We can deliver this week, next week or
next month. We can probably deliver
tomorrow if that would help.
Wherever possible, we deliver by overnight courier but a few addresses take two days to reach. Should yours be one of these "two-day" addresses we'll let you know when you place your order. In either case we send your foods chilled in heavily insulated containers with ice packs when necessary.
Finally, the food you will receive is fresh, not frozen, so you can safely freeze it yourself and enjoy it when you are ready.

Classic & Fennel SalamiOne of nature's little miracles! We take carefully selected cuts - shoulder, belly and
back - of British free-range pork, mince coarsely, add a little seasoning, fill into
natural casings and then let the wonderful Shropshire air do its best for us. And, its
best is very good indeed!
Our recipe for Fennel Salami - "Finocchiona" as it is known in Italy - calls for a
judicious sprinkling of fresh fennel seeds along with British pork, peppercorns and
Cornish sea salt. Naturally, our Classic Salami keeps very well in your pantry.

Succulent, tender traditionally Wiltshire cured ham covered in
lashings of our own recipe glaze and finished off in the oven.
I recommend that you freshen up the glaze by popping the entire
ham in a reasonably hot oven (180°C in ours but yours may be
different) for five minutes or so. If you have a half ham, please cover
the open face with a sheet of baking parchment to stop the heat
drying out the first slice.

Shropshire Black Ham - On The BoneCOOKED AND READY TO EAT - UNGLAZED
Like the York, this is a dry cured ham. What sets it apart, however,
and gives the ham its distinctive black rind, is a fortnight spent
wallowing in a special marinade of molasses, juniper and spices. The
hams are left to mature for three months, during which time they
develop their distinctive, salty, sweet flavour. A Gold medal winner at
the Great Taste Awards.

The Shropshire Black Ham StoryThis most flavoursome of hams is the direct descendant of the historic
Bradenham Ham. The Bradenham didn’t begin its life in Shropshire,
or Wiltshire for that matter; it was invented by Lord Bradenham in
1781, and migrated from Bradenham Manor in Buckinghamshire
in the 19th Century. The story is that the butler there fell out with
his employer, moved to Wiltshire and took the recipe with him. He
set up the Bradenham Ham Company in 1781, and continued to
manufacture on that site for almost 100 years.
Sadly, the unstoppable march of big business took its toll, acquisition
after acquisition took place, and before long the manufacture of so-
called Bradenhams was a very unimportant part of a big corporation.
Eventually, the management decided to stop production.
Fortunately we were able to recreate the recipe and although we are unable to use the name "Bradenham Ham", this wonderful ham lives on as our Shropshire Black.

The Quintessential English Ham.We select only the finest legs of British pork and after trimming
them, we apply a measure of saltpetre to the cut face of the leg.
Next, we cover the ham with a generous layer of sea salt. We do this
by hand because every ham is a little different and we adjust the
amount of salt used accordingly. We re-apply the salt several times
then hang the hams for three months or more to give Mother Nature
time to do her wonderful work of dry-curing.
York Ham - On The BoneCOOKED AND READY TO EAT - UNGLAZED
Dry cured and matured over a period of three months, it develops a
wonderful depth of flavour, reminiscent of ham from days gone by. The dry
curing process means that the York Ham is somewhat drier and saltier than
the Wiltshire. A Gold Medal winner at the Great Taste Awards.

Manchego & MembrilloThis characteristic Spanish semi-firm unpasteurised ewe's milk cheese is aged in natural caves for 3 - 6 months, which imparts a zesty and exuberant flavour. Barber's 1833 CheddarMatured for two years, this friendly cheddar is warm and rich

The Barber family have been farming and making cheese
at Maryland Farm in Ditcheat, Somerset since 1833. The
family continues to use traditional ‘cheddaring’ techniques
combined with a unique collection of traditional starter

typical West Country Farmhouse cheddar.

Montagnolo AffinéSupreme Champion at the 2013 International Cheese
awards, Montagnolo Affiné is a delicious triple crème
soft cheese with a natural crust and marbling of
blue veins. It combines the texture and rich tastes
of a triple-crème brie with the distinct and lightly
piquant flavour of a blue cheese. Buttery, rich and
luxurious, Montagnolo Affiné pairs well with medium
to full-bodied wines such as Pinot Noir. Produced with

Tomato Chilli JamMade with the finest natural ingredients by Rosie Macdonald in

Appleby's CheshireA truly spectacular Cheshire! Made for us by the Appleby family on their farm. The Applebys remain one of the last Cheshire cheese makers to make by hand using a traditional recipe, open vats and calico to bind their cheese. Colston Bassett StiltonSmooth and creamy with distinctive blue veins which become
more strongly defined as the cheese matures, Stilton has deep
and complex flavours enjoyed by cheese lovers worldwide.
Colston Bassett is certainly one of the best producers of
this magnificent cheese. Their dairy is in the Vale of Belvoir
where they have been producing fine Stiltons for nearly
a century. An excellent dessert cheese it is one of those
Christmas "must haves". Produced with pasteurised cow's
milk. Not suitable for vegetarians.

