Dear Colleagues,

After all those tragic events that happened one after another in this summer, the season is now coming to an end. I again thank each and every one of you who once again take a stance in accordance with our ‘BTA Family’ motto during this period, which was unfortunately witnessed by many of us in person.

Of course our young employees who constitute a major part of our staff will experience the effects of this difficult period more. We, as people who work in a human-driven sector and whose biggest source of energy is motivation, will need to pay attention to this matter for a long time. To this end, our mid-level managers and senior managers in particular have a serious work to do. I would like them to carry their young staff’s spirits and motivation to a higher level, and I remind that our psychologists will offer the best support on this matter.

Although it is easier said than done, we should remember that the life goes on. There is a future out there awaiting us and our children. Our duty is to build this future in the best way possible. As was the case yesterday, together we will continue to take steps towards achieving this goal today and tomorrow as well.

Dear Friends,

As you all know, we will participate in the tender for Istanbul 3rd Airport Food and Beverage operations at the end of November. Until that time, we will primarily concentrate and focus on this tender. I would like to emphasize once again my sensitivity regarding the ‘zero tolerance’ matter, which I also

underlined in my previous message. We hope and believe that we will win this tender and continue our successful journey, which has been maintained at Atatürk Airport for 16 years, at our new address as well.

Of course, our work at all our domestic and overseas branches and companies continue in the same seriousness. No doubt, every single step towards peace and prosperity throughout our country, region, and the world will affect all our activities in the same positivity.

Before finishing my words, I would like to congratulate everyone’s belated August 30 Victory Day and the upcoming Eid al-Adha (Sacrifice Feast), and I already wish a healthy and successful year for all children who will start school at the end of this summer break.

The 2nd at Ankara Esenboğa Airport and the 25th in total, a new branch of Cakes&Bakes, one of our popular concepts, began to serve on August 18th.

Located behind the passport checkpoint at the international terminal, Cakes & Bakes will serve at the place which was previously home to old Vadi Kafe. Boasting an area of 260 m2 and a sitting capacity for 100 people, our store will offer a 24-hour service.

Getting ready to add a new flavor to its wide range of

products, Cakes & Bakes will now also produce baklava in addition to its delicious Turkish delight.

Our General Manager Volkan Cılga says that the success achieved three years ago in producing Turkish delight was a huge source of motivation for them to make this decision.

“We have long been carrying out serious feasibility studies to produce baklava - one of the most special products in Turkish cuisine - at our own facilities. Despite having great confidence in our knowledge and skills in this field, we sent our chefs who will be in charge of the production to Gaziantep - the homeland of baklava. They carried

out important studies and research activities there. In addition, they received detailed information on baklava from its masters. Last week we carried out a test production, which resulted in very positive feedback. Our work on deciding the name and logo etc. is about to conclude as well.

At the first stage, we will be selling

at ATÜ Duty Free Shops, Tadında Anadolu, and other BTA points where we conduct commercial product sales.

We highly believe that we will achieve the same success that we have demonstrated in producing Turkish delight. I hope that our baklava production will bring all of us luck and success,” Cılga added.

Cakes&Bakes has been supplying products to 130 different companies in addition to BTA’s sales points at airports and maritime lines. Our Kıraç facility boasting an area of 23,000 m2 produces six million products a month, and our Turkish delight section UTB, which joined our company in 2013, produces three metric tons of products a day.

Cakes&Bakes has been producing all the Turkish and Middle Eastern pastry products of Godiva - a

world-famous chocolate and cake brand.

According to our C&B Product Development Chief Ertan Korkmaz, being the product supplier for such a brand is a valuable reference for our company.

“At our Cakes&Bakes facilities we produce not only Godiva’s sweet products but also its savory products. Our management set a target to address this company’s other points in the world market and become its global producer. We have not had

a problem so far regarding the production quality. I believe that we will continue like this and reach our target in the near future,” Korkmaz continued.

Godiva is a giant brand founded in 1926 by Belgian cake chef Joseph Draps. The inspiration for the Godiva name came from Lady Godiva, an 11th Century English legend, and her famous story. Godiva, which is also the official supplier of the Belgian Royal Palace, has 11 stores in Turkey and over 450 stores in 84 countries around the world. Since 2007, Godiva has been operating under Yıldız Holding.

is at CAPITOLThe 9th branch of Tadında Anadolu will open at Capitol Shopping Center, which is the first shopping mall on the Asian part of Istanbul.

Tadında Anadolu, which first opened in 2009 at Ankara Esenboğa Airport, offers unique Anatolian meals and over 500 different products coming from over 50 Turkish cities.

