This December 20th, Macau celebrates in grand style its 14th anniversary of the handover to China. The annual parade takes a new shape, adopting the theme ‘The Rhythm of Life’ as well as toting four giant puppets representing the guardian angels of childhood, youth, adulthood and old age. Each of these stages represents the various emotions of its time - encompassing Love, Freedom, Harmony and Peace respectively.

The parade begins at the foot of the Ruins of St. Paul’s and wends its way through Macau’s principal monuments and squares including the Companhia Square, Igreja de São Lázaro, the Old Ladies’ House and many more, culminating at Tap Seac Square.This year’s set to include an array of entertainment and fun including mime shows, Latin, folk and belly dancing as well as street dancers, musical treats, Portuguese folk dance and music, stilt stunt artists and, of course, four giant puppets.

A live broadcast of the parade will also be set up in a number of locations so that even if you’re not there in person, you can still feel the event’s lively atmosphere! HistoryWith over thirty years of history, the Macau International Marathon has attracted a number of local and international athletes to the city for the chance to participate in one of three types of marathon: full, half and mini. Set up in 1981 by the local Panda Running Club, the marathon survived off of the sponsorship of several businesses and companies before being taken over by the Macau Athletic Association and the Macau Sports Development Board in 1987. Following the takeover, the Marathon gained recognition from the Association of International Marathons and Road Races (AIMS) in 1990. Today the Galaxy Entertainment Group acts as primary sponsor.
The courseAll starting at the Taipa Stadium, the three races are categorized by distance. The full marathon spans just over 50km, the half marathon about 20km and the mini marathon a little under 5km.As usual the full and half marathons will start and end at the Taipa Stadium and will, depending on distance, lead participants through and around the islands of Macau, Taipa and Coloane - passing a number of prominent landmarks such as the Macau Tower, Kun Iam Statue, Galaxy Macau and the Venetian Macau. The mini marathon will be constrained to Taipa, moving along the Sai Van waterfront. Spectators are welcome to watch any of the three races from various stations set up along the marathon courses.

Ribbons and medalsLast year’s full marathon saw Haile Haja and Ehitu Kiros Reda of Ethiopia walk away with the male and female first place awards, respectively, with times just under two and a half hours (Haja) and three hours (Reda).Half marathon-winners were Silas Muturi Gichovi of Kenya with a time of one hour and 14 minutes and Elisabete Lopes of Portugal with a time of one hour and 28 minutes.The Macau International Marathon also distributes group awards to those participating through schools, organizations and public/private entities. Last year’s awards were presented to Escola Tong Nam, six-time-winner Care Action and eight-time-winner Galaxy Entertainment Group.

The History of ChristmasThough popularly accepted as a Christian festivity, the celebration of Christmas pre-dates the birth of Jesus Christ and is, in fact, a collection of traditions from different cultures. Though there are a number of ideas regarding how Christmas came about, its origin has been traced back to aspects of Paganism and Ancient Roman practices. Christmas represented a season, originally called Yule, which was a celebration of fertility and rebirth. The belief was that a sun god, worshipped by the pagans, died on the 22nd of December and was reborn three days later. The Roman Catholic Church’s celebration of Christmas, originally known as ‘Christmass’, integrates many of the ideas of this celebration, albeit with a distinctly religious focus.Today Christmas is a festival recognized the world-over as a global celebration and a gift-giving opportunity, regardless of race or religion. The celebration of the birth of Jesus Christ is still the primary aspect of the Christian celebration of the holiday.
DecorationsIt is tradition during the Yuletide (Christmas) season to decorate homes with festive lights, stockings and - of course - a tree. Most of the decorations are used to symbolize important aspects of Christmas. For example the traditional colors of Christmas - red, green and gold - are used to symbolize the blood of Jesus, eternal life, royalty and the gifts from the Magi (the seven kings who brought gifts to Jesus’ bedside). The Nativity scene (the scene depicting Jesus’ birth) is also a prominent Christmas element and is often portrayed through an
arrangement of figurines or even performed as a play. A number of festive symbols are also taken from Paganism such as: the evergreen tree, holly and mistletoe - commonly used in Pagan fertility celebrations - the evergreen tree for its ability to withstand the colder weather, holly as a symbol of the Queen of heaven (known as Diana) and mistletoe as a symbol of the sun god.
Gift GivingGift giving is said to have been a practice of the Roman festival Saturnalia, occurring in December, and was later incorporated into modern celebrations of Christmas. Of the numerous gift bearing figures featured during Christmas, Santa Claus is by far the most well known. The legend of Santa Claus can be rooted back to the fourth century when Dutchman Sinterklaas - meaning Saint Nicholas - was bishop of Myra (known today as Turkey). It became a tradition to exchange gifts on Sinterklaas’ feast day, the 6th of December, but a reformation in the 17th century caused the date to be altered to December 24th, Christmas Eve.In original folklore Saint Nicholas would visit in the robes of a bishop, however after the American Revolutionary War German-American cartoonist Thomas Nast began annually drawing New Amsterdam’s patron saint - Saint Nicholas. His creations began in 1863 with Saint Nick in Bishop robes but the image was altered every year until 1880, when the modern depiction of Santa Claus was fully conceived.
CuisineThough the food served at traditional Christmas lunches and dinners varies from country to country, a few feature items are usually: holiday hams, turkey, goose, Christmas pudding, mince pies, fruit cake and eggnog.

