B. History of Company

Delaulima&Co’s Profile

Delaulima is derived from Hawaiian Language which means ‘De’ for our tutorial Class D and

‘Laulima’ means company in English and ‘perusahaan’ in Indonesia, so Delaulima&Co means

Company from Tutorial Class D. With this name, we hope that our company will be on top in

this culinary business event.

C. Logo’s Meaning

The meaning of Delaulima’s logo is the same with our theme . As we know that our theme is the

ocean. The blue color means the ocean and the anchor explained that Delaulima is down to earth,

because the anchor always down to earth.

Ngulitik’s Logo explained our main product, it describe that we sell the chicken skin but feel like in a

beach. The blue color means the ocean and the orange color means the bravery.

Delaulima & Co is a corporation focusing on the culinary industry. Established in Bandung on

October 21st 2015 we intend to offer new innovation of foods and beverages.

We decide to make Snacks but can be heavy meal, because our product is chicken

skin variant sauce with rice and potato, and also we are targeting middle to middle-high

The value we want to propose through our product is that an ordinary/abandoned ingridients when processed correctly can transform into delicious and has economic value food

D. Expectations

We expect our product especially Ngulitik could make people realized that ordinary thing can be precious if we creative and always innovated. We also expect that Ngulitik could be trendsetter food which made from chicken skin in Bandung and Indonesia.

E. Customer Feedback

The majority of our consumer like our product. The most product that they like is Ngulitik & Mojito as beverage. They said that Ngulitik is different from other because it is first time in Bandung a product made from chicken skin serve with three variant sauces which each sauce have its characteristic. Although some consumer litte doubt to try our product before because it made from chicken skin that seldom to use be a meal but after they ate that they feel satisfied and some of them buy more product. They also said that our mojito although its fresh & delicious, it is not expensive ;therefore, many consumer especially students feel satisfied.

F. Improvement

We use premium ingredients in order to get optimal taste and search more seasoning that could make it more delicious. Moreover, Always try what is the perfect method to cook that such as oil temperature, how long the cook, and many more.

Preparation

4 weeks before execution days, Delalulima & CO did product research and development, and market research. First, we plan to try making some food from banana, chicken skin, mushroom, and potato. For beverage we try making mojito and one thousand islands (combination of milk, soda, and syrup). The problem is one thousand island cost too much because the ingredients should use top quality brand to get the taste we want. 3 days after first experiment, we held the second experiments. At this event we still try to make crispy chicken skin and fried potato. We eliminate mushroom and banana for some reasons, mushroom’s freshness cannot sustain for a long time, while banana we do not know how to add value to it, and it is hard to cook. Then we decide to produce only crispy chicken skin, potato, mojito, and ice tea. Preparation team initiate survey to many different market in bandung, they are Balubur market, Sederhana market, and Lotte mart. We conclude that ingredients price in balubur market is cheaper than lotte mart and more complete than sederhana market. But one problem is not yet solved, the chicken skin is hard to found. Most of chicken seller only serve a little amount of chicken skin every day and chicken skin freshness is very short, so we need to keep it in freezer. Two days before execution fortunately, we found a chicken meat shop at simpang dago market that sell big amount of chicken skin and with high quality. Beside the ingredients, preparation team also prepare the equipments for execution day, such as cooking equipment, tent, tables, chairs, and many more. We get cooking equipment and chairs from delaulima members in order to compress the budget. We rent tent from our friend in UNPAD. The problem we face is that we could not found stove until the 2 days before execution day. Fortunately, other company need a cool box so they switch their stove with our cool box. The day before the execution day all equipment moved and stored at one of delaulima member house (Ramdhani’s house). Two days before execution days we buy most of the ingredients except chicken skin, and vegetables. We take chicken skin at dawn so the condition will be fresh all day in execution day.

11 November 2015: On National Heroes Day we post a picture about National Heroes Day and we also use this momentum to promote our company.

12 November 2015: We post a picture about Fathers Day and keep reminding them about our company

13 November 2015: We did a photo shoot for our teaser video and picture at Galeri Apartemen Ciumbuleuit 2 swimming pool.

14 November 2015: We post the teaser video on Instagram and line.

15 November 2015: We introduced our top product which is NGULITIK! to social media

17 November 2015: We did an endorsement to some of people in Bandung, we also held a Games on our social media account to attract more customers and to help socializing our company.

