Welcome to the new-look That’s Nice magazine! After nine very busy and successful months, we thought it was time for a makeover, so we hope you like it! But don’t worry, the magazine still contains all the goodies you expect to have the most amount of fun possible in the Riviera.

So, what an action-packed month we have. The spectacular Nice Carnival hits the streets for 10 days from February 12th bringing an eco-friendly message with it. Do you see the cute green frog on our front cover? Well, he is the mascot for this year’s carnival and a reminder of why we need to look after our planet. Carnival organisers have gone to great lengths to make this year’s event as environmentally friendly as possible, setting a prec-edent for the rest of the world. A big thumbs up to them, I say.

And gentlemen, don’t forget that February 14th is Valentine’s Day! Don’t be fooled by women’s ex-clamations that it is simply another over-commer-cialised day … they are secretly expecting a rose and dinner. Luckily, we’ve got some of the city’s best restaurants listed right here in the magazine!

It’s not just Nice that erupts into a flurry of festivity this February. In Menton, they are celebrating all things citrus with the Fête du Citron, while in Man-delieu there’s an entire festival dedicated a fluffily yellow flower – the mimosa. If those are not to your liking then I know this will be … a whole trade fair dedicated to chocolate, bread and love, in Antibes.

There you go, something for everyone this month!You can find information on all these events in this edition of That’s Nice, PLUS all your favourites – recipes, cinema releases, live music guide – even some advice on how to get through the cold and flu season.

Nice CarnivalThe biggest and most spectacular carnival in the country and one of the top three carnivals in the world! For ten days, the city of Nice erupts into an extravagant party with huge papier-mâché puppets, exquisitely decorated floats, parades by day and an illuminated fairytale world by night.

The carnival is a spectacular display of modernity blending with tradition. This year’s theme, ‘The King of the Blue Planet’, traces mankind’s wandering’s and mistakes throughout time. It combines modern ideas of ecology with traditional symbols linked to the history of Nice Carnival.

Carnival organisers have taken the radical step of making the event as eco-friendly as possible. LED’s, frescoes on recyclable tarpaulins, low-consumption big screens, do-ing away with power generators, recyclable badges, and a carbon tax for floats and vehicles used in the flower battles. It really is a world-first.

Where did iT all begiN? The carnival is an ancient tradition of overindulgence, the last opportunity for people to eat rich and fatty foods before the forty-day feast of Lent. It became a period in which the Catholic Church relaxed its restrictions and, disguised behind their masks, the people of Nice indulged in activity forbidden at other times of the year.

But it was not to last long. The excesses and frivolousness was soon controlled by the “Abbés des Fous” (Fools’ abbots), and under the influence of the Carnival of Venice, private masked balls developed in the course of the 18th century at the expense of the attractions in the street. The carnival was suspended during the French Revolution, but was born again in 1830, as some thirty carriages were paraded in front of King Charles-Felix and Queen Marie-Christine. Until 1872, the carnival was shaped by the people, with crowds wearing disguises and throwing confetti, flour and eggs at each other.

The carnival soon evolved to include elaborate floats designed by prestigious press cartoonists, and great care was given to the choice of themes and creation of the floats. Being a “Carnavalier” (creator of floats) became a fully-fledged profession.

The CarNival TodayThe Carnival parade is made up of some 20 floats with 30 big heads and 200 associated elements. The flower parade (a 130 year-old tradition integrated with the Carnival in 2005) is the most unique in the world and is an elaborate display of local flora. In fact, 90% of flowers used are produced locally. On each float, extravagantly dressed charac-ters throw 80-100,000 flowers to an enthusiastic audience: gladioli, tokyos, mimosa, gerberas, daisies, roses and carnations.

eNTerTaiNmeNTEntertainment is made up of one third professionals, one third amateurs and one third locals. This year there are special performances by the Flying Artists, the Varnishers and the Elephant from the Planète Vapeur troupe. There’s a Fun Corner on Square Yitzhak Rabin near the Théâtre de Verdure, open daily from 11am-5pm. It hosts a jumble of free green shows and workshops for the kids.

The SPeCTaCUlar FiNaleOn the final night, the papier-mâché giants dance their last dance as their Carnival King is lead to the beach on his throne and ceremonially set alight, bringing the event to a close among a flurry of fireworks.