in style with our guide to Macau for the night with the biggest parties of the year!
CrowdsAs it is most everywhere, New Years Eve means that people will be out celebrating. For Macau this means big crowds of locals and tourists on primary streets and nightspots. The best thing to do is know more or less where you’d like to go throughout the night so you don’t spend valuable hours in a taxi line or asking where to go!If in doubt, try shuttle buses, taxis at hotels or a private limo - a great way to start the New Year in style.
CountdownEvery year the Macau Tourism Office presents a Countdown Fireworks Display at midnight at the Nam Van Lake next to the Macau Tower to welcome in the New Year. It is a free event featuring bands and entertainment from Hong Kong and Macau, and is a good family-friendly beginning to the New Year. Being slightly away from the center of town, it doesn’t last long into the night, so if you’re looking to party, it might be best to start elsewhere to avoid waiting a long time to get to the next location.
The warm upMGM’s Grand Praça is the go-to of many of Macau’s mid to high-class crowd. With its spacious area, tiled floor and skylight, the Praça’s always packed with people, drink booths and – of course – a variety of music. With entry at MOP 550 with two drinks and hosting two bands: Alter Ego from France and Black Queen from Korea - it’s good adult fun. The nearby area is crowded with a bunch of other options. Known as the “waterfront”, it gathers together about a dozen local bars and looks out over the Kun Iam Statue. The entire Nape area surrounding is also decked out with Karaokes and various bars and restaurants.

Taipa and CotaiTaipa and the Cotai area also have a large variety of destinations to hit, culminating with Macau’s largest nightspot: Club Cubic. Taipa holds a number of bars, equally divided between Taipa Village and Avenida Dr. Sun Yat Sen (towards Kingsville) to hit up before you head out to Cotai. Galaxy Macau, in the Cotai region, will be having its own New Year’s Eve countdown and its upscale club China Rouge is definitely a place to stop by – if you can get in. Various other bars are located throughout the complex. Venetian Macau’s Bellini Lounge and Club Deco are bound to be popping for a taste of a more Western crowd if you like, or you can head over to City of Dreams.Home to the Hard Rock Hotel, Grand Hyatt and Crown Towers, the City of Dreams brings you posh and accessible all at once. Try out the Hard Rock Café or the Flame Bar for a warm up before heading over to Cubic. Hosting Andy Moor, the Grammy-award nominated Electronic Dance Music (EDM) DJ and producer, the club will be packed. Moor’s been ranked in the DJ Mag Top 100 for the past six years and received various other awards (check out our Who’s In Town section) so he should be putting on a good show.
Other clubsFor those seeking a long night out, Macau is home to a small number of nightclubs that keep the party going until the early morning. An early-ish treat, closing around 3 a.m., is Sky 21 - located on the 21st floor of the AIA building in Macau overlooking Sai Van Lake. With outdoor seating and a posh interior, it’s a nice getaway. Similarly located in AIA are two other nightspots – D2, Macau’s long-running two-story nightclub, and Divino, a club with live dancers and more. If Macau-side later in the evening another option is DD3, located in Macau’s Fisherman’s Wharf, nearby the Hong Kong Ferry Terminal.

The arrival of December brings with it a turn in the weather but as we move into the winter season, we initiate the annual traditions of this time of year. Digging out the Christmas tree and the old ornaments, decorating our homes with tinsel and stockings, dressing in the itchy sweaters gifted to us by distant relatives and preparing for, as the Christmas carol suggests: “the most wonderful time of the year”.

Tradition
Of all the Christmas traditions, the cuisine is truly a highlight. Families gather around a table to feast on foods that define this holiday: turkey, glazed ham, stuffing, potatoes and Christmas pudding. Often overseen, or perhaps just misunderstood, is the traditional Christmas Fruitcake. With its mix of candied fruit, nuts, bare-essentials-batter and liquor, Fruitcake is often thought of as both a versatile and volatile recipe. The very first recipe for Fruitcake has been traced back to ancient Rome where the dish was made with a combination of pomegranate, pine nuts, raisins and barley. It wasn’t until the Middle Ages (476 AD – 14th Century) that the recipe was altered to include honey, spices and preserved fruits as modern recipes call for.
Get your hands dirty
There is no specific art to making a fruitcake, and this is probably why the original recipe has been altered to produce a number of variations including the Stollen from Germany, Dundee cake from Scotland and the Romanian Cozonac. This recipe is an infusion and adaptation of two recipes, one from the United States and one from the U.K.* to make sure that Cguide gets the best of both worlds.