C.Rundown

D.Explanation

Rafi as supervisor he always briefing us

before we opened the booth & always check the

stocks .Ramdhani (COO) has already brief the

operation team the night before on each team

member’s task. There are slight differences in job

assignment for execution day. Nadine, Gideon, and

Diah will be in charge of cutting and smearing the

chicken skin. Haekal and Affan Syafeeq will be in

charge to make the beverages. Putri Nur and

Ramdhani will be in charge of frying the chicken

skin and fries. Nadiya Novha is in charge of adding the side dish and adding sauce. Monica and

Miftahul Ichsan is in charge of packaging the final product. For re-stocking, the person in charge

is Renandra and Izzuddin. After briefing the male members start to pack all equipment to

Ichsan’s car. November 21st 2015. The kitchen members bought the chicken skin in Traditional

market of Simpang Dago around 5 a.m. After that Nadine and Diah clean and cut it into mouth

sized pieces at Ramdhani’s house, which located in Tubagus Ismail 6/22. At the same time the

other Delaulima member (Ramdhani, Natsir, Rafi, Ichsan, and Adri) built the tent in Lansia Park

in front of Relliance. At 6 a.m. half of the kitchen member went to the Delaulima’s booth and

and Gideon started to flour the chicken skin

and fried it to make Ngulitik. Gideon also

helped the kitchen member to cook the rice,

so when the customer arrived we were

already prepared to serve them. And then at around 7.15 we served our very first customer. The

flow start from Nabila Tsabitha, who was in charge as our cashier. And then she told Monica

Rosavina which sauce and side dish that the customer’s

order. After that she told the nearest kitchen member,

Nadiya Novha which side dish that the customer wanted, it

could be rice or fries. Then Nadine Amanina Puspitasari’s

job is to flour and fried the chicken skin, she was helped by

I Gusti Ayu Diah Widiarini. For frying the Ngulitik was done

by Putri Nur. After the Ngulitik and the fries are cooked, we

put it in a container. Then Nadiya Novha put some fries or

rice in our pacakage then added Ngulitik on top. Nadiya also in-charge in pouring the sauce to

the Ngulitik. After that the product was deliver to the customer by Nabila Tsabitha The flow was

a bit different for making the beverages. The order was taken by Nabila Tsabitha. And then she

told Haekal what the order is. After that Haekal split the order with Affan. When the order was

done, it was again deliver to the customer by Nabila Tsabitha.

During the cooking process, all marketing

members led by Dea will continuously promote our

product to the pedestrian in Taman Lansia. They

scanned all across taman Lansia for potential customer,

and relentlessly promoting our product. They make a

game & show a dance in order to get attention from

people around lansia. They will over our product

directly to the costumers, and when they get the order,

they contacted the kitchen via Line Messenger. Then the

product will be cooked and delivered again directly to the costumer where ever they are.

Whenever we are out of stock we told Rafi what is missing, then Izzuddin went to the nearest

market to get the materials. The most crowded time was at 11 a.m. until 1 p.m. We closed our

booth at 3 p.m. because our product already sold out at that time, we did not restock it since the

raining was pouring very heavy at that time and there was no vendor that was selling chicken

skin at the traditional market. After the first day, all equipment are packed and taken by Ichsan’s

car to Ramdhani’s house. We left the heavy

equipment such as tent, stove, table, etc. at the

car to enable easier storing and preparation for

the next day. We then cleaned all kitchen

utensils until 11 p.m. after that, we put it in a

box ready to be packed early morning. We did

the same thing on November 22nd 2015. The

differences is we have slightly different job

distribution. Ichsan substituted Ramdhani as

fryer, and Ramdhani as the person in charge for

re-stocking. Closed until 5 p.m. since we stocked a lot more chicken skin at the second day. But

the crowded time at the second day was not really shown because the customer did not come at

the same time. They came in different times. So our booth was never empty, but also never

really crowded since we learned from the first day to stock the chicken skin and not to make it

only when customer order it. On the final day, after we closed our booth, all the equipment are

packed again in Ichsan’s car and delivered to Ramdhani’s house. There, all of the equipment will

be cleaned and separated. Again the person in charge of cleaning is Operation team. After all

was clean, we all went home.

Issues & Challenges

1. The first issue we found on the first

day was when we did a mobile

selling, and introduce our product to

a particular mother with her child,

she said to her daughter that she

shouldn’t buy our product because it

is unhealthy.

The way we solve this is to inform

her more about our product, where

we told her that we choose only the

best skin , cleaned it further more,

and took out the excess fat that was

attached to the skin.

2. The second issue we found during the execution day was how to attract customer on Saturday

when not many people were around.

We solved this issue by walking and bringing our product all the way to the Gedung Sate,

because we knew that there were an event at that time, and we want to make use out of it by

attracting them to our booth. On that event a lot of tourists came, so we thought that if we

introduce them with mojito which they are already familiar about would attract them to come,

and that actually worked.

3. The third issue was how to make a twist out of a mere chicken skin, how to make people want to

buy our product.

We solved this issue by experimenting our product, trying to get the best out of it, and mix and

match the chicken skin with various type of sauces.

4. The fourth issue was how to gain customer on the second day where there are lot of street

vendors around us all who have been there for a long time and who already has a loyal customer.

Because of the once-a-week market that happened at taman lansia, a lot of people came to visit

the area and are our potential customer. So in order to introduce them to us, which is basically

new to that place, we started yelling catchy lines and songs around the booth. We also had a

mascot in order to attract the children.

