreduction; or Pan RoastedDuck Breast, thinly slicedduck breast drizzled withan orange balsamic reduc-tion sauce.

“Beef tenderloin wouldhave to be the mostrequested of the three,”Paik-Rosa says.

Finally, the five-coursemeal ends on a high notewith the sweetest delight.Drum roll, please, forCream Caramel withItalian gelato splashedwith a homemade straw-berry sauce.

“We have regularpatrons who never tire ofthis place and come inevery week,” Paik-Rosasays, adding that therestaurant’s extensivewine list lures in manycustomers as well.

“We’re a well-roundedrestaurant,” he adds. “Theambiance is amazing,service is amazing and, ofcourse, the food is amaz-ing. We’re unique, and themajority of people reallyappreciate Sicilian cuisineand are willing to try it —and we’re happy becauseof that.”

Just in time for Mother’s Day andgraduation season, CantonSeafood Restaurant introduces

new party menus and is offering a vari-ety of one-year anniversary specials.

The Chinese eatery specializing inauthentic Cantonese-style dishesturns one this week, and in celebra-tion will offer complimentary soup(egg drop soup or seaweed soup)with its lunch and late-night specials.Also, two of its signature dishes arebeing offered at a special price: DeepFried Flounder with seasoning herbs

regularly priced at $15.99 is now$9.99, and House Crispy Chickenregularly $15.99 is now $4.99 (half).

“Our food is real Cantonese-style,not chop suey,” says manager EdwinChen. “We serve real Chinese food.A lot of Chinese people come andsay our food is the best Chinese foodhere. Also, we give big portions, andour food is reasonably priced.”

There also are some local favoriteson the menu, such as Pork Chop withSalt and Pepper ($10.99) that ispleasantly juicy inside and perfectly

crispy on the outside.The lunch and late-night special

menu features 50 different plates,including the very filling Crispy GauGee or Soft Gau Gee Mein ($6.99),which has broccoli, Chinese cabbage,carrot, mushroom, shrimp, chicken,pork, char siu, water chestnut andhouse special sauce, and comes withfour pieces of crispy gau gee. Also a

must-try is Combination Plate($7.99), which consists of soup, choisum with oyster sauce, two crispywon ton, and choice of house specialsauce ginger and onion lo mein, gon

lo mein or Young Chow Fried Rice. Lunch specials are available from

10 a.m. to 2 p.m., the late-night spe-cials from 9 p.m. to midnight, andprices range from $5.99 to $7.99.

There are five different partymenus to choose from, pricedbetween $99 and $388. All menuitems, specials and party packagesare available for dine-in and takeout.And coming soon is dim sum!

After 14 years servingfresh baked goods and avariety of tasty and

well-displayed meals, Panyahas more than its fair share offans. And why not? The bistroshave become known as theplaces to go for light, healthyfare served among décor that isboth modern and relaxing. Ifyou didn’t know, Panya also hassome darn fine pupus.

Panya Homemade Gyoza($6.25 for four pieces, $8.95 forsix) are made of pork, shrimpand chives, and are steamedthen pan-fried, which leaves theskin soft and crispy. The home-made citrus shoyu dippingsauce is a nice light comple-ment to the fresh dumpling. Beforewarned, they go fast. Orderthe six piece. Or two.

Spicy Wonton ($7.95) is sim-ilar in filling to the gyoza, butdifferent in texture and has asurprising kick from the chili oilthat is spread over each delec-

table piece. Like the gyoza, thewonton flavor match nicelywithout a single ingredientoverpowering another.

One of the most visuallyappealing options has to beFried Baby Octopus ($9.95).Fried to a golden brown, thebite-sized crispy appetizers arecarefully arranged on the plateto make the flavorful appetizer

even more appealing. Theshoyu and mayonnaise dippingsauce adds a creaminess to theoctopus that is worth trying.

Big props to Salt and PepperShrimp ($8.95). The butterfliedsea creatures are just as theyshould be: sweet, juicy andplump. Pulling off the shellsmakes finger licking a necessityeven if such behavior seems out

of place in such a hip environ-ment. No worries, no one iswatching — just don’t forget tosuck the shells. Seriously. Thesalt and pepper fried into thetransparent shells turns the typi-cally disregarded portions intosomething resembling a highquality potato crisp.