step By step1. Start this recipe by cutting up and combining all the dried/candied fruits, the raspberry preserve and ½ tsp of vanilla extract in a large bowl with ½ cup of brandy. Mix well then cover with plastic wrap and leave to soak overnight. Pro Tip: Cutting your fruit to the size of a raisin makes for easier slicing when the cake is done.
2. Preheat the oven to 150C/300F. grease two 8”x3” loaf tins, and line with parchment/baking paper or aluminum foil. It is important you do both the greasing and lining, as Fruitcake is prone to sticking and burning.
3. In a medium - sized bowl sieve together flour, salt, mixed spice and cinnamon; then set aside. Cream together (by hand) butter and sugar in a large mixing bowl. Once combined add in the treacle/molasses, marmalade and remaining vanilla extract. The mixture should resemble the consistency of frosting.Pro Tip: Creaming by hand allows for more control as using an electric mixer can often warm the butter too much. using a wooden spoon is more effective than a whisk.
4. Continue mixing as you alternately add the eggs and the dry ingredients, about ¼ of a cup at a time, then fold in the marinated dried fruit and the nuts. Once fully combined, fill the prepared tins and bake in the oven for three hours or until a skewer inserted into the center comes out clean.Pro Tip: If the top of your cake begins to brown too fast, simply cover it with parchment paper or aluminum foil.
5. Once cooked, remove the cakes from the oven and leave the tins to cool for 15 minutes before turning the cakes out onto a cooling rack. When the cakes are completely cool, make a few holes in the top surface. Pour 3-4 tablespoons of brandy over the cakes and leave them to sit and soak for ten minutes.
6. To store, wrap the Fruitcake in foil and place it in an airtight tin or plastic container. Pro Tip: You may let the cake sit for several weeks, simply feed it 3-4 tbsps of brandy each week to keep it moist and from spoiling.
For a more festive touch - ice and decorate your cake with the traditional marzipan, royal icing or icing sugar.

LAST MONTH, on November 11th the Institute for Tourism Studies’ Educational Restaurant was home to a special charity dinner arranged by the Chaîne des Rôtisseurs Macau chapter, Macau Culinary Association, Disciples of Escoffier, Macau and Wines of South Africa (WOSA) in aid of Akani, Diepsloot: a charity which helps to feed underprivileged children in South Africa. In attendance were nine of Macau’s top chefs cooking up a storm with nine world-class South African wineries and a Master of Wine (MW), Martin Moran to host the proceedings.

Taste Macau – pair awayOne of the nine participating chefs that was responsible for the food was James Ngwan - Executive Chef of the Altira - whose two dishes: spit roast whole lamb marinated in yogurt, fresh rosemary, cumin and celery seed; and tossed roast lamb with tahini sauce in pita bread - were excellent with the fuller body reds made from the Cabernet Sauvignons and Pinotage grapes. Richard Stuart, Assistant Vice President for Culinary from the mega resort Galaxy made “Man Tou” sliders with roasted duck, julienne of leeks and Hoisin sauce, which was fabulous with the Crystallum Bona Fide Pinot Noir 2011. The pan-fried seafood cakes with Vietnamese glass noodle salad and garlic vinaigrette went very well with the Bellingham Bernard Series Old Vine Chenin Blanc 2012. Grand Hyatt Executive Chef Toby Dale made Tandoori quail breasts with pan-fried flat bread, onion jam and raita - that was perfect with the sparkling Villiera Monro Brut 2008. His other dish: goose foie gras with fig jelly, duck rillettes and grilled sour dough was crying out for a Klein Constantia Vin de Constance. Yves Duron, Grand Lapa Executive Chef and Food and Beverage Director, generously made three dishes including a citrus marinated salmon mini crossonut with vodka caviar sour cream and a tomato and coconut soup with Thai flavours and spices and its espuma. The last dish, charcoal marinated Australian Black Angus served with herbs zabaglione and potato Jetee-Promenade went very well with the Meerlust Rubicon 2008.Director of Kitchens for City of Dreams (which includes the Hard Rock Hotel) is Samuel Wilkes, who prepared a pan-fried Scandinavian meatballs served with pickled cucumber and chili crab pasta, and homemade Fettuccini with crispy soft shell crab and chilli sauce. The Sadie Family Skurfberg 2012 was my match for these brilliant simple dishes.The Mandarin Oriental Executive Chef and Food & Beverage Director - Dominique Bugnand cooked us seasonal mushroom Tortellini with porcini mushroom espuma and choux with salmon mousse with cucumber and vodka gel. Joe Chan, Executive Chef for Starworld made spring chicken breast stuffed with mango and wild rice and a traditional seared scallop on saffron risotto. Delicious.Sheraton Director of Kitchens David King cooked octopus anticucho causitas (translated this means whipped purple potato with octopus anticucho), olive sauce, goat’s cheese, avocado and mint pesto and a Peru rice bowl - which consist of Iberico pork belly, braised white beans, corn rice, fried egg and Aji sauces. Very different dishes but very tasty nonetheless. Last but no means least was pastry extraordinaire Ronald Gonzales from IFT who made a wonderful selection for the buffet including rhubarb crumble, hazelnut caramel cake, rum baba, mango and coconut pudding, Macanese egg tarts with cinnamon, croque-en-bouche, strawberry mille-feuille, rosemary crème brulee, raspberry marshmallow, espresso macaroon, rose profiteroles, green tea financier, almond and hazelnut lollipops and Turkish delight.The night ended on a brilliant note and thanks go to Martin Moran MW, the chefs, IFT, hotels, South African wineries, local wine distributors and the guests that attended for their part in raising donations for the Akani Diepsloot Foundation.
A taste of hopeAkani, a Shangaan word which means ‘to build’, strives to make a difference in the lives of South African underprivileged children; it intends to build, serve and develop the children of Diepsloot. Though many of these children may be born as nobody’s, they can become somebody’s. With the kind help and winter spirit of donors in Macau a lot of these children will have their futures changed for the better. Their mission is “Every Child Can”.
Taste of South AfricaMartin Moran, MW, kicked off the day with a South African Masterclass and tasting of some wonderful wines which started with a refreshing Villiera Monro Brut 2008, Bellingham Bernard Series Old Vine Chenin Blanc 2012, a stunning Sadie Family Skurfberg 2012, Durbanville Hills Rhinofields Chardonnay 2013, a lovely Crystallum Bona Fide Pinot Noir 2011, KWV Cathedral Cellar Pinotage 2009 and ended with the beautiful Meerlust Rubicon 2008. The South African wines trade tasting followed with nine winemakers/producers in attendance including Asara Wine Estate, Avondale, Blaauwklippen Vineyards, Creation Wines, Doolhof Wine Estate, Hoopenburg Wines, Kanu Private Cellar, Oldenburg Vineyards and Bellingham. If that was not enough then mixologist genius DC Bull from the Hard Rock was on-hand mixing a few South African themed cocktails.