Montgomery’s CheddarOften considered to be the standard-bearer of English farmhouse
cheddars. Made in North Cadbury, in the rustic countryside of
southwest England, with unpasteurised cow's milk produced on
the Montgomery family’s 500 year old farm. Aged for 13 months
or more, Jamie Montgomery’s cheddar has a golden interior,
occasional blue veining and a satisfying bite that delivers a perfect
balance and long, lingering finish. In my humble opinion, this
is the tastiest, most satisfying cheddar you’ll find anywhere and I
heartily recommend it to you. Not suitable for vegetarians.

Laura’s Apple and Sultana ChutneyCreated by our daughter Laura, this chutney is so tasty we just
had to offer it to our customers. The perfect partner for cheese
and cold meats. The year-round chutney. In a useful Kilner jar.
Lord LondonMade by Arthur Alsop & Nick Walker in the heart of the
East Sussex Countryside, this uniquely-shaped pasteurised
cow's milk cheese is a semi-soft, clean-tasting cheese with
a natural creaminess and hint of citrus. It has an edible
skin with a light dusting. Suitable for vegetarians.
CHLL Lord London 600g £18
Lincolnshire PoacherSimon and Tim Jones produce this cheese with
unpasteurised cow's milk on their dairy farm situated on the beautiful Lincolnshire Wolds. Matured for 14-24 months, it has been described as sitting somewhere between a continental hard mountain cheeses (such as Comté) and traditional West Country Cheddar with a fruity, nutty taste with a clean sweet finish. Not suitable for vegetarians.
Gorwydd CaerphillyProduced with unpasteurised cow's milk by Todd, Maugan & Kim Trethowan at Gorwydd Farm near Llanddewi Brefi, this tremendous cheese-has a springy, citric, lactic centre with oozy, mushroomy cream under the rind. A true paragon amongst Caerphillies. Not suitable for vegetarians.

Produced by Stacey Hedges and Charlotte Spruce, Tunworth is a Camembert-style cheese that is rich, sweet, nutty and milky with a pleasingly cabbagey flavour (250g). Phillip Stansfield's Cornish
Blue is a creamy, sweet and mild blue-veined cheese hand-made near Liskeard. This lovely cheese was Champion Cheese at the World Cheese Awards 2010 (500g). Appleby's Cheshire is a truly spectacular cheese, made for us by the Appleby family with milk from their own herd. The flavour and texture are exactly what you would hope for in a fine Cheshire, mild with a slight saltiness; moist and deliciously crumbly. All-in-all a lovely cheese (450g). Produced by Charlie Westhead in the Wye valley, Ragstone is a delightful unpasteurised goat's cheese. Firm when young, it softens as it ages with a smooth lactic flavour and fresh, lemony tang (200g). The

As you will see throughout the brochure, we show our hams decorated in various
ways. Unless specifically stated otherwise, your ham will arrive unglazed ready for
you to dress with bread crumbs (not supplied) or glaze as you prefer.
All our products are sent to you fresh and securely packed by next working day delivery, except for smaller items
and those going to more remote destinations. Delivery is not guaranteed for any particular time during the day.
Please let us know as soon as possible if your order has not arrived.
Smaller items may be sent by 1st Class Post and although next day delivery is
usual, it cannot be guaranteed.
If your order is for a specific date, please arrange for delivery at least a few days
before you need it. Remember, all our hams keep for at least three weeks after delivery; it is far better that it sits for a day or two in
your refrigerator than not arrive in time!
If we are unable to deliver on the specified day due to adverse weather
conditions or other circumstances beyond our control, we will endeavour to deliver at the next earliest opportunity and our
liability is limited to this.
Sorry, we are not able to deliver at weekends or on Mondays.
We cannot deliver to PO Box numbers or overseas destinations.

Craster KippersConsidered by many to be the finest kippers in the world and produced only in the small fishing village of Craster in Northumberland. Freshly caught North Sea herrings, known locally as "silver darlings", are split, gutted and washed, soaked in brine, and then taken to the smokehouse where they are cured over smouldering oak and white wood shavings for sixteen hours. Whether you jug them, grill, bake or microwave them, they make a tasty and satisfying breakfast or supper.
