IntroduçãoO tomate é uma história de extraordinário sucesso. Atualmente, é considerado um ingrediente
indispensável numa série de gastronomias de todo o mundo. Com uma polpa sumarenta,
um sabor delicado e um travo particular entre o ácido e o doce, o tomate é um alimento
maravilhosamente versátil – e do qual existem centenas de variedades –, que pode ser consumido
cru em saladas e molhos, e também cozinhado em sopas, molhos e caril. Pode ser o elemento
principal de um prato, como no caso do gaspacho e do molho de tomate para massa,
ou um ingrediente muito agradável para dar vida às saladas, ao pão, aos guisados e dahls.
A história do tomateiro (Solanum lycopersicum), um membro da família das Solanaceae, começa
na América do Sul, de onde é originário. Daí viajou para o Norte, sendo cultivado pelos Aztecas,
no México, por volta de 700 d.C.. A palavra «tomate» deriva do nome azteca xitomatl. Em termos
botânicos, o tomate é o fruto da planta, mas, na culinária, é considerado um vegetal. Crê-se que
os conquistadores espanhóis que invadiram o México trouxeram o tomateiro do Novo Mundo para
a Europa no século XVI. Inicialmente, eram atribuídos poderes afrodisíacos a esta planta nova e
misteriosa, o que deu origem em França a que lhe chamassem pomme d’amour (maçã do amor).
Em italiano, pomodoro, ou seja, «maçã dourada», é uma referência ao mito das Hespérides.
O tomate é usado em muitas gastronomias, mas está particularmente associado à cozinha
italiana, na qual é parte integrante de muitos pratos típicos. Assim sendo, faz todo o sentido que
a primeira referência às mala aurea, «maçãs douradas», tenha aparecido num herbário italiano,
em 1544. O Sul da Itália, Nápoles e as regiões próximas estão particularmente associados ao
tomate, por ser aí tradicionalmente cultivada a tão apreciada variedade San Marzano. Nápoles é
também conhecida como a terra da pizza, e a pizza napolitana clássica vive basicamente de
dois ingredientes: um saboroso molho de tomate e queijo mozzarella.
Um dos motivos da omnipresença do tomate nas cozinhas de todo o mundo deve-se ao facto
de sabermos como conservá-lo. O processo de conservação do tomate em lata, que permite
que seja consumido fora da sua época, foi desenvolvido no século XIX, principalmente na
América e em Itália. Hoje em dia, o tomate enlatado, inteiro ou em pedaços, ou em polpa,
em frasco ou embalagem de cartão, existe em quase todas as despensas. Este vegetal
não só é útil e popular, como lhe são atribuídas muitas características benéficas para a saúde.
O tomate possui um teor elevado de vitaminas A e C, e é rico em licopeno – o pigmento que
o torna vermelho –, um poderoso antioxidante.
Escrever este livro convenceu-me de que o tomate é, de facto, um ingrediente fantástico.
Muitas vezes menosprezado, é um alimento que deve ser apreciado e saboreado. Bons cozinhados!

Comece por escaldar os tomates seguindo as
instruções da página 17. Corte a polpa e coloque-a
num processador de alimentos. Triture juntamente os
tomates, o pimento, o alho, a cebola e o pepino, até
ficarem finamente picados, mas com alguma textura.
Transfira a mistura para uma taça de servir e junte
o sumo de tomate, 75 ml de azeite e o vinagre.
Tempere a gosto com açúcar e sal. Tape e guarde
no frigorífico de um dia para o outro.
Para preparar os croûtons, aqueça o azeite restante numa frigideira pequena e salteie os cubos de pão
em lume médio, até ficarem uniformemente
dourados. Retire-os da frigideira e deixe arrefecer.
Sirva o gaspacho em taças pequenas, guarnecido
com os croûtons e os cubinhos de pimento-amarelo e pepino. Decore com os rebentos e sirva de imediato.