How’s it feel to be playing in Macau?It’s weird. In my career, there’s few places I haven’t been, so you always get a little tingle. It’s quite exciting to go to a new place. Macau seems [a] very very different, strange place [compared] to anywhere else in the world and I play a lot in Vegas; and it’s sort of Vegas but different. […] You can end up going to the same places all over again but I like finding new places and I have no idea how it’s going to go down tonight. It’s what keeps me excited.

What was the inspiration behind the song “Fuc*** in Heaven”?Just having an answering phone message from Freddy Fresh that said: “If I had a remix from Fatboy Slim I would be Fuc*** in Heaven”. No it wasn’t an answering phone message, somebody had sent me it on a DAT(1) and at the end of it he said “well please don’t play this to anybody else”. That was the inspiration. He loved it.
Are you planning on doing anything else like that?Well kind of ‘Eat, Sleep, Rave, Repeat’ is fairly similar. I mean I’m not really a songwriter but I just hear phrases and I hear a rhythm in them. Like ‘Eat, Sleep, Rave, Repeat’ was my [tech] guy who’d been up editing all night and I sent him an email saying ‘How did it go last night?’ I knew that he’d been up all night and he just sent me an email saying: “Eat, Sleep, Edit, Rave, Repeat” and I just looked at it and I was thinking “Eat, Sleep, Rave”, I took out the “edit” bit and…It’s just hearing things like “Right about now, the funk soul brother”. That wasn’t rap that was just somebody saying it, I just heard a rhythm in it. So I think that’s my talent, is just hearing people say things and just thinking [that’d make a good song].
There’s a lot of sampling going on and there’s been a complete evolution in terms of how we create music. What’s going to happen with music and where’s it going to go?I don’t know. I’m personally I’m a bit baffled by the computers making music.
Are you still analog(2)?I sort of try. I’m kind of learning how to make tunes on the computer. I use Ableton(3). But when I’m in the studio I still use Creator on the Atari because that’s what I learned on and it’s not really like a computer, there’s only a finite amount of things that you can do and machines you can use. But there’s something quite mind-boggling about the amount of choice you’ve got. In one little box you’ve got every single instrument, everything that you would have to try hard to do in the studio. And sometimes I just look at it and I don’t know where to start. And it sort of takes the fun out of it. There’s fun about abusing instruments, like taking a 303 and it’s only got the four nobs on it and you find out how much you can crank it. Whereas when you’ve got the world at your fingertips, you don’t feel like you’re abusing samples and drum machines and synthesizers in the way that you used to.
What do you think about people recreating music by sampling - taking already existing music and making it into a new song?Well it’s kind of what I based the latter stages of my career on. I think it’s great fun. Again it’s too easy these days. Before it was quite difficult you only had like four seconds in the sample. So you had to sort of plan out what you were gonna use and there was this sort of “Wild West” attitude about what you could get away with Copyright-wise. Now there’s lawyers everywhere, it’s so easy to sample everything you want, and you don’t have to spend afternoons in dusty record shops trying to find the samples - everything’s on the Internet. So it’s lost some of its frontier spirit appeal to me, which is why I’ve been concentrating on DJing I think rather than... I haven’t done much in the studio for the past few years.
What’s something that we don’t know about Eat, Sleep, Rave, Repeat? Is there a dirty little story hidden there somewhere?There’s tons of little dirty stories. I actually finished it two years ago and was too scared to release it. And it was only because a few people
had copies of it and they badgered me into finishing it and releasing it. I kind of had it and knew it was a hit. I was too scared to put it out.
Was there a catalyst that made you put it out?Just friends of mine. It was Dooley, DJ Dooley. He’s got the same management as me. He heard it and just every time he saw me he was like “Why haven’t you got that fuc*** track out, it’s brilliant”. Thank you Dooley!
In 1989 you gave an interview in which you said: “Everything I do is political”, in reference to your music.Yeah that would have been ’89, yeah. (laughs)
Is your music still political?No, not at all.
Why not?When you’re young and idealistic, you think you can change the world.
And you can’t?Only if you’re a really good songwriter. With the Housemartins(4), Paul Heaton is a great songwriter and wrote some fantastic lyrics, which I think potentially could have changed people’s views about the world and about politics. But over the years it’s just been beaten out of me. Successive dreadful governments in England just beat the idea. The idea of beating people and [I’m] saying: “look, why’re you voting for these people that are so horrible to you” and it got to a point where, I think the last time Thatcher got in I’m just like “You know what, I can’t be bothered to try and talk you out of letting this woman ruin our country. You’re welcome to it.” And as you get older you haven’t got time to be idealistic, your mind is taken up with just getting your own life together. When you’re young you think ‘oh yeah….look out for me’. And then after you’ve had kids and everything else, there just aren’t enough hours in a day to be it. And also I’m not that clever… with political messages. I’m good at making people smile and dance. I’m not good at changing the world.
So is that a direction that you’re trying to take your music: Smile and Dance?That’s been the basis of the genre.

