RECOGNIZING EXCELLENCE AT UNIFIED TRUST COMPANYOur RPCG team received praise earlier this month after a meeting with Lecesse Construction. The fol-lowing is a quote from the letter written by Kevin Callanan of Lecesse.

“I’m writing to express my personal thanks for your interest in our participants. Your talk inspired al-most 30 of them to sign up for individual meetings with our financial advisor Jared. That is remark-able, given there were not more than 40 in the room. STEP INTO BEAUTIFUL

Step By Step is a mentoring program for teen single moms and their childern here in Lexington. Step Into Beautiful is an annual fashion show sponsored by Unified Trust, that happens during a tea style event at Cetenary Methodist Church. The Wealth Management program has a client that is very involved in this organization.

1. Preheat oven to 350 degrees.

2. Put the cleaned and rinsed chicken breasts into a mixing bowl. Cut an incision into the breasts that’s large enough to fit the stuffing. After you make the incision, sprinkle the breasts with the garlic, salt, pepper and fresh thyme. Cover and refrigerate while you prep the bread crumbs and saute the apples.

3. In a mixing bowl, combine the animal crackers and bread crumbs.

4. Heat saute pan over medium-high heat. Add the olive oil and the apples. Cook for 10-15 minutes depending on how soft you would like them.

5. Whisk the egg in a small bowl. Lay out a sheet of aluminum foil. Put a seasoned chicken breast on the foil and stuff 1/4 of the apples into the incision. Dredge the chicken in the whisked egg, and then roll it in the bread crumb mixture. Put the breaded chicken breast back on the sheet of foil and roll it up so the foil is covering the breast completely. Repeat these steps for the remaining breasts. Lastly, place the wrapped chicken breasts in a baking pan and bake for 1 hour. Remove the pan from the oven, unwrap the chicken and serve on indiviual plates.

PREPARATION

4 boneless skinless chicken breasts6 cloves freshly minced garlic (not jarred)1 tsp sea salt1/2 teaspoon freshly gound black pepper2 sprigs fresh thyme1/2 cup crumbled animal crackers1 cup seasoned bread crumbs1/8 cup olive oil6 large Fuji apples, peeled, cored, and chopped1 egg

WHAT YOU WILL NEED:

ANIMAL CRACKER CRUSTED CHICKEN WITH CARAMELIZED APPLES

LEMON PIE WITH ANIMAL CRACKER CRUST

Animal Cracker Crust:4 cups animal crackers2 tbsp brown sugar1/4 tsp salt1 stick of butter, meltedLemon Curd:3 tbs lemon zest7 egg yolks (reserve one white for an egg wash)1 cup white sugar1 cup lemon juice1 tbsp corn starch1 stick unsalted butter, cut into cubesWhipped Cream:2 cups heavy cream1 cup powdered sugar1/4 tsp vanilla

WHAT YOU WILL NEED:

1. Preheat oven to 350 degrees.2. In a food processor, add the

animal crackers, salt and brown sugar. Process until only crumbs remain. Add melted butter and pulse until combined and it resembles wet sand. Dumb into the bottom of a deep dish pie pan. *If you don’t have a deep dish pan, you won’t need this entire amount. You can remove about 1/2 cup, spray the insides of a muffin tin and make 2-3 small “mini pies”. Remove from muffin tines before filling.

3. Start with the sides, assemble to crust. Press very firmly into place. 4. Put 1 egg white (use the yolk for the curd) plus 1 tbsp of water in a

small bowl and beat until wee combined. Brush the insides of the crust with egg wash. Bake at 350 degrees for 18 minutes.

5. Add the lemon zest, lemon juice, sugar, corn starch and yolks to a bowl and whisk until well combined. Add the lemon mixture to a pan over medium/low heat along with the butter. Whisk until thickened, about 8 minutes. Allow to cool to room temperature.

6. Add the curd to the crust and chill until set, about 4 hours.7. Put all the whipped cream ingredients in a bowl of a stand mixer and

beat on high until light and fluffy and holds peaks, about 4 minutes8. Top the pie with the whipped cream and serve. Chill until ready to

serve.
