Future of Food: Areas of Impact

• Consumers shop for new tastes, cuisines, and possibilities. They rely on online research, food blogs, and apps when shopping for food

• Millennials’ “need it now” and are willing to buy foods from various convenient channels such as online and mobile delivery

• Technology is disrupting the way people shop for food, particularly with regard to personalized shopping channels (e.g., Amazon Fresh, Easy Button, food ordering apps, etc.)

Shopping

• Consumers are willing to pay more for an eating experience shaped around pleasure, diversity and quality

• Food has become a form of entertainment and self expression. Social media is the place to share and discover food memories

• Food blogs, celebrity chefs, and cooking shows expand culinary horizons and tastes

Consumption

• Consumers have developed greater awareness of food borne illnesses and (e.g., listeria outbreak in milk, salmonella in chicken, etc.)

• Product recalls have raised consumer questions about food and where it comes from (e.g., Chobani yogurt recall)

• Customers have developed growing concerns regarding GMOs and environmental sustainability of food. As a result, usage of non-GMO food products have grown rapidly.

Food Safety

• Consumers are more concerned with health benefits of food and are willing to spend more on healthy and locally- sourced foods

• “Organic” is now a regulated term by the USDA due to high demand for organic foods

• Restaurants and grocery stores have responded with incorporating minimally processed/organic ingredients in products