Rice is nice, but for slurping,twirling fun, there’s nothing torival noodles. A go-to dish again

and again, noodles just hit the spot anytime of day. Whether it’s Chinese,Japanese, Korean, Thai, Vietnamese,Italian … the list goes on and on, noo-dles rule, especially if you choose notto eat meat or fish. Served hot, cold, insoups, stir-fries, topped with sauces …the possibilities are nearly endless.

And that’s a good thing, since noo-dles are satisfying, easy to eat anddelicious mixed with vegetables. Andthe fact that they make their way onto

many Island menus makes it easy tofind a meal you know you’ll enjoy.

Nagoya Ramen, conveniently locat-ed in Mililani Shopping Center, is arelatively new kid on the block, butalready has quite a following for itshot, delicious bowls of ramen.

With the recentopening of CurryKing’s second

location at Chinese CulturalPlaza, manager and chefShane Yang can’t help butshare in the delight.

“We first opened at thefood court at WardWarehouse this pastSeptember, and now it’sgreat that we have anotherlocation for people toenjoy,” he says.

According to Yang, CurryKing’s driving mission is tooffer the highest-quality cui-sine at an affordable price.The restaurant specializes infavorites, such as paitanramen, a delicious pork-

based soup served withramen or udon, and, ofcourse, an array of curryselections is a given as well.

“People know us for ourramen and curry, but at ourChinese Cultural Plaza loca-tion we also have Tea LeafSmoked Duck on the menu.Priced at $20, diners receivea whole duck, which isserved a la carte. Yang saysthe duck is moist, tender andgives off an alluringsmoked-tea flavor.

“We marinate the duckovernight and then cook itfor about 20 minutes or so.This dish is a hit with manyChinese customers, but wewant others to try it, too.”

On a late afternoon on a recentweekday, various parties gatheredto enjoy a late lunch in the relax-

ing, elegant atmosphere of The Mandalay.A couple groups of customers leisurelychatted over their meals, while otherswere there for a business meeting. TheMandalay serves up tasty Cantonese cui-sine and Hong Kong-style dim sum in aconvenient downtown location, making itthe perfect place to enjoy a casual lunchwith friends or add a little spark to a meet-ing. Small alcoves also offer a place forcouples to enjoy an intimate dinner.

The Mandalay boasts an extensivemenu that features a range of dishes —from seafood and meat to a growingvegetarian selection. Linda Chan, whoco-owns the restaurant alongside herhusband, explains that The Mandalayoffers traditional cuisine that can befound in Hong Kong, as well as locallyinspired flavors.

The restaurant serves dim sum, which iscooked to order, from 10:30 a.m. to 5 p.m.daily. The most popular dim sum dishesinclude Shrimp with Chive Dumpling,Scallop with Spinach Dumpling andSeafood Bundle, which includes fish fil-let, shrimp, mushroom and baby cornwrapped with bean curd. Each dim sumdish is priced according to size (pricesrange from $2.50 to $4.95).

“Everything is made by hand,” Chansays. “A lot of workmanship is involvedwith the dim sum.”

Apart from dim sum, regular menu

items include Award-Winning Deep-Fried Chicken Wing ($10.95), PekingDuck with Buns ($30 for a whole duck,and $16 for a half) and Mongolian Beef($10.95). Chan says that one customerfavorite is House Special Chow Mein($10.95), which features fish fillet, shrimp,scallop, cuttlefish and mixed vegetablesover noodles.

For one interesting option, try MixedSeafood in Taro Basket ($17.95 for asmall; $38 for a large), which features var-ious types of fish and vegetables — all ina tasty taro bowl.

On top of all of these quality dishes, asof recently, vegetarians can enjoy a coupleof new menu options created with no-meat diets in mind. Just a couple of weeksago, The Mandalay has added two newdishes: Vegetarian Scallop with Baby BokChoy ($11.95) and Shredded Tofu withBroccoli ($10.95). The restaurant also islooking to add more vegetarian dishes inthe near future.

“Nowadays, people are more healthconscious, and they try to eat morehealthy,” Chan explains. “People are look-ing for more vegetarian dishes, and wehave had many requests for these items.”

The Mandalay also has many morevegetarian menu items, such as VegetarianBean Curd Soup ($3.95).

For more new options, customers won’thave to wait long. The Mandalay plans tounveil a new menu in June.

