Since its early years, M&J has been a family business in the real sense. When husband and wife team Mina and Jenny (that’s where the M&J comes from!) emigrated from Greece in the 1970’s, they were searching for ways to support themselves and their family. Since Mina believed that the business of feeding people was always good business, they opened a delicatessen.
With hard work and determination, the deli was a success, and Mina soon seized the opportunity to diversify by offering chicken products like kebabs and schnitzels. Sales went better than expected. M&J Chickens was born. It wasn’t too long before
the business outgrew its single shop premises and moved to a larger site, prompting Mina and Jenny to focus solely on chicken.
True to its humble beginnings as a single shop in Wiley Park, Sydney, M&J is still proudly family owned, with Mina and Jenny’s children Michael, Harry and Maria—all working in the business— having played a big part in what M&J is today. M&J Chickens has grown into Australia’s largest privately-owned second-tier poultry processor, operating a nationwide business that employs over 300 staff around Australia.
At M & J Chickens, we are constantly looking to institute the latest available technologies, research, industry knowledge and quality systems, in order to stay abreast of, and indeed be creative in providing viable food components required or desired by our customers. We are fortunate to have highly skilled and trained employees, directors with
invaluable hands-on industry experience, and a management team that has a vibrant and positive view of the business future. Our plan is to continue to grow, invest and continuously improve, by basing our success on achieving shared business objectives, success and growth with our partner suppliers and customers.

Chef Eddie
Eddie Cofie, Group Chef and Development Manager of M&J Chickens, has a great passion for food. He has held various roles during his long and illustrious career in the catering industry. Eddie’s skills and experience have been pivotal in the establishment and continued development of M&J’s cooked product range. Plying his trade in a variety of settings has equipped Eddie with the necessary insight required to continue to develop products with the venue operator and chef in mind.
Experience
• Eddie was Executive Chef at Sydney’s Olympic Park for over eight years, managing site restaurants and catering facilities for the Sydney 2000 Olympic Games.
• He spent two seasons on Australia Channel 10’s Recipe to Riches playing the role of ‘Kitchen Commander’.
• Eddie spent eight years as an airline Executive Chef, with over four years at Ansett Australia’s in-flight Catering division starting up Ansett International, and over three years as Executive Chef for Australian Airlines.
• He has owned and operated his own venues and continuously searches for ways of improving the catering industry.
• Prior to working in Australia, Eddie spent time plying his trade in some of London’s finest hotels, namely: The Grosvenor House Hotel, London’s Savoy Hotel and the Le Meridian Hotel in Piccadilly. After arriving in Australia in 1989, he was employed as Sous Chef at The Regent Hotel, Sydney (now The Four Seasons Hotel) and spent two years as a chef on board P&O’s luxury cruise liner, The Canberra.

Company Ownership
M&J Chickens was established as a family business in 1982, as a supplier of superior quality, specialised poultry products to the hospitality industry. The company’s founders, Mr. Mina and Mrs. Jenny Souris, are still actively involved in the overall direction of the company. Today we have grown into a respected, multisite supplier of poultry-based, value-added and cooked products to the Australian and global food service sector.
The success of M&J Chickens, is based on the commitment, expertise and skills of its proprietors, management and employees. These qualities have seen the company grow from a single-facility poultry supplier in Marrickville to a major
multi-site food solutions company, committed to a superior program of continuous improvement.
We now supply an extensive range of fresh poultry, value-added and fully cooked solutions to a diverse mix of hospitality, foodservice and consumer market segments across Australia and internationally. These are serviced by our six locations in Sydney, Brisbane, Townsville, Melbourne, Perth and South Australia, reflecting the director’s insistence on having the highest quality facilities available in the major centres in Australia.
Quality Statement
M&J Chickens maintains a Quality Management System ISO 9001- 2008 certified by SGS (Certification No AU02/1717) and is audited twice yearly.
The state Food Authority conducts an Audit twice yearly and will verify that M&J Chickens complies with all Federal and State regulations. The NSW Food Authority also audits on behalf of the commonwealth Export approval authority.
The Marrickville site is also now Export Accredited. Export Establishment 200 and Est. 228.
M&J also maintain a HACCP Food Safety System (Certification No FSAU 02/565).
The company maintains an audited Halal Certification.
Quality and Food Safety is maintained by sourcing our raw materials and ingredients only through approved suppliers who meet the stringent specifications required by the M&J Chickens Supplier Approval Program including abiding by the Australian Chicken Meat Federation Code of Practice. No hormones are added to any product supplied to M&J Chickens. M&J regularly audit high risk suppliers and of course have a comprehensive internal audit program including monthly GMP audits and six monthly full audits. These audits include a review
of required preventative systems including Pest Control, Chemical Supply, calibration and SDS / Instrument of Approval document maintenance.
The Product Recieval, Boning, further processing, cooking and dispatch has been risked assessed using HACCP assessment tools and Critical Control Points established. These CCP’s include temperature maintenance of all coolrooms < 3 degC and freezers < -18deg C.
Cooking and Pasteurisation is monitored by calibrated instrumentation and detailed logs are maintained of all batches. Batch numbers of all products and ingredients are recorded to ensure traceability. M&J maintain a full recall system and test the system annually with a Mock recall.
An extensive verification program is conducted which includes two weekly microbiological testing by a NATA accredited laboratory of both cooked and raw product. Environmental testing is done in-house to monitor the extensive and detailed sanitation program.
