’Twas the week before Christmas, we were closing on the house, everyone was happy, even the mouse.

The papers were ready, prepared with great care, the buyers and sellers soon would be there.

The roads were all glistening,with new fallen snow, the problems would be many, if the wind should blow.

However, no worry, our First Weber agent had arrived,satisfaction of her clients was for what she had strived.

The closing took place without a hitch, even with bad roads no one slid in the ditch.

Now ’tis Christmas and all through the house,the buyers are happy, even the mouse.

The sellers are delighted, they were handled with care, their money is invested, with some to spare.

The moral of the story, I’ll try to rhyme, remember this, as I’ll tell you one time.

In 1864, three rugged pioneers led by Diedrich Wittenberg built a three-story stone mill to capitalize on the demand for wool products brought on by the Civil War. The building and dam were built entirely by hand from stones removed from the creek bed and nearby quarries and huge tamarack timbers cut from the extensive bogs that covered the area.

The rushing waters of Cedar Creek were channeled down a mill race and though an open-flume waterwheel. The 50 horsepower that the creek generated ran 21 looms and knitting machines, which

converted the heavy Wisconsin wool into the best quality yarns, blankets and worsted flannels.

The mill had the first electricity in Cedarburg. In 1897 a water-powered generator was installed which provided electric power for the mill and the owner’s nearby homes.

In 1971, Jim and Sandra Pape saved the boarded-up mill from the wrecking ball and a future as a parking lot. Realizing a dream, the two entrepreneurs combined their interests in historic preservation, winemaking, art and antiques and

renovated the mill into a working winery and a group of owner-operated shops and studios.

The 1864 mill and adjacent buildings at the corner of Washington Avenue and Bridge Road have become known as The Shops of Cedar Creek Settlement. Today more than 25 specialty shops, including clothing and antique shops, boutiques, artists’ studios, three charming restaurants and the award-winning Cedar Creek Winery make up this historic Village of Shops listed on the National Register of Historic Places. www.cedarcreeksettlement.com n

What Is It?

This wall-size cabinet was handmade by George Gorton in 1894 when he owned his own machinists company in Racine, WI. It has hidden slots, and holes for any and all kinds of tools, has hand wrought iron banding around the outside of it and hadn’t been opened since the late teens, no tool in it post dated 1919. This all original, handmade tool cabinet can be found at Clinton Street Antiques, 1108 South 1st Street, Milwaukee,WI. After the big day has come and gone, most holiday hosts find themselves still talking turkey. What to do with all that leftover bird?

During the long weekend following the holiday, you can put those leftovers to good use. Recipes that incorporate turkey in deliciously unique ways will help you use up those leftovers and clear out the fridge before you know it.

To ensure the tastiest dishes you can feel good about serving your loved ones, look for the USDA-verified seal on your turkey’s packaging to know that your turkey was raised with no growth-promoting antibiotics by farmers who care. Holiday MinisServings: 48 piecesPrep time: 15 minutesBake time: 15-20 minutes

1 pound (or 3 cups) chopped

Honeysuckle White turkey (dark and white meat)

1 package (14 ounces) cornbread stuffing mix

1 jar (16 ounces) turkey gravy

1 can (6 ounces) cranberry sauce with whole cranberries

Preheat oven to 350°F. Spray mini muffin pans (as many as needed to make 48 bites) with nonstick cooking spray.

Chop freshly cooked or leftover turkey into 1/4-inch pieces.

In large bowl, prepare stuffing mix as directed on package. Add turkey to stuffing mixture. Stir in 1 cup turkey gravy. Mixture should hold together when spooned into a ball. If mixture is too dry, add more gravy by tablespoons until correct consistency is achieved.

Spoon stuffing mixture into muffin pan, filling each cavity full, and then pressing mixture down to level top of each bite.

Bake for 15–20 minutes or until tops are golden brown. Remove from pan and garnish each bite with cranberry sauce. Additional gravy may be heated and served on side as dipping sauce.