Although The Mandalay opened fairly recent-ly, co-owners Linda Chan and her husband,Larry, are longtime restauranteurs. The cou-

ple moved to the Islands from Hong Kong in the1960s and got their start in the restaurant industry bussing tables. Inthe 1990s, with the help of other family members who had moved to theIslands, they started their own restaurant — the now-closed chainEastern Garden. After deciding to consolidate their efforts into one

restaurant, the Chans launched TheMandalay in 2006.

Located on Alakea Street, The Mandalayhas become a hub for downtown workers.After all, The Mandalay has a number of fea-tures that appeal to the busy downtown set,such as the Pau Hana Takeout Special. Thespecial is offered from 3 to 6 p.m. Mondaythrough Friday, excluding holidays.Customers have a choice of three entreesfrom six different categories: Noodles andRice, Fish, Chicken, Tofu, Beef and Pork andVegetables. Samples of options are CrispyGau Gee Mein, Stir-Fried Fish Fillets, BlackBean Chicken and Beef Broccoli. Three entreescost $23 total.

Another quick and easy option is the ExpressHours menu, which is offered from 10:30 a.m. to2 p.m. Monday through Friday. This features aplate-lunch style meal, and customers canchoose one entree ($5.50) two entrees ($6.50)

or three entrees ($7.50) per plate from options such as Eggplant with Pork,Orange Chicken, and Sweet and Sour Spare Ribs.

In addition to serving the needs of the weekday workers, The Mandalayalso has established itself as a premier place to host a party or hold a meet-ing. Co-owner Linda Chan explains that The Mandalay often hosts birthday,wedding or anniversary celebrations, in addition to large meetings for organi-zations. To fuel your party or meeting, The Mandalay offers lunch and dinnerbanquet menus; there are three set menus for lunch, and four set menus fordinner. Each features a variety of dishes and can feed up to 10 people.

Nuuanu Okazuya isknown for servingthe kind of tradi-

tional okazu and localdishes that remind you ofchildhood. As the eatery’stagline suggests, one biteand it’ll taste “… just likehome.” But owner MarkKitagawa and managerJohnathan Mosley alsohave a few tricks up theirsleeves when it comes toputting a new twist on anold favorite. Whether clas-sic or inventive, each culi-nary pleasure is preparedwith a dose of comfort.

“It’s not always tradi-tional, but that’s comfortfood. Something thatMom might have made, oryour aunty put together,”says Mosley. Take OxtailStew ($4.75, small; $9.50,large; $7.85, plate), forexample, an irresistiblestew version of a localfavorite. Or there’s tempt-ingly delicious Beef Stew($4.50), the quintessentialhomey dish. Both mealsare flavorfully preparedfrom scratch and servedwith rice.

When it comes toground-breaking eats,there’s one Nuuanu spe-cialty Dining Out has been

dying to try — fishcakes(80 cents-$1.40). Theeatery is fluent in up to 18varieties and it’s notuncommon to encounter anentirely different selectionof fishcake available fromday to day.

After taking over themore-than-30-year-old del-icatessen from theNagamine family in 2007,Kitagawa assembled hiscrew to build on the varietyof fishcakes offered by theprevious owners. “It’salways an expansion ortwist, we don’t do one fla-vor,” explains Mosley.

While the charming spothad already sold out of oneof its best-sellers, GoboFishcake, by 9 a.m., Plain,Hot Dog, Boiled Egg,Vegetable, Furikake,Chives, Shrimp, ViennaSausage and Crab andOnion took Dining Out tofishcake heaven.

The cakes’ slightlycrispy shell and soft,chewy interior make themthe perfect base to add fla-vors to. For an extra kick,try Mosley’s SpicyFishcake made withChinese chili paste andsprinkled with cayennepepper. Kitagawa has hisown tasty interpretation ofa Spicy Fishcake as well,

made with a variety offresh peppers.

As Mosley describes,“People buy out all of theirfavorites. Doesn’t matterwhat’s up there. It’s allcomfort food.”

The taste for Filipino cuisine is rap-idly expanding internationally.Max’s of Manila has more than

125 locations in the Philippines, 10 loca-tions in North America, and it has edgedits way into the Middle Eastern marketwith two restaurants now open in Dubai.

