It has been documented that in Syracuse, NY: A Syra-cuse man has been arrested on charges of beating hisgirlfriend to death on Christmas Eve.
All these murders took place on Christmas Day or with-in a few days of the celebration of Christmas. I am heart-broken to hear news of such tragedies. It was my under-standing that this season was the celebration of the birthof Your Son, Jesus. I was told that He came to save usfrom our sins. It is very hard for me to comprehend all ofthe evil that has taken place in just a few short days.These were just a couple of newspaper clippings that Iread. There were numerous of murders that occurred allover the world, during this same time period.
This is my prayer in response to all of this: That Youwould look down on all the corruption and begin to putcompassion, love, forgiveness, and mercy into the heartsof men and women. We need it so desperately. We needto look at mankind as a whole and realize that You madeus in Your image and in the likeness of Your Son, Jesus.
It doesn’t matter which country we reside in, we allwere created the same. We all bleed the same. We allbreathe the same air. We all were birthed into this lifethrough our mother’s womb. Help us to understand andaccept our differences. Help us to see life as You see it.Help us to value what You have given us; LIFE ITSELF.

tilla. Top each with 2 bacon slices.Coat large nonstick skillet with cooking spray;
heat over medium heat until hot. Pour in eggs. Aseggs begin to set, gently pull the eggs across the panwith an inverted turner, forming large soft curds.Continue cooking, moving eggs around until thick-ened and no visible liquid egg remains. Do not stirconstantly.
Spoon eggs on top of bacon, dividing evenly. Foldtortillas over filling to cover, pressing gently.
Clean skillet. Coat with cooking spray; heat overmedium-low heat until hot. Toast quesadillas justuntil cheese is melted, about 1 - 2 minutes per side.Cut into wedges; serve with salsa. Makes 2 servings

Many choose canola oil because it’s a good sourceof omega-3 and monounsaturated fats but has zerocholesterol and trans fat.
The American Heart Association recommendsmonounsaturated and polyunsaturated fats as yourprimary source of dietary fat. Using canola oil canhelp prevent heart disease by reducing its risk factors.
Unlike trans fats and saturated fats, canola oilwon’t increase your risk of developing atherosclero-sis, or hardening of the arteries. In fact, it may helpreduce your cholesterol levels. A study in the journalNutrition, Metabolism and Cardiovascular Diseasesshowed that canola oil improved cholesterol profilesby lowering the amount of LDL, or “bad,” cholesterol.
Canola oil’s omega-3 fatty acids may benefit yourbrain and nervous system. The UCLA BrainResearch Institute and Brain Injury Research Centerfound omega-3 fatty acids improved nervous-systemactivity, which translated into memory improve-ments and better academic performance in children.
Canola’s light taste makes it easy to use in manyways — as a spread, for sauteing, in salad dressingsand in recipes such as this:
Stuffed Mini Bell PeppersYield: 4 servings12 red, yellow and orange mini bell peppers4 Tbsp canola oil2 (3-inch) pieces day-old Italian bread with crusts,
broken into 1-inch pieces
2 garlic cloves1/2 cup fresh parsley or cilantro leaves1 tsp capers1/4 tsp kosher salt1/8 tsp freshly ground black pepperPreheat oven to 450° F. Slice the tops off of the
mini peppers and remove the seeds. Combine 2tablespoons of the canola oil, bread, garlic, parsley,capers, salt and pepper in a food processor. Pulse toform a thin paste. If the mixture is runny, add morebread. If it is too thick, add more oil. Carefully stuffeach pepper with the filling without puncturing thepepper. Fill each pepper to the top. Coat a small bak-ing or loaf pan with 1 Tbsp of the oil. Lay the pep-pers in a single layer in the bottom of the pan.Drizzle the peppers with the remaining canola oil.Bake for 10 to 15 minutes on each side until thepeppers are soft and slightly browned. Serve warmor at room temperature.