During our Execution days we encounter numerous Issues and challenges. First, the most challenging issues is when it is raining. On the first day, fortunately it was raining when we were closing our booth. Unfortunately, during the second day, it rains heavily when there were still customers. Our challenge is to keep the kitchen away from the rain, and keeping the customers out of rain. To do so, we pull the kitchen in to the tent, and using umbrella to cover our customers. Second issue is when we are running out of stocks for the cooking materials. On the first day we were quite disorientated when the chicken skin didn’t arrive on time. It halted our production. For the next day we prepared much early and cut more chicken skin so we didn’t have to be confused by the stock. We also had problem during our first day for re-stocking other materials. Lots of our stock

was empty during mid-day of our first execution day. We miscalculated on how much we should bring for the first day. The solution is we make a small team consisting of Rafi, Izzuddin, Renandra, to buy the materials. They are responsible for buying the materials. Then we bought the materials in big amount. For the next day, we stock much more than the first day to avoid the problem we faced on the first day. There were also time when we running out of French fries and ice cube stocks. We were confused, because the French fries we order was from a vendor that are far away (outside Bandung), and when we want to buy for the next day he couldn’t delivered it for us. The same problem also happened with ice cube. When we were about to buy ice cube, the factory was closed. Fortunately, our friend from another company has links to buy those materials. We asked for the phone number and called them. After that, everything went normal again. Third, we have slight problem with equipment. Before the execution day we could not find any stove. We searched to our friends, and relatives for stove. One day, one friend from another company said that they have a stove, but they needed a cool-box. Since we have plenty of it, we decided to exchange. Unfortunately we notice the stove only had one burner, so we searched for other stove. We finally manage to find two more stove from a friend. Fourth, we also have problem with electricity. Since Reliance didn’t provide us with any electricity, we need to find back-up generator. We asked our friends if they know someone that had a generator. Then, Monica said she knew someone that has a generator. We rent the generator at Antapani. We basically never let any challenge held us. We have to work hard, stay as a team, and keep cool state of mind to overcome every challenges.

Finance team met many challenges both when planning the business and on the execution day. We

realized that managing the money is not easy, but we think that we have passed those problems

smoothly. Some of our problems are:

The capital given is not enough so we have to add the capital by collecting the money from the company’s member. Because of the limited capital, we also have to minimize all the expenses and the budgeting for each division.

Control the budgeting for each division is not easy. When the real expense is not the same as the money allocated, we have to add the budget and it will increase overall cost. We solved this problem by told the other division to use the money effective and efficiently.

The expenses in ‘the days’ is not like how we expected at the beginning. We didn’t expected that some products requested so much that we have to restock the raw materials many times. The person in charge to restock can not ask for money to Dita as the treasurer because the situation was really hectic and instead using the capital, they use their money first to buy things. We found this problem is quite challenging, but in the end of the day after we closed our booth they reported how much is their money being used and then we returned their money.

Looking for customer’s changes became one of the problem on the execution day. Fortunately, there were some parking man who worked around Taman Lansia so we can exchange our money to get the small changes.

Collect all the financial data and finishing the financial record. We haven’t experienced being a finance team before, so we met difficulties in planning the budget and create all the report materials like cash flow, BEP, income statement, etc. We read and follow the guide from the lecturers, asked the seniors, and also search for how the finance management should be.

Some members want to fill same position. to empowering people we need put right person and did resuffle if someone could not give their performance in a positition

We have a plan several member as buyer for restock but in execution some of them can not do that because only student who are from Bandung that know the navigation to the market ;therefore, some people changed restock buyer position in execution day

Lesson Learned

In business simulation we learn how to

manage diversity for example to

determine what is our product we are

discussing, package many ideas be one

combination Ideas that have uniqueness

and each other like that. We also learn

how to manage our emotional when

each other have different

argumentation about something.

In business simulation we learn that big problem can solve easier if we unity and support each other. For example when we built the tent it was finished in 10 minutes by 6 persons it would be hard, need long time & be tired if finished by one person. Teamwork is important thing in every Delaulima’s activities

In business simulation we learn how to be a good leader. We should listen all members aspiration and we should use good communication in communicating with each order in order misunderstanding not happened. As a leader we have to know what all member feel and should make the situation comfortable for them. We also learn how to persuade member to be spirit as the result company’s target can be achieved. And the last one as a leader we have to make all team do their job stick to the plan

In business simulation we learn how to communicate our idea. In this group everyone allowed to speak up their idea and devil’s advocay session make us brave say if we do not agree about something. We also learn how to negotiate with our partner for example when determine the rent cost of place we do negotiation as the result the cost can be reduce. Those are very precious for us in the future.

In business simulation we also how to make a plan, how to find solution if our plan have a problem, and how to oraganize all division in order to make everything effective & efficient

And the most important thing is trust. We can not do our teamwork,as leader we can not empowering people, and we can not get our target if we do not trust each other

In business simulation sometimes when we get a problem we have to think out of the box to sove it for example we have a plan use box paper for our packaging but the cost is too high as the result we use bowl plastick with printed design paper which are cheaper but powerfull