Opened in 1993, Capitol Shopping Center provides its guests with an environment where they can enjoy a shopping experience blended with art, culture, and fun. Our new sales point will serve in the Food Court area, which was built on the top floor of Capitol Shopping Center this year. The other Tadında Anadolu branches serve at Istanbul Atatürk, Ankara Esenboğa, Izmir Adnan Menderes, and Bodrum Airports, and Yenikapı, Mudanya, and Yalova İDO piers, as well as at Uniq Istanbul.

Muhsin Ertürk is the chef of this orchestra of cuisine who keeps this thought and mission alive under the concept of Tadında Anadolu.The starting point for Chef Ertürk is that his unique dishes cooked on different stoves of Anatolia, the home for countless civilizations, are always remembered. Ertürk made his belief stronger by gathering over 500 traditional recipe within this framework since the first day he started the Tadında Anadolu project, an extraordinary concept under BTA. He ensured that all of these recipes were implemented meticulously.

Who is Muhsin Ertürk?Born in 1984 in the province of Tokat, Muhsin Ertürk graduated from Tokat Vocational Anatolian High School on Hotel Management and Tourism. He was promoted to the position of “Executive Chef” at Ankara Balıklı Bahçe Restaurant in 2006.

Ertürk’s first ascent was with “Modern Turkish Cuisine” concept that he created at İstinye Meyyali Restaurant in 2009. Beginning to work under BTA in 2010, Ertürk still continues to work as the central kitchen chef of Tadında Anadolu and Turcuisine brands. The successful chef was granted awards at many prestigious competitions such as “Gastrobosphorus Patisserie Competition” and “Ottoman Palace Cuisine Competition”.•FoodInLife

HOW TO COOK 700 gr Boneless Lamb or Veal (Lean and Nerveless)

1 Onion | Sufficient Amount Salt and Black Pepper| 1 water glass rice | 1,5 table spoon butterTenderize the fresh meat until it reaches a dough consistency. Knead it with black pepper and salt. Cut it in 7 equal

pieces and make small balls. Add butter to the pot and fry the coarsely chopped onions until they are a deep golden brown. Later add the koftas and fry. Then add water to cover the koftas. Fully wash the rice in a separate bowl and

then add them in the water. Wait until the rice absorbs the water and becomes pilaf. Finally put the onions and koftas on the pilaf.

Abdi Pasha who showed great military skills during Murad IV’s expedition to Iran in 1634 and gained the nickname “One-Armed” due to losing his right arm in a battle became the Governor of Doğubayazıt Sanjak, a sanjak which was established for the first time in 1635.

The first thing Abdi Pasha did after becoming the governor of the sanjak was to build a summer palace.The palace took a good 99 years to be built. It was completed by İshak Pasha II in the end.

Rumor has it that Çolak Abdi Pasha was suffering from his stomach. That’s why he was never eating meat.

However there was a serious problem. The thing was that animal breeding was the only source of living in the region, and in a small region there were Armenian villagers growing rice only. What’s worse was that local cooks were only good at “meat meals.” Then one day, a cook took it seriously and started to cook several meals. In the end, that very cook managed to make a meatball that wouldn’t make Çolak Abdi Pasha uncomfortable. Since then this kofta has been known as Abdigör Kofta.

The TAV Mobile application is providing passengers real-time access to information on services offered at 12 airports operated by TAV Airports in five countries. Now passengers are now also able to see their flight info instantly on Facebook and Twitter.

Developed by TAV Information Technologies (TAV IT), the TAV Mobile application makes travel planning easier in addition to enabling real-time access to information on services and promotions offered at the airport. The application covers 11 airports operated by TAV Airports in four countries. Downloaded more than 500,000 times already, the application is running on iOS, Android and Blackberry. The new version of the app which has got full marks from the users, gives flight info instantly on Facebook and Twitter as recently supported by social media feature.

TAV IT General Manager Binnur Güleryüz Onaran stated: “TAV IT continues to develop its products and services following up the latest technologies and trends by focusing on passenger satisfaction while carrying out all its operations. TAV IT is proud to announce that social media support has been added in the latest version of our app TAV Mobile which transfers all information related to the services and special offers provided at the airports to smart mobile devices. By sending push notifications and real-time information, we are providing rapid, comfortable and stress-free travel experience to our passengers. We are pleased by the great interest shown to TAV Mobile app which is constantly improved by the feedback we receive.”

The users can see the latest status of their flights instantly by posting the flight number and city/destination information on Facebook and Twitter without any need to download any application. The passenger is greeted by a welcoming notice when s/he clicks on Message section on Facebook “TAVMobile Flights” page and receives directions on how s/he could make a search about the flights. The tweets posted by Twitter #tavmobile hashtag are responded in a few minutes by giving the information regarding the mentioned flight to the user.

