Ever wonder what the difference is between mezcal and tequila? Tequila must be made within the borders of Jalisco, while mezcal is primarliy made in Oaxaca. 100% of Tequila de Agave must be made using the blue agave
plant, while mezcal can be made from many other varities of agave. The most apparent difference comes from the way the "piña", or the heart of the plant, is cooked. In tequila production, the heart is cooked in large ovens. The traditional way to make mezcal is to dig a pit and fill it with hot rocks and fronds from the plant. This will roast
the hearts for days, creating that smoky and earthy flavor mezcal is known for.
