ONE POT PASTA with Potato, Green Beans and Rocket “One of my favourite comfort suppers, this recipe can be whipped up quickly if you have the ingredients in your store cupboard.” INGREDIENTS (SERVES 4): 1 tablespoon olive oil 1 onion, peeled and chopped 2 garlic cloves, peeled and chopped 250g potatoes, cut in small dice 100g green beans, cut in short lengths 1 tablespoon fresh thyme leaves 2 red chillies, deseeded and finely chopped 1 litre vegetable stock 250g dried pasta shapes 50g rocket, roughly chopped 50g freshly grated Parmesan 4 tablespoons freshly chopped basil leaves freshly ground black pepper METHOD: Heat the oil in a very large saucepan, add the onion and cook for 2-3 minutes until softened. Add the garlic, potatoes, beans, thyme and chilli, and cook, stirring, for 3-4 minutes, adding a little of the measured stock if the mixture starts to stick. Pour in the stock and add the pasta. Bring to the boil and stir well.