The TAV mobile application provides information about the Istanbul Atatürk, Ankara Esenboğa, Izmir Adnan Menderes, Milas-Bodrum and Gazipaşa-Alanya airports in Turkey, and the Enfidha-Hammamet and Monastir airports in Tunisia, Tbilisi and Batumi airports in Georgia, Skopje and Ohrid airports in Macedonia, and Madinah Airport in Saudi Arabia.•tav.aero

By offering training sessions for our technical staff, our BTA Izmir Human Resources Department aims to add value to our existing performance.

The training sessions are offered by our Technical Services Chief Muzaffer Eskin as part of our internal training program. During the training, our kitchen and service staff members are given detailed information on all regularly used mechanical equipment from tea and coffee machines to dish washers.

“At Technical Services Department, we believe that we should have the awareness and knowledge that allow us not only to eliminate the potential failures but also to avoid them. In this way, we will both be able to increase the performance of our system and to reduce the expenses occurring due to failures,” Eskin said in a statement.

According to our BTA Izmir Human Resources Manager Ebru Durmazgüler, our standard training sessions aimed at our food and beverage operations continue at the same pace.

Durmazgüler said that this month’s subject of the training sessions offered by our F&B Department Manager and In-House Trainer Atakan Ünal is ‘Complaint and Extraordinary Situation Management.’ “At ADB branch, we achieved a rate of 97% regarding the training sessions. This year we want to reach the same result,” Durmazgüler continued.

Last week a couple celebrating their wedding anniversary visited Tickerdaze, one of the popular concepts of BTA Bodrum.

They sat at their table but after a while the husband stood up and went to the bar section to ask our waiting staff Fatma Köse if she can help him to prepare a surprise for his wife. “Today is our wedding anniversary. I want to surprise my wife. Can you help me?” he asked.

Our young friendly colleague told him that they can arrange a small cake and even open a bottle of Cordon Rouge. Our guest who really liked Köse’s idea ordered a bottle of Cordon Rouge valued at 650TL and immortalized their special occasion. Before leaving for their flight, the young couple thanked our colleagues for their friendly and fast service.

Fatma Köse who has been successfully working for us since 2014 is a student at Selçuk University’s Tourism and Hotel Management Department.

Last month our companies started to prepare their budgets for 2017. Our Budget and Finance Coordinator Atalay Tarhanlı made the following statement regarding the plans and reports to be submitted for approval by the end of September.

“As we all know and experience in person, we have been going through very difficult times both socially and economically. Both factors directly affect each other either with their pluses or minuses.

Unfortunately, in recent times we have been experiencing the minuses more intensely. Last month we started to work on the 2017 budget in such an atmosphere. I and my colleagues Ahu Demirel and Seçil Çelik have been meticulously working around the clock to make budget plans for our 27 domestic and international branches and companies so that we can submit the plans for approval.

By the nature of our work, we, finance specialists, concentrate on expenditure items more. In the past few days, we heard that the sensibility of our airport x-ray devices was increased. The reason for that was the magnitude of security threats. Based on this example, we also increased the resolution of all

our screens as far as possible to better examine the cost items. In the end, we see the same threats in an economic sense as well. That’s why we examine every single cost screen in more detail, in other words, pixel by pixel.

No doubt, there is a huge need on this for all of us. We hope that this difficult period will come to an end soon and that our domination in the income columns will rapidly return to how it was before. I believe that together we will achieve this.”

Atatürk Airport broke a new record in the evening of September 4th with 1454 arrivals and

departures during the air traffic. Before that, 1443 airplanes took off or landed at Atatürk Airport on July 10th.

According to the information obtained from the General Directorate of State Airports Authority (DHMI) Atatürk Airport Directorate authorities, aside from 1454 arrivals and departures, 141 thousand 269 passengers entered or left the airport yesterday.

1443 airplanes took off or landed at Atatürk Airport and 142 thousand passengers entered or left the airport on July 10th according to the obtained details. As for July 24th of 2015, 1403 airplanes took off or landed while 150 thousand 148 passengers entered or left the airport.

A group of our colleagues working at our

Atatürk Airport food and beverage operations joined an educational grape harvesting tour held by Kavaklıdere Company last month.

The event took place at an Akyurt, Ankara facility, as well as in vineyards where Kalecik Karası grapes are harvested, and it also included a presentation by Kavaklıdere Training Coordinator Levon Bağış.

Ice cream in a melon served last month at Atatürk Airport staff cafeterias received great appreciation and interest from our guests.