Last night we ate a ground hamburger, potato andpasta sauce casserole that has been a family favoritefor decades. What was different about this meal isthat it was made from leftover meat sauce that weate the other night. Since I am still learning the artof cooking for two, I had plenty of meat sauce leftover and no desire to eat spaghetti again so soon.
I’m just like millions of Americans that enjoy ameal, but never want to eat leftovers. Our intentionsare good, but once the plastic container makes itinto the fridge, the contents never make it back ontothe dinner table. Since so many people don’t like toeat leftovers, and we can’t always cook “just enough”food, what are our options?
A quick internet search turned up several web-sites that provided creative uses and recipes for left-overs; Alice Henneman, moneysavingmom.com;cheaphealthygood.blodspot.com; getrichslowly.org;budget 10.com and creativehomemaking.com. Mostof these sites acknowledge people don’t like to eatleftovers, but they do provide innovative ways to usethe food left in your fridge. By using leftovers youcan reduce food costs, optimize the health quotientof your lunches and decrease the time it takes youto prepare your lunch.
Consider the article in cheapheathygood.blodspot.com. They describe the Three Rules ofLeftovers - MSR. Make more than enough. Save theextra. Repurpose it later. If you make more thanenough, you might just get two, three or more mealsto eat. Save the extra, don’t throw food out. Portionit into individual servings and store it in the fridge orfreezer. Label and date it to keep the guesswork outof your next meal. Finally, consider repurposingyour meal. Think of how much money you can saveif you bring your leftovers to lunch the next day.Your officemates will be envious and you won’t beeating restaurant food or paying too much for some-thing you could make yourself.
Moneysavingmom writes about turning grilledchicken into chicken enchiladas one night andcasseroles another. Extra hamburgers becomeSloppy Joe filling one day and chili another. Herfamily now considers it a challenge to come up withcreative ideas for leftover food.
Budgeting101 suggests cooking extra roast beefand gravy one night and having open-faced roastbeef sandwiches with salad later that week. Extramashed potatoes could be potato pancakes lateron?or even the topping for Shepard’s Pie.
On the getrichslowly website they suggest puttingtogether a leftovers’ list and posting it on the fridge.Include the date, the name of the dish and howmany servings are left. And this can work with notjust homemade leftovers. What about that bag ofleftovers from a restaurant that you usually forget toeat? I hate to think of how many times I’ve thrownout a portion of meat that got buried in the back ofthe fridge and no-one thought to open the containerto see what was there. A list (you might even have toinclude the location of the dish) might help the non-cookers in the house find something different to eatthan sandwiches or cold cereal.
Finally Alice Henneman, an Extension Educatorfrom University of Nebraska-Lincoln, has a greatidea for dealing with all the leftover turkey from yourholiday meals. Start with a recipe for a basic turkeysoup that then takes on a different flavor dependingon what ingredients are added. I can hardly write this article without a commenton the safety of leftover food. Start by cooking foodto the correct temperature 160°F for ground meatand 165°F for turkey or chicken as measured by afood thermometer. Make sure you refrigerate orfreeze food within two hours of cooking. Don’t worry;your modern fridge will cool it down quickly. Whenyou get ready to use food again, always reheat foodto 165°F. If you aren’t going to eat leftovers withinthree or four days, freeze the food.
So, along with healthier eating, let’s save somemoney and time by thinking ahead to what we cando with our leftovers. Tell your family that in answerto the classic “What’s for Dinner?” question yournew answer is “Planned overs.” Enjoy.

1 1/2 cups reduced-fat baking mixSugar substitute to equal 1/4 cup, suitable for
baking2/3 cup fat-free milk2 tablespoons fat-free sour cream1 egg or equivalent in egg substitute1 teaspoon almond extract1/4 cup chopped almonds1. Preheat oven to 375 F. Spray a 9-inch round
cake pan with butter-flavored cooking spray.2. In a large bowl, combine baking mix and sugar
substitute. Add milk, sour cream, egg and almondextract. Mix gently just to combine. Spread batterin prepared cake pan. Evenly sprinkle almondsover top. Lightly spray top with butter-flavoredcooking spray.
3. Bake for 20 to 25 minutes or until a toothpickinserted in center comes out clean. Place cake panon a wire rack and let set for at least 15 minutes.Cut into 8 wedges.