Courchevel is located at the eastern end of the trois vallées. it has some of the most specatcular scenery in the world and over 150 kilometres of skiable ter-rain.

the infrastructure alone in Courchevel and the three vallees is phenomenal - close to 200 lifts and over 2000 snow cannons. The resort is made up five different base stations and self-contained villages, all well connected and all known by their altitudes:

Courchevel 1850 is the biggest village and the jewel in Courchevel’s crown. Expensive boutiques, gastro-nomic restaurants, shopping malls and bars are con-veniently located throughout the village, while the secluded Jardin Alpin sector is a cluster of extrava-gant chalets and ridiculously expensive hotels.

(Chapelets & Rochers) and blue runs, with scope for off-piste diversions. For more seri-ous off-piste skiers and boarders, there’s the area near Chanrossa lift.

Courchevel 1550 is the most quiet of the villages, with just a handful of chalets, ho-tels and apartments. But once again, access to 1850 is fast and convenient with a high-speed 6-person chairlift and a bubble lift.

Courchevel 1300 (Le Praz) is a cosy, Savoie working village with a very authentic feel, offering everything from a butcher and post office, to quality restaurants and ski shops. It also has hassle-free access to Courchevel 1850 via two bubble lifts – a quick and easy eight-minute journey. The trip back to 1300 takes you on two of the greatest runs in ski-ing … the Jean Blanc and Jockeys black runs.

Courchevel 1350 (La Tania) was established to accommodate the 1992 Winter Olympics, and is now a small village offering a handul of restaurants, bars and shops. It is, however, perfecting for skiing in and out of and is great for families, self-catering and budget holi-days..

want to be, then don’t be put off by its reputation; it is still possible to find affordable accommodation, res-taurants and entertainment. For example, the Cour-cheneige Hotel has a double room with free buffet breakfast and 3 course evening meal for around 150€ per person, per night. Slide in off the slopes for a lunch in the sun at the Courcheneige Brasserie, and enjoy a full buffet, soup, burgers or omelettes for all under 15€ - a steal in resort standards. In the village, there’s the “Refuge” restaurant offering meals for around 10€ cheaper than average, and drinks are all pretty much comparable to Niçois prices. While 1850 is certainly not cheap, it can be enjoyed on a relative budget. Your best bet is to ask the ski rental staff where they go in 1850.

Courchevel 1650 is fast becoming the affordable al-ternative to 1850. It offers an old village centre, cha-lets and accommodation, together with fairly priced restaurants and bars (The Bubble is said to be the best bar here). The pistes of 1650 are less busy (par-ticularly during the French holidays) with cruisey red

Courchevel is arguably france’s most exclusive resort - the Monaco of the slopes; a win-ter getaway for the likes of Danish and Spanish royalty, presidents and film producers. it is the place “to see and be seen”. yet beneath all that glitz and glamour is the largest inter-connected resort in the world, renowned for its black runs and on/off-piste infra-structure.

and, as we discovered, you don’t just have to be royalty to be welcomed in Courchevel. in fact, it is possible to holiday here on a budget!

Dali at 2700 metres anyone? For the 20th anniversary of the death of Salvador Dali, Cour-chevel 1850 has be-come a virtual open-air museum, showcasing 7 original “monumental” works (up to 7 metres high) and 7 original “museum” works. They are among the best known of the Dali cre-ations from the 1980’s. Two of the sculptures can be admired on the slopes as high as 2659 metres with the spec-tacular panorama of the “3 Valées” in the back-ground. The rest can be found at the heart of 1850. Sculptures, prints and paintings are pre-sented at the “Galerie de l’Alpage III”.

après ski:The nightlife in Courchevel is most lively in 1850. For a taste of the glitz and glamour, head to Les Caves (table booking is recommended). Less flashy is the Kaliko, Piggy’s, Milk and The Grange. As mentioned, The Bubble is the best bar in 1650.

Getting there:The resort is situated in the Les Allues valley and the nearest town is Moutiers (15 miles/24km), which has a train station and regular buses to the resort. The resort can be easily accessed from the airport of Geneva (3 hours, 93 miles/149 km), Lyon (3 hours, 116 miles/187 km) and Chambéry (2 hours, 68 miles/110km).A train from Nice requires 2-3 changeovers, takes ap-proximately 8 hours and costs around 90€.

