The Years Hottest Wedding (literally)The Fitzgerald family celebrated the wedding of their eldest Son Terry to Mingqian Li.

The ceremonies took place in Beijing in China and in Paphos, at the picturesque church of Ayia Kiriaki, the Church by Saint Paul’s Pillar.

The summer saw the Fitzgerald Family meeting up in Beijing for the Chinese ceremonial part of the celebrations which were conducted in the courtyard of a 150 year old Restaurant in downtown Beijing.

The family then returned to Cyprus along with Mingqian’s parents Chaoran and Chunguang for the celebrations in Paphos where they were joined by the Polish members of Anna’s family. It turned out to be one of the hottest and stickiest days of the year, but Terry showed great resolve maintaining an air of composure whilst wearing the wedding suit.

After a brief stay in Cyprus the happy couple have returned to china and will make their home in Shanghai. Mingqian is busy working on her doctorate in International Law at Shanghai University and Terry is happily employed at Evapco, an American subsidiary, located in Shanghai. We wish them a long and happy life together.

Our sincere thanks goes to Mingqian’s parents, all our friends and relatives who come from Australia, Poland and Japan to join in the celebrations.

Cypriot Cuisine

This month we look at an old favourite of people visiting and living in Cyprus. Noted for the tender meat and aromatic sauce making it one of the best known dishes on the island.

This gorgeous beef stifado recipe is a

traditional Cypriot and Greek casserole with beef and onions - perfect winter comfort food. Serve with lots of crusty bread to mop up the aromatic sauce. Originally believed to have originated on the island of Corfu, it is also typically made with rabbit, which you can substitute if you wish.

Ingredients;

4 tablespoons olive oil 1 small sprig of rosemary1 kg tender beef, cut into large cubes900 ml water2 tablespoons tomato puree

salt and black pepper3 tablespoons red wine vinegar4-6 tablespoons vegetable oil700 gr. small onions (the pickling size), peeled and left whole1 small glass red wine5 cm cinnamon stick1 teaspoon demerara sugar5 grains allspice

Serves 4! Heat the olive oil in a large saucepan and brown the meat in it. It will produce a lot of moisture but persevere until it has all evaporated and the meat starts to turn golden. Slowly pour the vinegar over it and, when the steam subsides, add the wine. Then add all the remaining ingredients except the vegetable oil, onions and sugar, cover and cook slowly for 1 hour or until the meat is almost tender.

Heat the vegetable oil in a frying pan and add as many onions in one layer as it will take. Sautee them gently for about 15 minutes, shaking and turning them over until they brown lightly.

Lift them out with a slotted spoon and spread them over the meat, distributing them evenly. Repeat until all the onions are done. Sprinkle the sugar over the onions, cover and cook very gently for 30 minutes, until the onions are soft but not disintegrating. Do not stir once the onions have been added, but rotate the saucepan occasionally to coat them in the sauce.

Paphos TransportIf you visit Paphos or plan to live here, you may not always want to drive and so there is a website that gives details of all the bus routes, timetable, maps and prices.

All Paphos routes now have fixed prices €1 for a one way ticket and €2 for a daily ticket. Such good value - for example, a bus ride from Coral Bay to the Waterpark costs only €1, but even better value, for the same amount you can visit Petra Tou Romiou – Route 631.

This year the festival is focusing on traditional dance, music and song. The performances are held over two weeks at Agia Paraskevi Square in Geroskipou village, just outside of Paphos.

The programme includes a Greek music concert with Alkinoos Ioannides and Socratis Malamas on 14/9, ancient Greek comedy (in Greek) with the “Scala” Theatre on 19/9, classical music concert with the String Quartet “Collegium Cyprium” on 21/9 and an event for the celebration of the World Tourism Day on 26/9.
