The history of St.Valentine is shrouded somewhat inmystery, and there are beliefs thatmany different people went by thename St. Valentine. One such individ-ual was a holy priest who served inRome, Italy. Some historians surmisethat he was jailed for defiance duringthe reign of Claudius II, sentenced todeath, and became a religious martyr.Pope Gelasius marked February14 asa celebration in honor of his martyr-dom in 496 AD. Today, the Catholicchurch recognizes at least three dif-ferent martyred saints named Valen-tine or Valentius.So how did St. Valentine's Day
transform from a religious holidayinto one far more secular? During thethird century in Rome, Claudius II de-cided that single men served better assoldiers if they were single and had noattachments at home in the way of awife and family. Thusly, he outlawedmarriage. St. Valentine didn't agreewith the views and reportedly per-formed marriages for young lovers insecret. It is this which may have pro-pelled Valentine's Day to be moreabout love than religious obligation.
Another legend says that Valentinehimself authored the first Valentinecard. It has been rumored he fell inlove with a woman -- the jailer'sdaughter -- while in prison and senther a letter. He signed it, "from yourValentine."No matter the origins of the holiday,

It has been documented that in Syracuse, NY: A Syracuseman has been arrested on charges of beating his girlfriendto death on Christmas Eve.
All these murders took place on Christmas Day or withina few days of the celebration of Christmas. I am heartbro-ken to hear news of such tragedies. It was my understand-ing that this season was the celebration of the birth of YourSon, Jesus. I was told that He came to save us from oursins. It is very hard for me to comprehend all of the evil thathas taken place in just a few short days. These were just acouple of newspaper clippings that I read. There were nu-merous of murders that occurred all over the world, duringthis same time period.
This is my prayer in response to all of this: That You wouldlook down on all the corruption and begin to put compas-sion, love, forgiveness, and mercy into the hearts of menand women. We need it so desperately. We need to look atmankind as a whole and realize that You made us in Yourimage and in the likeness of Your Son, Jesus.
It doesn’t matter which country we reside in, we all werecreated the same. We all bleed the same. We all breathe thesame air. We all were birthed into this life through ourmother’s womb. Help us to understand and accept our dif-ferences. Help us to see life as You see it. Help us to valuewhat You have given us; LIFE ITSELF.

What’s low in calories, easy to fix, very economicaland satisfying enough to keep you full for hours?That’s a no brainer — it’s the incredible egg. When you think of satiety, that’s where eggs reallyshine. The combination of nutrients in that egg,combined with uber-protein is what you want whenyou can’t stop for a mid-morning snack. Easy Egg Breakfast Quesadillas1/2 cup shredded Mexican cheese blend (2 oz.)2 whole wheat OR flour tortillas (7”)4 slices Canadian-style bacon (2.5 oz.)4 eggs, beatenSalsaSprinkle 1/4 cup cheese on one side of each tor-
tilla. Top each with 2 bacon slices.Coat large nonstick skillet with cooking spray;
heat over medium heat until hot. Pour in eggs. Aseggs begin to set, gently pull the eggs across the panwith an inverted turner, forming large soft curds.Continue cooking, moving eggs around until thick-ened and no visible liquid egg remains. Do not stirconstantly.
Spoon eggs on top of bacon, dividing evenly. Foldtortillas over filling to cover, pressing gently.
Clean skillet. Coat with cooking spray; heat overmedium-low heat until hot. Toast quesadillas justuntil cheese is melted, about 1 - 2 minutes per side.Cut into wedges; serve with salsa. Makes 2 servings