Turkey CroissantServings: 12 Prep time: 20 minutes Total time: 25 minutes 1 pound (approximately 2 cups) of leftover Honeysuckle White whole turkey, cut into 1/2-inch cubes

1 cup toasted pine nuts1 cup diced celery6 tablespoons chopped fresh chives6 tablespoons diced red bell pepper1 cup low-fat mayonnaise2 tablespoons lemon juice12 croissants

Combine turkey, pine nuts, celery, chives and red pepper in medium bowl. Stir in mayonnaise and lemon juice. Split croissants and place generous helping of turkey salad on bottom half of each, top with remaining half and serve.

To toast pine nuts: Place nuts in dry skillet in single layer and toast over low heat for about 5 minutes, stirring as needed to prevent burning. Because pine nuts can burn easily, it is a good idea to watch until they are golden and fragrant, which means they are toasted.

Cozy Turkey SoupServings: 6 Prep time: 20 minutes Total time: 1 hour, 15 minutes

1 white onion, minced (reserve 2 tablespoons)

3 tablespoons extra virgin olive oil1.4 pounds (approximately 3 cups) of leftover Honeysuckle White turkey, chopped

1/8 teaspoon salt1/8 teaspoon coarse ground pepper1/2 cup diced celery1 cup diced carrot1 clove garlic, minced5 yellow peppers, seeded and diced2 medium potatoes, peeled and diced1 can (15 ounces) chicken stock1 tablespoon saltBread bowls (optional)

2 tablespoons grated Parmesan cheese

In skillet, saute onion in 2 tablespoons olive oil for 2–3 minutes. Add cooked turkey and 1/8 teaspoon salt and pepper to desired flavor. Set aside.

on low. Saute celery, carrot, garlic and reserved 2 tablespoons onion for approximately 10 minutes, or until vegetables are soft. Add yellow peppers, potatoes, stock and 1 tablespoon salt. Simmer for 15–20 minutes, until potatoes are tender.

Cool for 10 minutes, and then transfer back to pot to keep warm.

Add turkey and onion mixture to soup.Ladle soup into bowls and garnish

with grated Parmesan cheese.

Turkey, Spinach and Swiss QuicheServings: 6 Prep time: 30 minutes Total time: 1 hour, 10 minutes

Non-stick cooking spray1/2 white onion, diced1/2 red bell pepper, diced2 cloves garlic, minced

1.25 pounds (approximately 3 cups) of leftover Honeysuckle White whole turkey, cut into bite-size pieces

1 package (10 ounces) frozen spinach, thawed and well-drained

3 eggs1/2 cup low-fat milk1/2 teaspoon salt

1/4 teaspoon coarse ground black pepper

1 cup grated Swiss cheese1 (9-inch) pie crust, unbaked

Preheat oven to 350°F.Spray large nonstick skillet with

cooking spray and place over medium heat. Saute onion, pepper and garlic over medium heat until tender, about 3 minutes. Add turkey and thawed spinach (squeeze out moisture) and saute 1 minute or until all ingredients are heated through. Remove from heat.

In mixing bowl, beat together eggs, milk, salt and pepper. Sprinkle cheese into bottom of pie shell. Layer turkey, vegetable and spinach mixture on top of cheese. Pour egg mixture over top.

Bake approximately 50 minutes, or until center is set.

Quality Starts on the FarmDarrell Glaser, a sixth-generation

farmer from Texas, along with his mother, Jeannette, and wife, Shannon, started raising turkeys more than 20 years ago. Today, his four sons also help on the family’s farm.

“We do everything we can to produce a quality product that other families would be comfortable eating during the holidays,” Glaser said.

Glaser, who has raised nearly 14 million turkeys, says this starts with keeping the birds healthy and comfortable.

“We take really good care to ensure the environment is just right for our turkeys. This includes keeping the floors of our barns dry and making sure the birds have plenty of fresh air and good quality water and feed,” Glaser said.

Glaser says if turkeys are happy and comfortable, they are generally healthy, which reduces the need to prescribe medicine, like antibiotics.

Glaser and his family are one of more than 700 independent farm families who are raising turkeys for Honeysuckle White without using growth-promoting antibiotics.

“We feed America and want to provide a quality food source for our customers,” Glaser said. “With consumers more concerned about their food, if we can produce wholesome turkey without growth-promoting antibiotics, then we should.” n