What’s the reward of that?I get to travel the world and see people smile and dance every night. And it keeps me young; it keeps me making a living out of my love of music. Which is the best job in the world. I love playing music, I love being involved in it and to be able to turn that into a career where you get to travel the world and meet new people.
Speaking to musicians and DJs out there, how do they do it? If they have the quality, how do they get out and make a name for themselves?Oh they just keep plugging away. There’s shortcuts probably now with the Internet and Soundcloud and Youtube. Before it was giving demo cassettes to people. In my day.
The way to make money has switched from getting a record label and making the money off of selling records to performing music. Is there a secret to success?Nobody knows the answers to that. It’s still early days of downloads and the Internet. No one has quite worked out who’s in charge of it, who and how to make money out of it. But in the meantime, DJing is the way to pay the rent, it’s not really some records you’re selling.
You also own a number of restaurants…Yeah, that’s not a good way to make money. (laughs). I wouldn’t recommend that as a shortcut to making any kind of money. It’s great fun and it’s very rewarding, but I’m gonna stick to DJing.
You seem to have a very businesslike approach about the restaurants. Whereas for music is it: a business, a hobby, for fun, your passion?It’s a business and it’s also a hobby and it’s how you get your kicks. Now which order do you put them in? It might be different for some people. For me, it’s fun first. But then again I couldn’t afford only to do things that are only fun because I’m not struggling to pay the rent every week. So I’d put the business side third. It’s the love of music and it’s having fun working within the genre that you rely on.
Is there a favorite artist that you’ve worked with so far that you just need to work with again?No, probably Danny Byrd is my favorite artist to ever work with. He really is a genius. It is so much fun to work with him.
Another throwback to 1989 - you said your main concerns were “worldwide peace, equality and socialism”. Is everything going to plan?Uh No. Sadly not. Tell you what, the peace bit – nuuh, the socialism – nuuuh. No, like I said I kind of had the politics beaten out of me. I was young and idealistic in those days and now I’m slightly more jaded about how the world’s going. The world’s probably as much a peaceful place as it was then but there’s always going to be wars, there’s always going to be religion, there’s always going to be avarice. So you can’t beat that out of people.
But what can we do about that?You can’t. Just struggle with it.
Make music?Like I said, if you’re a clever enough song writer that you can make music that unites people rather than divides them then that’s great, but that’s about all you can do.

According to the legend, Santa Claus once secretly gave a poor man’s three daughters each a bag of gold as dowry. When he quietly tossed the gold packs into their chimney, one bag of gold accidentally fell into a hanging stocking over the fireplace. Ever since, putting gifts in stockings for children has been a traditional Christmas custom. Even today, children will hang their stockings over the fireplace on Christmas Eve, hoping to receive a gift from Santa Claus -- the man from that faraway snowy land that rides a sleigh pulled by eight reindeer, who deliver gifts to children around the world. In the minds of children, Santa Claus is just so friendly and mysterious.In this worldwide celebration of Christmas, apart from buying 100% of your decorations from a variety of shops, you can also handcraft them. Setting up a Christmas tree at home, putting gifts underneath and surrounding your tree with small colorful lighting is the simplest way to decorate for the holiday. However, there are many different tips for selecting the best Christmas tree for your home. First of all, before shopping for a tree, you must know how much space you have at home, how tall your tree should be, where you want to set up your tree, and how large your tree stand is when fully stretched out, etc.Upon finding your favorite tree, look at how fresh the tree is. Grab a tree branch and stroke it to the tip with your hands - if too many pine needles fall then the tree is too dry. Softly bend the branches to feel the degree of flexibility and softness - if they are too hard or too brittle, then the tree is also too dry. You should also look at the trunk where the tree is being cut, which should be moist and dense rather than dry and cracked.After making the purchase, you usually have to cut off the tree trunk by half an inch, place it into a container filled with hot water, and let it stand for 24 hours. The heat can soften some of the sap, and also allow the tree to absorb water. Don’t be surprised if your tree absorbs all the water in the container; you will need to constantly add more water to provide hydration. Your tree will need to absorb approximately one gallon of water in total, after which you will have to hydrate it every day in order to maintain its freshness.