Prepare a massa. Misture a farinha, o sal, a manteiga e o queijo parmesão num processador de alimentos, até obter uma mistura homogénea. Junte a gema e 1 colher de sopa de água fria e misture, até a massa começar a formar uma bola. Transfira a massa para uma taça ligeiramente untada, tape e leve ao frigorífico durante 1 hora.
Entretanto, triture os tomates com uma colher de sopa do azeite de conserva, até obter uma pasta.
Pré-aqueça o forno a 200 °C.
Divida a massa em duas partes iguais e estenda-a sobre uma superfície polvilhada com farinha, até obter dois retângulos pouco espessos com cerca de 16 cm x 11 cm. Espalhe a pasta de tomate sobre cada um dos retângulos e enrole-os cuidadosamente pela parte mais larga. Corte os rolos às rodelas grossas, com cerca de 1 cm de espessura cada uma.
Disponha as rodelas no tabuleiro e leve ao forno pré--aquecido durante 20 minutos, até ficarem douradas. Deixe arrefecer sobre uma rede de arame e sirva de imediato ou guarde num recipiente hermético.

Primeiro, prepare a massa. Numa taça grande, deite a farinha, o fermento e o sal. Junte a manteiga e a banha e amasse com a ponta dos dedos. Adicione 4-6 colheres de sopa de água fria, uma de cada vez, e ligue os ingredientes com a ajuda de uma faca, até obter uma massa macia. Embrulhe em película aderente e deixe repousar durante 1 hora.
Entretanto, prepare o recheio. Aqueça o azeite numa frigideira. Junte o alho e a cebola e deixe refogar, até amolecerem. Adicione os tomates e deixe fritar durante 5 minutos, mexendo frequentemente. Acrescente o atum, o concentrado de tomate,a malagueta e os cominhos e tempere com sal e pimenta. Deixe cozinhar entre 1 a 2 minutos.
Estenda a massa numa superfície polvilhada com farinha e corte 20 círculos com o cortador de bolachas. Deite uma colher de sopa do recheio no centro de cada círculo, pincele o rebordo dos círculos com água e dobre-os, pressionando as pontas, de modo a formar pequenos pastéis.
Aqueça o óleo vegetal numa frigideira. Frite os pastéisaté ficarem dourados. Retire-os da frigideira com uma escumadeira, coloque-os sobre papel de cozinha para absorver o óleo e sirva.

Pastéis de atum
Num processador de alimentos, triture a cavala fumada, o molho de rábano-picante e as natas,até obter um paté. Tempere com pimenta-preta.Tape e deixe repousar durante, pelo menos,30 minutos.
A seguir, arranje os tomates. Corte-os em metades e, usando uma colher de chá, retire-lhes cuidadosamente a polpa e as sementes, criando 28 «tacinhas» de tomate-cereja.
Recheie cada tacinha com o paté de cavala.Leve ao frigorífico até servir. Decore com a salsae sirva frio.

Tomate-cereja recheado com cavala
Preheat the oven to 200°C (400°F) Gas 6.
Place the baguette slices on a baking sheet and lightly brush with
1 teaspoon olive oil. Bake in the oven for 20 minutes, until pale
gold and crisp. Set aside to cool.
Meanwhile, cut the cherry tomatoes into quarters. In a bowl, mix
together the chopped cherry tomatoes, remaining olive oil,
balsamic vinegar, salt and whole garlic clove. Shred the basil
leaves and mix in. Set aside while the bread slices bake and cool.
Discard the garlic clove from the tomato mixture. Spoon the
chopped tomato mixture onto each slice of bread. Garnish with
basil and sprinkle with black pepper, and serve at once.