Whether it be the first restaurant,which was created by MaximoGimenez’s niece Ruby, who as a childhelped Gimenez run a cafe in QuezonCity, Philippines, after World War II, orthe newest franchise that opened lastmonth in Vancouver, it is crucial that themenu and quality remain faithful to theheritage and tradition from which itoriginally blossomed.

On Oahu, Max’s of Manila’s generalmanager Malay San Luis and her staffare doing their part to re-create the hos-pitality that Gimenez and Ruby offeredto local Filipinos and occupationaltroops in the ’40s. Max’s is now offeringan adaptation of the common Laing dish,

which is basically a taroleaf stew.

Priced at $12.50,Max’s guests can enjoySpicy Laing Tilapia.

“It is a boneless tilapiafilet that is preparedlightly crispy and toppedwith the laing or stew oftaro that has been sim-mered in coconut milkand has a hint of spice,”says San Luis.

Japanese Nabe Restaurantprovides the perfect reme-dy. No, not free tax service... a special on its deliciousnabe!

“On April 15-16, for taxday, we are promoting aspecial shabu shabu set,”explains restaurant co-founder Issei Kazama. “It’sgoing to be one pound ofKobe Beef Shabu Shabufor $17.95 for lunch anddinner, on just those twodays. We’re calling it the‘Tax Relief Day’ special …it’s just our way of helpingout everybody who has topay taxes.”

Although the TaxRelief Day special onlyapplies the weekend ofApril 15-16, Ichirikioffers its customers anEarly Bird Special.

“Our Early Bird Specialis only Monday throughThursday from 5 to 6 p.m.at both of our locations,”Kazama confirms. “As longas they (customers) orderbefore 6 p.m., they get 25percent off their nabe.”

Kazama and his partner,Riki Kobayashi, openedthe first Ichiriki restauranton Piikoi Street in 2006.Since then, the restaurantexpanded and opened its

second branch inWestridge last June. Bothlocations tend to be equallycrowded, according toKazama, and reservationsare recommended.

“We (Riki and I) openedit (our restaurant’s firstlocation) because we reallylove nabe,” says Kazamaof the Japanese hot pot.“Riki trained in Japan in ashabu shabu restaurant,and we thought it (a nabe

restaurant) would be agood fit for Hawaii. TheAiea location is a biggerspace so if there’s a last-minute large party reserva-tion, we can take larger

parties.”When it comes to the

eatery’s “uniqueness” fac-tor, Kazama mentionsboth the food and the cus-tomer service.

“Our food is definitelyunique — I don’t believe

there’s another restaurantthat specializes in Japanesenabe on the island,” hesays. “We also emphasizeour customer service; wedon’t want our customersto go home unhappy.”

At Ichiriki, an assort-ment of nabes is served onthe eatery’s lunch and din-ner menu. For these nabes,customers must first selecta soup base and a choice ofmeat (chicken, pork orbeef). For an additional$1.50, customers canchoose to finish their mealswith ramen, udon or zosui.Soup upgrades — choicessuch as Kimchi, Curry orPaitan (pork broth) — areavailable for an additional$2. Nabes are served withmany different ingredients— including Chinese cab-bage, tofu, chives and shi-itake mushrooms — aswell as rice.

While Ichiriki Nabe($11.95 lunch, $21.95 din-ner) — made from shoyu-flavored soup — continuesto be the eatery’s signaturedish, other popular dishesinclude Tomato Nabe($13.95 lunch, $21.95 din-ner single, $45.95 dinnerkami) — featuring a toma-to-based soup stock — AhiPoke appetizer ($5.95) andU.S. Kobe Beef Kalbi EyeShabu Shabu ($24.95 lunch,

$28.95/$37.95 dinner).“Kobe Shabu Shabu is

really popular and we thinkit’ll be really popular withthe (upcoming Tax Relief)special,” Kazama says.“When people are tryingto go for something new,our Tomato Nabe is verygood. Our Ahi Poke appe-tizer is another dish Iwould recommend.”

Changes are on the hori-zon for Ichiriki, with thepossibility of a new menubeing introduced this sum-mer and a new restaurant

branch. Amid the upcom-ing changes, though,Kazama emphasizes thatgood customer servicewill always be a priority atIchiriki.

“Our nabe comes fromthe heart,” he says. “Wereally care what our cus-tomers experience … wetry to do our best to makesure it’s a memorable din-ing experience. Customerscan expect to get a staffwho will do 100 percent tomake them happy … andgood nabe as well.”