玫瑰圣母堂
玫瑰圣母堂修建于1587 年,由来自墨西哥阿卡普尔
科的三位西班牙多米尼加牧师一手打造,它在澳门历
史上一直都是一个非常著名的建筑。该教堂历经四个
世纪的沧桑,澳门的很多重大事件都发生于此,比如
1822 年发行中国第一份葡萄牙语报纸 ”A Abelha da China”(中华蜜蜂);1929 年,该教堂的礼拜服务中
增添了花地玛圣母 (Our Lady of Fátima)朝拜,为这
一宗教分支在该地区的广泛传播奠定了基础。
教堂的建筑为巴洛克风格,以其融合了澳门和欧洲风
格的复杂设计而著称,比如中国式屋顶和大门。从外
面看,建筑的最大特色就是那黄色和白色的大面积装
饰性墙面,这是澳门教堂常见的特 1 征。墙面的最顶
部位置是白色石膏装饰条和装饰,一个醒目的山形墙
上绘制着道明会的标志。
教堂内部有两排沿教堂中殿排列的科林斯式圆柱 2 ,
非常有特色。高坛前面是一个高高的祭坛,中间是圣
母和圣婴像。四周围绕着数个相关圣徒的木制和象牙
雕像。1997年,玫瑰圣母堂进行了翻修,将教堂后部
的钟楼改成了一个小博物馆,名为圣物宝库 3 ,向游
客展示了300 多件宗教艺术品收藏 4 。
从玫瑰圣母堂出来左转沿街道继续往前走,在第一个
十字路口沿街道右侧前行,卢家大屋就在街道左边。
Saint Dominic’s Church
Since its establishment in 1587 by three Spanish Dominican priests from Acapulco, Mexico; Saint Dominic’s Church has been a prominent structure in the history of Macau. Throughout the Church’s four-century history it has been a site for a number of pivotal events, including the publishing of China’s first Portuguese-language newspaper - A Abelha da China (The Chinese Bee) - in 1822. In 1929 the church integrated the worship of “Our Lady of Fátima” into its service, acting as a basis for the dispersal of the popular cult throughout the region. Architecturally the church is Baroque and is often credited for its infusion of Macanese and European intricacies in its design, such as the Chinese style roofing and doors. The exterior features a large 1 decorative yellow and white façade, as is common with churches in Macau. The most distinctive of the white plastered moldings and embellishments sits in the topmost section of the façade - a pediment featuring a depiction of the Dominican order’s insignia.The interior of the church features 2 two rows of Corinthian columns running up the length of the church’s nave. A high altar sits before the chancel, where a statue of the Madonna and Child poses as a centerpiece. In the surrounding area, statues of wood and ivory depict several saints. In 1997 Saint Dominic’s underwent a renovation and the church’s bell tower, nearer the rear of the building, was converted to house a small museum. Named the 3 Treasure of Scared Art Museum, it holds over 4 300 pieces of religious art on display for visitors. As you come out of Saint Dominic’s Church make a left and continue up the street. At the first intersection, take the street on the right hand side. Lou Kau Mansion is located along the left hand side of the street.

卢家大屋
卢家大屋位于旧“基督城”(葡人居住城区)中心位
置,展示了19世纪澳门社会风貌的种族和文化多样
性。
卢家大屋建于约 1889 年,修建者是一位名为卢 2 九
的中国商人。他在 1857 年从广东移民至澳门,成功
的商业道路为他带来巨额财富,他更曾是这座城市中
举足轻重的人物。卢九不仅是澳门赌博业的开创人,
还曾出资兴建学校、重建宗祠,将大米低价出售给普
通百姓,为澳门作出了杰出贡献。1890年,卢九获葡
萄牙卡罗斯一世国王授予的爵位,至今仍是当地人心
目中的英雄。
卢家大屋有两层院屋 1 ,砌有灰砖外墙,是澳门为数
不多的几幢西关风格建筑之一,融合了中国不同地区
的多种建筑风格,比如广东省的砖雕和岭南地区常见
的凹形入口等。内部的装饰 3 和图案则更多地展示出
西方特色,比如染色玻璃窗和铸铁栏杆。该房屋对称
布局,三对三分布 4 。中央是入口大厅 、茶室以及高
堂 。此布局遵循中国传统的家庭等级结构,在建筑后
部为长辈留有更私人的空间。
如今,该建筑已被列为澳门遗址,对公众开放。每日
有导游带领游客游览大屋,一探其丰富的历史内涵。
离开卢家大屋后,左转继续沿狭窄巷道向前,就来到
了一个小广场——大教堂广场 。街道右边是喷泉,本
次游览的下一站在街道的左边。