Journey into a veritable cave of fondue, with irresistible melting pots of gooey, creamy cheese and neat little morsels of prime meat cooked in lava-like liquids. While fondue is clearly a cuisine suited to the metabolisms of the French, sometimes, just sometimes, we can indulge in their guilty pleasures.

Le Choucas is a buzzing fondue restaurant in the heart of the old town of Nice. The intimate, cave interior doesn’t leave much elbowroom, but it all works towards the authentic, rustic ambiance of this hearty, mountain cuisine. What’s not so traditional is the welcome white wine sangria you receive as you are seated at comfy lounges while your table is being prepared. It’s affords a unique lounge-bar vibe, and is a great opportu-nity to catch up with friends before food becomes your main priority.

Salads and bruschettas feature on the menu, together with traditional meat and pasta dishes – all reasonably priced. The fondue menu includes beef, chicken, lamb and cheese, and to cover all bases I recommend the mixed meat plate and the Savoyarde (cheese). The fondue comes with a very large portion of house-made fries and sliced courgette, although I think steamed potatoes and vegetables would be a more suitable alter-native to the richness of the fondue.

Now if you are not a fondue-regular, it can take a few attempts to perfect cooking times. So, here are some tips: 1) Don’t overcrowd the fondue pot, it will lower the temperature of the oil. 2)Stir cheese fondue constantly to keep the gooey consistency. 3) Cooking times: Beef rare 15-20 sec., med. 25-30 sec., wd 40-45 sec.; Lamb 1 minute; Chicken 2 minutes. Note that throughout the course of your meal, you may have to in-crease your cooking times, as the juices of the meat will lower the temperature of the oil. 4) Don’t drink water with cheese fondue. The cheese congeals into a ball in your stomach. Stick to wine!

The end result is a full stomach, a night of laughter as you fight to remember which fork is yours, and a reasonable bill - around 20€ per person including wine. To top it all off, you also receive a nice fruity digestive on the house!

Le Choucas

You would expect to stumble upon a restaurant like Café del Mare in a major metropolitan city such as London or Melbourne, certainly not in the beautiful yet inconspicuous port of Beaulieu sur Mer. Yet it was here that we discovered a menu dominated by the delectable influences of Asia, dished up in an atmosphere of class, unpretentiousness and charm. Café del Mare is not exactly cheap, but if you’d prefer your money be spent on satisfaction, then you’ll appreciate every cent.

Café del Mare is a quite a large but cosy restaurant decked out in warm tones, with cream-colored linen drapes and dark chocolate floors, wooden centrepieces filled with metre-high cane, and bonsai trees dotted throughout. The artistic value of Café del Mare extends to the menu, which is presented in a hardbound photo album brimming with Asian, French and Mediterranean dishes. The menu is both in French and English.

Entrées cover everything from house foie gras (19€) to mesculun salad drizzled with truffle oil (12€). And for the mains, it is hard to pass-up the Asian plate - piled high with tempura prawns and vegetables, spring rolls, steamed prawn dumplings, and three different dipping sauces – the perfect choice for that oriental craving. Given its size, the dish is well priced at 23€. Similarly, the seared tuna with sesame seeds and scallops presented on a bed of stir-fry vegetables was faultless (23€). If Asian isn’t your thing, there are fancy burgers, topped with foie gras (for the French) parma ham (for the Italians) or double everything (for the Americans and the super hungry). And the list goes on: pasta, fish and meat. It is the kind of menu that keeps you choosing long after you have left the restaurant.

The wine list is also well priced and covers the classics - Minuty (19€ bottle/4.50€ glass), Pomerol (68€) and Bandol (48€). We had the Chateau St Pierre red, as suggested by our waiter- a lovely drop at just 25€ a bottle.

Café del Mare is a leisurely 15-minute drive from Nice, along the stunning cliffs to Monaco. If the aim of your evening is to dine in style, where the quality of the food matches the decor, then this is your place.

Delhi Darbarbutter chicken, melt-in-your-mouth tandoori, lamb biryani, chilli naan - are your taste buds ready for this? Well, it’s time to spice up your life and head to one of the city’s top indian restau-rants. Delhi Darbar delivers tummy-warming sat-isfaction and value-for-money cuisine. In fact, it is the perfect way to inject a bit of heat into your Val-entines day date this February!

