My“grower’s”chargeforraisingthepigis6.50/lbhangingweight –Thebutcherhasacertifiedscaleandwillweighthecarcasseswhentheyarrivebackattheshop.Unfortunately,Ican’taccuratelyestimatethefinishedweightastherearemanyvariables.Buttohelpyouestimatecosts,here’ssomeinfo:Thehangingweightwillweighlessthanthelivepig(hangingweightcanbebetween50-
150lbsless,depending).The“crateweight”–whatyoupickupattheotherend-willbelessthanthehangingweight asthereisbone,fat,andpartsofthepigdiscarded.
Yourfeetome,thegrower,willbeyourportion(ie;½)ofthepig’shangingweightx$6.50/lb..So,forinstance,IFyourpigweighs250lbonthehoof(live)and175hanging–Divide175inhalf=87.50.Multiplyby$6.50/lb=$568.75.ispaiddirectlytome.Processing,cutandwrap,seasoningandsmokingareextraandpaiddirectlytothebutcherandsmokehouse.