Lou Kau Mansion
Located in the center of the old ‘Christian City’, the Lou Kau Mansion illustrates the diversity of ethnicity and culture in 19th century Macau’s social profile.Estimates put the construction date of the Lou Kau Mansion in 1889, originally built for a successful Chinese merchant named 2 Lou Kau. A migrant to Macau from Guangdong in 1857, Kau’s business endeavors secured him a substantial fortune that he used to become a prominent force in the city. As well as being an initiator in the city’s gambling market, he contributed to local society by founding schools, funding the reconstruction of ancestral temples and even selling rice to the lower class for a reduced price. In 1890 Lou was knighted by King Carlos I of Portugal and is to this day referred to as a local hero. In 1970 Lou Kau Mansion met the same fate as the Mandarin’s House, housing over 20 families within its confines.One of the few remaining buildings built mostly in the Xiguan-style, the Lou Kau mansion is a two-story courtyard house 1 with a grey-brick exterior. The structure is an infusion of several architectural styles from different regions of China. Examples include the brick carvings from the Guangdong province and the recessed entrance typically found in the Lingnan region. 3 The interior ornamentation and decorative motifs, such as stained glass windows and cast iron railings, present a more Western characteristic. The house has a 4 symmetric layout and is divided into a three-by-three grid. The central area of the ground floor features an entrance hall (Men Guan Hall), a tea hall (Sedan Hall) and a senior hall (Tou Hall). This arrangement abides by the Chinese hierarchical family structure, giving the elder members of families the more private spaces towards the back of the house. Today the Mansion is listed as one of Macau’s heritage sites and is open to the public. Guided tours of the mansion are offered daily, visitors can explore the house and get a dose of the rich history of its namesake.As you leave the Lou Kau Mansion, take a left and continue up the narrow lane. You will come to a small square, Cathedral Square, with a fountain to your right; and the next stop on this tour is across the street and to your left.

如今的大堂(天主教主教座堂),其风格相比澳门其它
教堂显得更加朴素,采用了上海式灰泥外墙 3 ,而非
涂有黄白色油漆。教堂主体两侧 2 各有一塔,其中一
座外部设置时钟,另一座内部放置一个鸣钟。三道大
拱门上方分别有三个相同的染色玻璃窗,该建筑的其
它窗户也与之相似。内部布局类似于长方形教堂,两
边有延伸出去的侧厅,里面是多位宗教人物的圣坛,
比如圣母玛利亚和耶稣等。墙壁上装饰着大量新古典
风格的石膏装饰和顶冠饰条 4 。教堂墙壁及高坛上是
一系列的染色 1 玻璃窗,上面绘制着圣经故事、圣母
玛利亚和圣徒圣像。
该教堂是多项宗教传统活动和主要基督节的举办地
点,也是每年 2 月主耶稣受难游行的起点和终点。
Sé Cathedral
Known by a number of names, such as Catedral da Sé and Church of the Nativity of Our Lady, the Sé Cathedral is the current mother church of the Catholic diocese of Macau which was established long before the city came under Portuguese rule.The Cathedral began as a small wooden shed over four centuries ago and not until 1622 was a more permanent structure built to replace the shed. In 1844, following a strong typhoon, a replacement church had to be built; this was consecrated in 1850 by Jerónimo José da Mata - the bishop of Macau at that time. This early version of the cathedral was designed by local architect Tomas d’Aquino and managed to brave a few more typhoons but came to its inevitable end in the early 20th century. Today the cathedral stands architecturally plain in comparison to the other churches in Macau, featuring a grey 3 Shanghai plaster exterior rather than the typical yellow and white paint scheme. 2 Two towers stand on either side of the main body of the church, one of which bears the face of a clock and the other housing a bell. Three identical stained glass windows sit above the three large arched doors of the church, these similar to other windows around the building. Within, the church is laid out similar to a basilica, housing two wings that extend to either side of the building. These wings are used as individual alters for several religious figures such as the Virgin Mary and Jesus 4 . A number of plaster embellishments and crown moldings decorate the walls of the church, giving it a neoclassical feel. A series of 1 stained glass windows depicting bible stories, the Virgin Mary and the saints, can be seen lining the walls of the church and the chancel. Several religious traditions and major Christian festivals are actively celebrated at the church and the Sé acts as a stopping and beginning point for the Procession of the Passion of Our Lord, held in February.

One country, two systemsOn December 20th, 1999 the final Sino-Portuguese ceremony was held on the present-day location of the Handover Gifts Museum, during which the Chinese flag was hoisted, replacing that of Portugal and formally completing the handover. This marked the beginning of the “one-country, two systems policy” in Macau and its classification as a Special Administrative Region of China (similar to Hong Kong’s governance system).
Gifts and celebrationIn celebration of the handover, gifts from across China were bestowed by the State Council of The People’s Republic of China; marking Macau’s return to the Mainland. The variety of gifts and the materials highlight the ethnic, artistic and regional differences of the many provinces within China. One example of the degree of workmanship is the gift offered by the Henan Provincial government - an intricately carved sundial framed by nine flying dragons carved from a solid piece of jade weighing 800 kilograms. The Handover Gifts Museum first opened its doors on the fifth anniversary of the handover in December of 2004. The museum itself is a three story modern building located next to Macau Cultural Centre and the Museum of Art in Macau. The first floor houses the entrance lobby and offices while the second floor is home to the permanent Handover Gifts and Art Exhibition as well as the varying Special Exhibit areas. The top floor holds the Auditorium.
ExhibitionsThe museum offers a taste of the precious art pieces from Mainland China’s many provinces as well as information on the background of the handover and its results. Additionally the Special Exhibits Section offers a changing variety of Chinese Art, calligraphy, design and more. Conveniently located near several other notable attractions, the museum is within walking distance of the Kun Iam Statue, Macau Museum of Art, Macao Cultural Center, Macao Science Center and the Golden Lotus Square.