Delhi Darbar is located in the heart of the old town of Nice and offers friendly service with authentic Indian dishes delivered with the right amount of spice.

Upon arrival, diners receive a welcome plate of papa-dums and dips – mint, plum and the most divine gin-

ger/lime chutney. It serves well to wet the appetite and prepare the taste buds for what’s to come. Be prepared to set aside at least 15 minutes to get through the menu, it is extensive and varied. For around 4.50€, you can get a nice entrée of vegetable or meat samos-sa, onion pakoras or Indian salad.

Main dishes are priced between about 7.50€ and 12€. On this night, my friends and I indulged in the lamb biryani – a north Indian classic combining the fra-grance of basmati rice with garam masala and tender pieces of lamb; the ever popular butter chicken – a perfect choice for those seeking a mildly spiced dish; chicken saag – a tasty, nutritious dish made with pu-reed spinach; chicken tandoori –simply executed yet always satisfying; samosas and marinated lamb ke-babs.

The appropriate groans of delight echoed throughout the meal with the ever-present question: do we need more naan? In fact, naan lovers will be delighted with the somewhat rare inclusion of chilli naan on the menu. And beware the cheese naan – it is far too good to share! There is also naan stuffed with coriander and onion, garlic, or nuts and dry fruits.

So, a portion of rice, about 7 naan breads, 6 dishes and two bottles of house wine later, our bill came to just 20€ each. The lunch menu is also very cheap at 9.90€ for entrée, main and dessert. And an evening menu is available for 16.50€.

Look out for these aphrodisiac ingredients on your Valentine’s Day menu:

This is a very simple yet effec-tive technique to help stave off colds and flu. Lemons restore the acid-alkali balance in the

This is considered one of the major steps to-wards boosting the immune system. Why? Because white sugar especially has been shown to decrease the vitality and number of white blood cells, the body’s immune re-sponse to invaders. Sugar also depresses the body’s energy field and makes your blood more acidic, which results in vulnerability to toxins, bacteria and viruses. Music NewsThree generations of rock guitarists come together for It Might Get Loud, a 2009 documentary directed by Davis Guggenheim (An Inconvenient Truth). These are not just your garden-variety guitar gods: Jimmy Page, in his mid-’60s at the time of the film, founded Led Zeppelin, who dominated the 1970s fol-lowing the breakup of the Beatles. As a member of U2, 48-year-old David Evans, better known as the Edge, creat-ed one of the most distinctive and influ-ential sounds of the past quarter century. And 34-year-old Jack White (of the White Stripes, the Raconteurs, and the Dead Weather) was described by one music publication as “the most signifi-cant rock ‘n’ roll figure of the past ten years.” Guggenheim, who followed the three around for the better part of a year, takes us into their individual lives, past and present. There are shots of Page as a young London session musician, with the Yardbirds and Zeppelin, at Headley Grange (the estate where much of the fourth Zep album was made), and at home with his record collection. The Edge takes us to the Dublin classroom where U2 first rehearsed, as well as to the practice room he uses now (never a

virtuoso soloist, he developed a style based on texture and a mind-boggling array of effects); and White, whose in-sistence on authenticity is admirable but perhaps a tad self-conscious, con-structs a “guitar” from a plank of wood, a piece of wire, and a Coke bot-tle (he also plays a recording by the primitive bluesman Son House, featur-ing just voice and handclaps, that White says is still his biggest inspira-tion). The three also converge on a Hollywood sound stage, where they chat and a do a little jamming on Zep’s “In My Time of Dying” (with all three playing slide guitar) and the Band’s “The Weight.” It’s hard to say if the film’s appeal will extend beyond guitar freaks and fans of these particular bands, but at the very least, It Might Get Loud offers some interesting in-sight into the soul and inspiration be-hind some of pop’s best and most popular music. --Sam Graham

A documentary film about Blur, accompanied by a live recording of their performance at Hyde Park is due for release on DVD, through Parlophone Records on February 15, 2010.

The film finds Graham Coxon, Damon Albarn, Alex James and Dave Rowntree set to perform together for the first time in nine years. Intimate new interviews re-count the highs and lows of Blur: from Colchester to Goldsmiths, throughout the heady Britpop years and the band’s headline return at Glastonbury and Hyde Park.

