Phumla Bhodoza Method: 1. Sift together all the dry ingredients and rub in the butter with fingertips. Add in liquids and mix to form a soft dough which can be easily kneaded. Add more liquid if necessary. 2. Knead the dough thoroughly until small bubbles form under the surface. Cover with a damp cloth and allow to stand for 15 minutes. 3. Roll to a thickness of 5mm and cut into strips 5mm wide and 7cm long. Press together the ends of three strips and plait. Press the other ends together. 4. Fry in hot, deep oil until golden brown. Drain on absorbent paper and then immerse in cold syrup. Allow excess syrup to drip off and leave to dry on a wire rack. Ginger Syrup: Place all ingredients in a saucepan then heat, stirring until the sugar has completely dissolved. Cover and boil for a minute, remove lid and continue to boil for a further 5 minutes but do not stir. Remove from the heat and allow to cool thoroughly then refrigerate. Ingredients Makes ±24 Half a cube of margarine (preferably Rama) 4 tbsp icing sugar 4 tbsp corn flour (Maizena) 1 tbsp vanilla essence 2 cups of cake flour Decorations Chocolate sprinkles 100s & 1000s or Dates Method • Preheat oven to 180 0 C. • Melt butter in a plastic dish, and add icing sugar. • Mix until you have a smooth creamy mixture. • Add vanilla essence. • Mix and add corn flour. • Continue mixing and add cake flour. • Knead until you have a smooth dough. • Make sure the dough is not too sticky (if it is add cake flour until smooth). • Shape the biscuits with your hands or biscuit cutters. • Bake for 15 to 20 minutes until brown. Decorations • Decorations must be added before putting the biscuits in the oven. • Alternatively, you could dip the cooled biscuits into melted baking chocolate.