Fishing is one of Macau’s oldest pastimes, if not the oldest, and dates back to the migration of
fisherman to Macau from the Guangdong and Fujian provinces during the Ming Dynasty (1360s-1640s). The development of Macau’s Inner Harbor region followed the increasing role of trade in the region, largely instigated by the Portuguese arrival in the 16th century. However the fishing industry in Macau society maintained its hold and is still an active part of the economy. Originally making use of wooden boats, many of which were constructed in the dockyard next to Coloane village, the current fleet also holds over 30 steel vessels, some as long as 44 meters in length. Local fishermen still make use of traditional fishing methods, rarely fishing far offshore or deeper than 200 meters.

Born in Macau, Bruno lived in Brazil and the United States before returning in 2010. Bruno is an avid performer with talents in dancing and acting and his portfolio includes a number of Macau Glee Club productions as well as Dócis’s most recent play: “20 Anos…Dále Más”.

What is your best memory of macau?
My best memory in Macau was when I came to visit my father in 2006. I spent most of my time with my father, uncles and cousins; it was amazing. We would go to the beach, and around town enjoying the old Macau.
Where in macau do you find the most beautiful scenery? The Sai Van Bridge and Macau tower, both of those places are breathtaking during sunset.
Where do you like to have a drink?I love to go to Starbucks, it’s a nice place to have a coffee with friends or even your partner.
Where is your favorite restaurant? I really like Apomac in Macau; they serve my favorite Macanese dishes.
Where do you like to shop? The Red market because you can get some really great deals there.
Where is the best place to go for a date?
I would suggest Old Taipa. You can have a nice dinner in the village and then go for an evening stroll or just sit on the benches in Carmo.
Where in macau do you like to take pictures?
I like to take photos in San Malo (Senado Square), Coloane Village, Old Taipa and around Ocean Gardens.
Where is the best place to go for a real macau experience? Why? Walking around the St. Paul’s Ruins, going to the Handover Museum, the Grand Prix Museum and if you get the chance go to a Patuá show!
What is the best piece of advice given to you? My sister once told me to: “never wait for things to happen, make them happen for yourself.”

The holiday season is upon us and as usual this means a whole lot of celebrating. But while many of us return from Christmas a few pounds heavier, we at Cguide give you what might be the solution to your Yuletide weight woes.
In early June of this year the American College of Sports and Medicine’s Health and Fitness Journal published an article entitled High-Intensity Circuit Training Using Body Weight exploring the idea of “maximum results with minimal investment”. The publication led to a global phenomenon in fitness. Its inevitable popularity, determinable by the exercise’s title alone, catapulted this exercise program into the limelight, even gaining it enough recognition for the development of progress-tracking apps such as: 7 Minute Workout, 7min Full Workout and 7min Workout Timer. With more people investing in the idea that fitness is easily achieved in just seven minutes, the question being raised is: how much is really understood about the seven-minute workout?
The Fine PrintThe seven-minute workout focuses on what is universally known as circuit training. Circuit training is a body conditioning practice that involves a series of exercises performed at high intensities for shorter periods of time. For example: if you have a regime of three exercises within a workout, you perform each of the three exercises for one minute, rest for one minute and repeat. Dubbed a revolutionary approach to fitness, the seven-minute workout has all too easily been miscommunicated to the public. The exercise regime was first designed by experts Brett Klika and Chris Jordan to cater to the needs of elite performers. These performers were (by default) in tip-top shape, but due to scheduling could not always find time to workout. The exercise provided them with a short but effective way to stay trim on the road.The average person lacks the preexisting stamina to conduct this and receive the result they desire. This is not countering high-intensity interval training’s abilities to help shed the extra weight, but simply informing you it will take dedication and a bit more than seven minutes a day to achieve.
How it’s doneThe exercises that make up the seven-minute workout are, by themselves, rather easy. When performed collectively however, they are meant to be an excruciating endeavor. The seven-minute workout is comprised of 12 exercises performed for 30 seconds with 10 second rests in between. Are you ready?

3 Push-ups Begin in prone position; lying on your chest. Keep your feet together and your toes firmly in the mat. Place your hands directly under your shoulders and use your arms to raise and lower your body. Your body should remain suspended and not touch the ground throughout the exercise (except in the beginning). For an easier version, bend your knees - using them similarly to your feet. Repeat for 30 seconds.
4 Abdominal CrunchesLay on the floor with knees bent, place your hands behind your head or across your chest and curl your shoulders towards your pelvis. Throughout the exercise do not let your shoulders touch the ground. Repeat for 30 seconds.
5 Step ups onto a Chair For this exercise you will need a chair. Place the chair in front of you and, using alternating feet, step up so that you stand momentarily elevated. Repeat for 30 seconds.