The live DVD concert film was filmed over two nights at Hyde Park in July 2009. The multi-camera edit was filmed in HD by Giorgio Testi for Pulse Films and fea-tures stereo and surround sound options.

The first disc features the film, which directed by Will Lovelace and Dylan Southern. It was filmed around last year’s reformation shows, including Glastonbury and London’s Hyde Park, and also tells the full band’s his-tory with early home videos, rare backstage access and interviews.

The second disc is a full performance from one of Blur’s brace of Hyde Park shows last summer.

Peter Gabriel’s first album in seven years is a Bob Ezrin-produced orchestral covers collection called Scratch My Back. It reportedly features re-interpretations of the folks mentioned above along with Elbow, the Kinks, Talking Heads, Lou Reed, David Bowie, and Neil Young. It’s being called a “song swap,” which implies some artists will also cover Gabriel, or each other, though we don’t have all the details just yet.

Cold War Kids/Behave yourself (EP), Released.

The four friends built their reputation by performing live and the release of three EPs (Mulberry Street Up in Rags and With our Wallets Full) cemented their fan-base as did their increasing profile amongst the blogging community.To date they have released one album, 2006’s Robbers & Cowards which reached No.35 in the UK album charts and squeaked into the US Billboard charts at No.173. It reprises several of the tracks from their earlier EPs and has been well received by the critics.

Spinach & ricotta lasagneThis dish is a guaranteed hit, even with meat-lovers!

850ml milk50g butter1 bay leaf60g Parmesan cheese (fresh), gratedSalt and cracked black pepper1 packet of frozen spinach 12 fresh lasagne sheets50g pine nuts (toasted)1 tbls butter1/2 tsp ground nutmeg200g Gorgonzola, crumbled200g Mozzarella, cut into small pieces

To make the sauce: melt the butter in a saucepan and add the flour. Cook for a few seconds, then add the milk gradually, whisking constantly. When thickened, reduce the heat to the lowest possible, add the bay leaf and cook gently for 5 minutes. Then, stir in 50g of the Parmesan, remove from heat and discard the bay leaf.

Defrost the spinach in a microwave and squeeze out all the water. Put the spinach in a bowl with the ricotta and half a cup of the white sauce. Season with salt, pepper and nutmeg. Mix thoroughly; fold in the Gorgonzola and the pine nuts.

Assemble the lasagne by spreading a quarter of the sauce in the bottom of a large baking dish that has been buttered. Cover with a layer of spinach and a sprinkle of pine nuts and top with lasagne sheets. Repeat the process, adding the mozzarella cheese to the middle layer. Repeat again, finishing with a layer of pasta, the rest of the sauce and cheeses. Place in a pre-heated, 180 degree Celsius oven and bake for approximately 1 hour, until the top is golden and bubbling. Serve with a side green salad.

1 packet ready-pastry dough (brisée)2 small packets Mozzarella cheese, thinly sliced4-6 roma tomatoes, slicedBasilDijon mustardSalt and freshly cracked pepper

Line a tart pan with the dough and cook for 9 minutes or until lightly browned. Set cool.

Spread a light layer of mustard over the pastry, cover with the mozzarella and to-mato slices. Drizzle with olive oil and season with salt and pepper and bake at 180 degrees Celsius for about 30 minutes or until the tart is lightly browned.

Garnish with chopped basil and serve!

Champagne Pear & Cranberry BelliniIn a small jug, combine 1 cup of pear nectar and 1 cup of cranberry juice. Pour ¼ cup of the juice into each champagne glass and top with sparkling wine! Serves 8.

LimboDip the rim of a chilled wine glass in lime juice then salt. Pour in half a shot of Tequilla and half a shot of Triple Sec, fill with champagne or sparkling wine and stir gently.

French 75In a shaker, combine 1 shot of gin, the juice of half a lemon and ½ tsp powdered sugar. Shake well. Pour into a glass over ice cubes, fill with chilled champagne or sparkling wine. Add a twist of lemon peel for garnish.

PoinsettiaInto a champagne flute, stir together 1 shot of Grand Marnier or Cointreau, 1 shot of cranberry juice, lime juice and fill with champagne or sparking wine.