1 large fennel bulb
6–8 heritage tomatoes, ideally assorted varieties
3 tablespoon extra virgin olive oil
1 tablespoon freshly squeezed lemon juice

Numa panela com fundo térmico, aqueça o azeite em lume brando. Junte a cebola e o manjericão e deixe cozinhar até amolecerem. Adicione o tomate, tape a panela e deixe cozinhar durante 5 minutos. Destapee mexa até o tomate ficar desfeito. Junte o pimento assado e cozinhe durante 5 minutos. Tempere bem, triture até ficar em puré e deixe arrefecer.
Numa panela pequena, aqueça em lume médioum pouco do puré frio, quase até levantar fervura.Retire do lume, adicione-lhe a gelatina demolhadae misture até que derreta. Junte este preparado ao restante puré e deixe arrefecer completamente.
Numa taça grande, bata as natas. Envolva delicadamente o puré de tomate frio. Divida a mistura pelos ramequins e deixe repousar no frigorífico durante 4 horas, até ficar firme.
Misture os cubinhos de tomate-cereja com o manjericão e use-os para enfeitar cada ramequim antes de servir.

Mousse de tomate
Comece por escaldar os tomates. Coloque-osnum recipiente resistente ao calor e verta sobre eles água a ferver. Reserve durante 1 minuto, depois escorra-os e retire-lhes cuidadosamentea pele com uma faca afiada.
Coloque os tomates pelados num processadorde alimentos e triture até obter um puré.Adicione o açúcar e o sumo de limão, e misturede novo até incorporar. Corte as folhas de manjericão e misture-as no preparado.
Transfira a mistura para um recipiente hermético, tape-o e leve ao congelador durante 2 horas.Retire do congelador e, com um garfo, raspe a parte congelada da mistura que se formou no bordo do recipiente, misturando-a com a parte que não está congelada. Leve ao congelador durante mais1 hora e repita o procedimento. Deixe congelar novamente durante 1 hora, misture e sirva.

Prepare a massa. Peneire a farinha para uma taça morna. Junte o fermento, o açúcar e o sal. Adicione o leite morno e misture até formar uma massa espessa. Incorpore a gema, a manteiga derretidae o concentrado de tomate. Tape, reserve e deixe levedar num local morno, durante 1 hora.
Pré-aqueça o forno a 110 °C.
Noutra taça, bata a clara em castelo. Envolva cuidadosamente a clara na massa levedada.
Leve a lume médio uma frigideira grande, antiaderente e com fundo térmico.Deite cuidadosamente na frigideira colheradasde massa, bem espaçadas. Frite até se formarem pequenas bolhinhas na superfície de cada blinie os rebordos começarem a alourar, depois vire-os e deixe fritar rapidamente, até ficarem dourados do outro lado. Transfira para um tabuleiro de forno e mantenha quente no forno previamente aquecido. Cozinhe a massa restante.
Na altura de servir, cubra cada blini com um pouco de natas azedas, um pedaço de presunto de Parma e o cebolinho picado.

Estas pequenas panquecasalaranjadas são apetitosas e deliciosas!São o canapé perfeito.
Blinis de tomate
Comece por preparar a massa. Num processadorde alimentos, misture a farinha, o sal e a manteiga, até obter uma mistura homogénea. Junte uma gema e uma colher de sopa de água fria, e misture até incorporar e formar uma bola. Embrulhe em película aderente e deixe repousar no frigorífico durante 30 minutos.
Pré-aqueça o forno a 200 °C.
Estenda a massa numa superfície polvilhada com farinha e, com o cortador de bolachas, corte 24 círculos. Forre cada buraco da forma de queques com um círculo.
Para preparar o recheio, bata as natas frescase as restantes gemas. Tempere com sal, pimentae junte o estragão.
Divida uniformemente o queijo de cabra pelos buracos da forma e enterre duas metades de tomate-chucha em cada tartelete, com a pele virada para baixo. Cuidadosamente, regue com um fio da mistura de natas frescas e leve a cozer no forno pré-aquecido durante
30 minutos, até o recheio crescer e ficar dourado.
Decore com o estragão, se desejar, e sirva morno.
